SMOKED DUCK AND SCALLOP SALAD WITH SHERRY VINAIGRETTE



Smoked Duck and Scallop Salad with Sherry Vinaigrette image

Number Of Ingredients 19

1 -ounce white wine
3 ounces sherry vinegar
2 ounces olive oil
Salt and pepper
1/2 cup buttermilk
1 egg
Vegetable oil, as needed
2 ounces leeks, cleaned and cut into strips
Flour, as needed
2 cloves garlic, roasted and minced
1 teaspoon minced shallots
1 pinch cracked black pepper
1/2 cup sherry vinegar
2 tablespoons olive oil
2 bunches watercress, stemmed
2 skinless and boneless duck breasts
3 ounces fresh scallops
1 ounce pecans, roasted and roughly chopped
2 ounces cheddar cheese, cut into wedges

Steps:

  • Prepare the vinaigrette dressing by whisking all of the ingredients together and reserve under refrigeration until needed.
  • Prepare the fried leeks by mixing the buttermilk and egg in a small bowl. Fill a large pot 1/2 full with vegetable oil and heat to 375 degrees F. Dip leeks in mixture and then dredge in flour, shaking off excess. Deep-fry the leeks until they are crisp and golden brown. Degrease the fried leeks on absorbent paper towels and reserve in a warm place until needed.
  • Prepare a stovetop smoker.
  • Prepare the marinade by combining ingredients in a large bowl. Separate into 2 small bowls. Add duck breast to 1 bowl, turning to coat evenly. Marinate for 5 minutes.
  • Place the duck in a smoker for 5 minutes. Remove and set aside.
  • Rub scallops with marinade from second bowl. Preheat grill. Grill the duck breast for 10 minutes, turning to cook evenly. Add scallops during the last 3 minutes of cooking.
  • Place the cleaned, stemmed watercress in a bowl and toss it with 3/4 of the dressing. Season, to taste, with salt and pepper.
  • Mound the watercress in the center of a chilled salad plate. Slice the duck breast and lay it on top of the mound. At the base of the mound, place 3 grilled scallops in a triangular formation. Garnish the salad by sprinkling it with roasted pecans and arranging cheese wedges. Top with fried leeks.

SEARED ROSEMARY SCALLOPS

four 12-inch-long rosemary branches or 10-inch bamboo skewers
1 teaspoon chopped fresh rosemary leaves
1/4 teaspoon paprika
1/8 teaspoon cayenne
16 medium sea scallops (about 1/8 pound)
2 tablespoons olive oil
Accompaniments if desired: Purple Potato, Sugar Snap Pea, and Mint Salad and Mango Cucumber Salsa

Steps:

  • If using rosemary branches, remove leaves from all but top 3 inches of each branch. In a small bowl stir together chopped rosemary, paprika, and cayenne. Remove tough muscle from side of each scallop if necessary and pat scallops dry. Season scallops with salt and sprinkle with rosemary mixture. Thread 4 scallops onto each rosemary branch or bamboo skewer.
  • In a large non-stick skillet heat oil over moderately high heat until hot but not smoking and sauté scallops until golden and just cooked through, 1 to 2 minutes on each side.
  • Serve scallops with potato salad and mango salsa.

ROSEMARY-GRILLED SCALLOPS

1 1/2 pounds sea scallops (about 30)
About 30 fresh rosemary sprigs (each 3 to 4 inches long)
3 ounces prosciutto, sliced paper thin
3 tablespoons extra virgin olive oil
3 tablespoons fresh lemon juice
Coarse salt and freshly ground black pepper

Steps:

  • Pull off and discard crescent-shaped muscle on side of each scallop that has one. Strip leaves off bottom 2 inches of rosemary sprigs (slide them off with your thumb and forefinger). Reserve leaves, and set sprigs aside. Cut prosciutto into strips just large enough to wrap around scallops (about 1 by 3 inches).
  • Lay a scallop flat on a work surface. Wrap a piece of prosciutto around it. Skewer a rosemary sprig through prosciutto and scallop to other side. Repeat with remaining scallops. Arrange scallops in a baking dish. Drizzle olive oil and lemon juice on both sides, sprinkle with rosemary leaves and season with salt and pepper. (Go easy on salt, as prosciutto is fairly salty.) Marinate for 15 minutes, while you light grill.
  • Set up grill for direct grilling, and preheat to high. Brush and oil grate. Arrange scallops on grate, and grill until just cooked, about 2 minutes a side. Serve at once.

3 tablespoons lemon juice
3 tablespoons reduced-sodium soy sauce
2 tablespoons canola oil
Dash garlic powder
Dash pepper
1-1/2 pounds sea scallops
3 medium green peppers, cut into 1-1/2-inch pieces
2 cups cherry tomatoes

Steps:

  • In a small bowl, combine the first five ingredients. Pour 1/4 cup into a large resealable plastic bag; add scallops. Seal bag and turn to coat; refrigerate for 20 minutes. Cover and refrigerate remaining marinade for basting., Meanwhile, in a large saucepan, bring 3 cups water to a boil. Add peppers; cover and boil for 2 minutes. Drain and immediately place peppers in ice water. Drain and pat dry., Drain and discard marinade. On eight metal or soaked wooden skewers, alternately thread the tomatoes, scallops and peppers., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. 1/2 teaspoon freshly ground black pepper
1 tablespoon light soy sauce
1/2 tablespoon fish sauce
1 teaspoon sesame oil
2 duck breasts, skin on
2 tablespoons vegetable oil
1/2 cup of Vietnamese green tea
1/2 cup brown sugar
1/2 cup of jasmine rice grain
1 cassia bark stick
2 star anise
2 spring onion, thinly sliced on diagonal
2 long chiles, julienned
2 baguettes
Handful fresh coriander (cilantro) leaves
Light soy sauce and chile, for dipping

Steps:

  • In a large mixing bowl, combine pepper, light soy sauce, fish sauce, and sesame oil. Stir and coat the duck and marinate for 30 minutes. Bring a fry pan to medium heat, add oil, then sear and brown the duck breasts skin-side down for 3 minutes. Remove and set aside.
  • Place some foil in a wok, add green tea, sugar, rice grains, cassia bark, and star anise. Place a wire rack in the wok and cover.
  • Turn heat to high until the wok begins to smoke. Now add the duck breasts skin-side up and reduce the heat to medium. Cover then allow to smoke.
  • Turn off heat and allow the duck to rest in the wok for a further 5 minutes.
  • Thinly slice the breasts, garnish with a combination of spring onions, chile, and coriander.
  • Serve with baguette and soy/chile dipping sauce.
