Creamy Pasta with Scallops and Asparagus is the perfect treat for your next date night. Enjoy sweet buttery scallops and tender roast asparagus on a bed of creamy cheesy pasta.

5 ounces whole wheat linguini
1 bunch asparagus (about 1 pound), ends trimmed
salt and pepper
3 tablespoons olive oil, divided
2 cloves garlic, minced
1/3 cup dry white wine
4 ounces mascarpone cheese
1/2 cup shaved or shredded parmesan cheese
2 tablespoons butter
1/2 cup frozen peas
12 ounces sea scallops
lemon wedges for serving

Steps:

  • Preheat oven to 400 degrees.
  • Bring a large pot of salted water to a boil. Cook linguini according to package directions. Reserve ½ cup of pasta water before draining.
  • Meanwhile, season asparagus with salt and pepper. Toss with 1 tablespoon olive oil. Place on a baking pan. Roast for 10 - 15 minutes. (The time will depend on how thin or thick your asparagus are. Thicker asparagus will need 15 minutes.)
  • When pasta is finished cooking, leave the pasta in the colander you used to drain it. Add 1 tablespoon olive oil to the pot used to cook the pasta. Heat over medium heat. Add garlic and cook for 1 minute, stirring often. Add wine. Cook for 3 more minutes. Turn heat to medium-low. Add mascarpone, parmesan, and butter. Cook, stirring occasionally, until butter and mascarpone are all melted. Add a few splashes of reserved pasta water to thin out the sauce and mix well. Add peas and cook 2 more minutes. Remove from heat. Taste and season with salt and pepper. Return the pasta to the pot and mix all together with the sauce. (If the pasta has cooled down a lot, you can reheat on low before serving.)
  • Cook the scallops last, when everything else is ready. They will be best immediately after cooking. Season scallops with salt and pepper. Heat remaining 1 tablespoon oil in a skillet over medium-high heat. Place scallops on the pan in a single layer. Cook for 3 minutes, until bottom is browned. Flip over and cook another 2-3 minutes.
  • To serve: Divide pasta and roast asparagus between 2 plates or bowls. Top each plate with half of the scallops. Serve with lemon.

1 stick unsalted butter
8 ounces asparagus, woody ends trimmed, chopped
3/4 cup peas (fresh or frozen)
Handful of green beans, chopped
2 spring onions or garlic scapes, chopped
1 yellow onion, chopped
1/2 cup heavy cream
1/2 cup chicken stock
1 pound fresh linguine
1 cup freshly grated parmesan cheese
Big handful of fresh basil leaves

Steps:

  • Bring a large pot of salted water to a boil. Meanwhile, melt the butter in a large skillet over medium-high heat. Add the asparagus, peas, green beans, spring onions, yellow onion and a pinch of salt. Cook just until the onions soften, about 5 minutes. Add the heavy cream and chicken stock and cook until reduced slightly, about 3 minutes.
  • Meanwhile, add the pasta to the boiling water and cook as the label directs. Drain the pasta and transfer to the sauce; toss gently. Transfer everything to a serving bowl. Garnish with the parmesan and basil.

1 lb bay scallop
1 lb asparagus spear, trimed and cut in 1 inch sections
2 -3 tablespoons olive oil
2 tablespoons parsley
2 -3 garlic cloves
salt
pepper
2 tablespoons butter
8 ounces linguine
1 lemon, juice of

Steps:

  • Heat olive oil over medium heat in large saute pan. While heating oil, bring salted water to a boil.
  • Boil Linguine acording to package directions.
  • Add garlic to hot olive oil. Cook for 2 - 3 minutes until lightly browned.
  • Add scallops to olive oil. Lightly salt and pepper to taste. Add half of the parsley. Cook until opaque.
  • Add asparagus pieces and lightly salt and pepper again. Cover and cook for about 5 minutes to steam asparagus.
  • Remove lid and add butter, lemon juice and remaining parsley. Stir until butter has melted.
  • Remove linguine from water and add to scallops and asparagus. Add 1/2 to 1 laddle of pasta water and stir to coat the pasta.
  • Once scallops, asparagus and pasta are well mixed, serve hot with salad and garlic bread. Enjoy!

1 small onion, diced
6 cloves garlic, minced
1 cup dry white wine (such as Pinot Grigio)
1 cup chicken broth
½ teaspoon Italian seasoning

1 pinch freshly ground black pepper
2 (14.5 ounce) cans diced tomatoes in juice, undrained
¾ cup heavy whipping cream
½ (16 ounce) package linguine pasta
2 links cooked sweet Italian-style chicken sausage, thinly sliced
2 tablespoons basil, cut chiffonade style
¼ cup freshly shaved Parmesan cheese, or to taste

Steps:

  • Heat olive oil in a large saucepan over medium heat. Add onion and cook, stirring, until soft and lightly browned, about 3 minutes. Add garlic and stir until lightly browned, 1 to 2 minutes. Pour in white wine and chicken broth; stir to combine. Season with Italian seasoning, salt, red pepper, and black pepper. Bring sauce to a simmer and cook for 10 minutes.

I learnt this technique for cooking asparagus from one of the nonnas I met at the market in Rome. By frying, then adding a little liquid and reducing to a low temperature, you ensure the flavours combine beautifully. Creating emulsification at the very end gives a perfect sauce that's as much about flavour as it is texture.

300 grams (10 ounces) dried linguine
300 grams (10 ounces) mixed asparagus (wild, white, regular)
4 cloves of garlic
2 dried red chillies
Olive oil
1 knob of unsalted butter
30 grams (1 ounce) pecorino or Parmesan cheese, plus extra to serve
1 lemon

Steps:

  • Cook the pasta in a pan of boiling salted water according to the packet instructions. Meanwhile, snap off and discard the woody ends of the asparagus, then finely slice the spears at an angle, leaving the tips whole. Peel and finely slice the garlic, crumble up the dried chillies, and place both in a large frying pan on a medium heat with 2 tablespoons of oil and the butter. When the garlic starts to sizzle, stir in the asparagus. Let it start to fry, then add a spoonful of pasta water, cover, and leave to simmer on a low heat until the pasta is al dente.
  • Using tongs, drag the pasta straight into the asparagus pan, letting a little starchy cooking water go with it. Turn the heat off, then finely grate in the pecorino and toss together until the fat, cheese and liquid make a natural creamy sauce--loosen with a little extra cooking water, if needed. Taste and season to perfection, then divide between your plates. Finish with a grating of pecorino and a little lemon zest, to taste.
