MOM'S SCALLOPED POTATOES
This is the way my mother always made her scalloped potatoes. The measurements are taken from other recipes because she always just winged it, but the method is the same. The key is to heat the milk first!

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
- Spread about 1/3 of the potato slices into the bottom of the prepared baking dish. Top with about 1/3 of the onion slices. Sprinkle 3 tablespoons flour over the potato and onion. Arrange 2 tablespoons butter atop the flour. Season the entire layer with salt and pepper. Repeat layering twice more.
- Heat milk in a saucepan until warm. Pour enough warm milk over the mixture in the baking dish so the top of the liquid is level with the final layer of potatoes.
- Bake in preheated oven until potatoes are tender, 45 to 60 minutes.

MAMA MOE'S SCALLOPED POTATOES
Yukon Gold potatoes are sliced and layered with creamy sauce and Cheddar cheese before baking until tender and golden brown. So full of flavor and cheesy! Yummy!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Stir together the cream of potato soup, cream of mushroom soup and onion in a bowl. Heat in the microwave until hot, about 3 minutes. Make a layer of potato slices in the bottom of a 9x13 inch baking dish. Cover with a layer of the soup mixture and then sprinkle with some of the cheese. Repeat layers until ingredients are used up.
- Bake in the preheated oven until potatoes are fork-tender and cheese is browned on top, about 1 hour.

MAMA'S SCALLOPED POTATOES

Steps:
- Preheat the oven to 375 degrees F. Spray a 3-quart baking dish with cooking spray.
- In a large bowl, combine the evaporated milk, flour, paprika, seasoning salt, nutmeg, cayenne, 3/4 teaspoon kosher salt and 1/2 teaspoon black pepper. Add the potatoes, onions and zucchini and toss to coat, making sure to separate the vegetable slices.
- Pour the mixture into the prepared baking dish, distribute the vegetables evenly, and then flatten the top with a rubber spatula. Sprinkle with the Parmesan and bake until crispy on top and the potatoes are tender, 45 minutes to 1 hour.
- Let sit for 10 minutes to set. Garnish with green onions before serving.
SCALLOPED POTATOES NOT LIKE YOUR MAMA'S!
Steps:
- Scrub and boil potatoes skin on cook enough until fork can piece through without difficulty about 30 minutes. You do not want your potatoes over cooked where they are too soft to work with.
- Cool potatoes to where you can work with them. Slice into bowl. Wash and chop green onions, smash fresh garlic.
- Add all of the above ingredients except 1 cup of cheddar cheese. Fold enough to mix, not too much or potatoes can looked mashed.
- Bake in 350°F oven for 20-25 minutes. Take out and add the 1 cup cheese to the top and put back into the oven until it melted. Present with chives on top and parsley.

NOT YOUR ORDINARY SCALLOPED POTATOES WITH HAM
I married a wonderful man of Ukrainian ancestry who frequently requests scalloped potatoes and ham. I like food with a bit of flavour and spice so find the usual recipes sort of bland. Decided if I had to make them, they were going to have to be kicked up a notch. So this is it - my version - hope you enjoy it. * if you don't like it as spicy, reduce the cayenne and chili pepper to 1/2 tsp each. Also, asiago or parmesan cheese can be used in place of the romano.

Steps:
- Preheat oven to 350°F.
- In a large saucepan, melt butter over medium heat; using a wooden sppon, blend in flour, salt, pepper, cayenne pepper, chili pepper and garlic powder.
- After blended, stir constantly for 1 further minute.
- Remove from heat and graduallly stir in milk. Return to heat when mixed well and cook until it thickens. Add dry white wine, stir until thickened again.
- Fold in onion, bell pepper, diced green chilis, minced jalapeno. Fold in Ham and cheeses. Mix well.
- Place sliced potatoes in a large bowl and pour mixture over top. Stir gently then pour mixture into a greased 13x9 inch glass baking dish. Cover with foil.
- Cook at 350°F for 30 minutes. Remove foil and continue to cook for a 1 hour.
- Remove from oven and let stand 10 to 15 minutes before serving.

NO PEEL SCALLOPED POTATOES
Almost called this "Down and Dirty Scalloped Potatoes". It's made with a bag of frozen hashbrowns, purchased shredded cheddar,etc. Not very healthy but sure disappears at potlucks. I guarantee they're the easiest "scalloped" potatoes you'll ever make. Men and kids LOVE these. Guilty pleasures.
