140 g butter
1/2 cup yogurt
4 eggs
2 teaspoons vanilla extract
1 1/2 teaspoons baking soda
1/2 teaspoon salt
2/3 cup honey
1/2 cup sultana
1/2 cup frozen raspberries
4 cups almond meal

Steps:

  • Heat oven to 180 C (350 F).
  • Using a hand held blender, thoroughly mix together all ingredients other than fruit.
  • Gently fold in fruit.
  • Drop batter into muffin cases. Bake for 15 minutes. When done the edges will be a little brown and the knife inserted into them will come out clean.

Fruity muffins that are gluten free, what more could you want? Absolutely delicious! Best eaten just out the oven or warmed up slightly in the microwave.

Steps:

  • Heat oven to 180C/160C fan/gas 4. In a large bowl sift and mix the flour, baking powder, cinnamon/spice and caster sugar. If you have self raising flour mix then you only need 1tsp of baking powder.
  • In another bowl, mix the eggs, milk and oil. Pour the wet ingredients into the dry and mix well, then stir in the grated apples and sultanas.
  • Divide the mix between 6-8 muffin cases and bake for 25 mins. Allow to cool slightly before eating.
