Pancakes for One or Two image

This is another recipe I found in the 1998 Taste of Home Annual Recipes. It was sent in to them by Ann Schenk of Winnett, Montana.She added two teapoons of wheat germ when the dry ingredients were mixed together, but I left it out. And they seemed to come out just fine.This recipe make enough for one, but if you make them just a bit smaller you could get enough for two. And serve eggs and sausage on the side for a much heartier breakfast or even dinner.Serve with margarine and syrup, if desired. Submitted to " ZAAR " on October 28th, 2009

1/2 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 egg
1/2 cup buttermilk
1 1/2 teaspoons vegetable oil

Steps:

  • In a bowl, combine flour,baking soda, baking powder, and salt.
  • In another bowl, beat egg,milk and oil.
  • Stir in dry ingredients just until blended.
  • Pour batter by 1/3 cupfuls ( if making smaller, use 1/4 cupfuls ) onto a lightly greased hot griddle, or you can use a lightly greased frying pan.
  • Turn when bubbles form on top of pancakes and edges are slightly dry.
  • Cook until the other side is a golden brown.

Ann Schenk (at Left) of Winnett, Montana, has used the recipe for Pancakes for One for years. Originally it served six. "As our kids grew up and left home, I scaled down the recipe," Ann says. "Now if my husband, Mike, or I have a taste for these pancakes, it's easy to make just a few."

1/2 cup all-purpose flour
2 teaspoons toasted wheat germ
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 egg
1/2 cup buttermilk
1-1/2 teaspoons vegetable oil
Butter and maple syrup

Steps:

  • In a bowl, combine flour, wheat germ, baking soda, baking powder and salt. In another bowl, beat egg; add buttermilk an oil. Stir into dry ingredients just until blended. , Pour batter by 1/3 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes. Cook until the second side is golden brown. Serve with butter and syrup.

My Family Pancakes image

This has been the pancake recipe for my family since I was able to eat them. I don't know where my mother got this recipe but it's the best I've ever had. They rise up nice and high. I sometimes add vanilla and spices like cinnamon and nutmeg. Very tasty!!

Sunny's Easy Baked and Loaded Pancake with Lemon Maple Glaze image

Number Of Ingredients 11

3 strips bacon
1 1/3 cup store-bought pancake mix (that requires only water)
Zest of 1 lemon
1 tablespoon salted butter
1/2 cup blueberries
1/3 cup pecan halves, gently crushed in your hand
1/3 cup walnut halves, gently crushed in your hand
2 cups confectioners' sugar
1/4 cup fresh lemon juice
1/4 cup milk
1 teaspoon maple extract

Steps:

  • For the pancake: Lay the bacon side-by-side in a cold 9- or 10-inch oven-safe nonstick saute pan. Place the pan in the cold oven and heat the oven to 350 degrees F. Let the bacon cook until almost cooked through, about 15 minutes, then flip the bacon and return to the oven to finish, about 5 minutes more. Remove bacon to a paper towel-lined plate and place the pan with any leftover bacon fat back in the oven. Raise the temperature to 400 degrees F. Let the bacon cool, then chop.
  • Add the pancake mix, 1 cup water and lemon zest to a large bowl. Stir to distribute the zest and add the amount of water instructed on the packaging. Whisk together and refrigerate until the oven is at temperature.
  • Assemble the remaining ingredients, since everything happens fast once you start. Remove the pan from the oven and add the butter, tilting the pan to coat. Add the bacon, blueberries, pecans and walnuts, then quickly pour over the batter. Return to the oven and bake until cooked through and lightly golden on top, 12 to 15 minutes.
  • For the sauce: Meanwhile, add the confectioners' sugar, lemon juice, milk and maple extract to a small bowl. Whisk until the sugar melts away into the glaze. Drizzle over the finished pancake.

If you've never had Swedish pancakes, you'll quickly learn they are a cross between a pancake and a crepe. These are certain to become a family favorite for breakfasts, brunches and everything in between.

1 1/2 cups all-purpose flour
2 cups milk
1 Tablespoon white sugar
2 eggs
1/2 teaspoon baking powder
1/2 teaspoon vanilla
1/2 teaspoon salt
1/4 cup butter

Steps:

  • Add all ingredients except butter into a blender and blend until smooth. Batter will be very runny.
  • Heat skillet to medium heat.
  • Add 1 teaspoon of butter and melt, coating bottom of a small skillet.
  • Pour 1/4 cup of batter into skillet and swirl all around. Let pancake cook until edges begin to bubble.
  • Flip pancake and cook other side for 1 -2 minutes.
  • Pancakes can be stacked, rolled or folded into triangles.
  • Serve with favorite toppings.

This secret family pancake recipe was passed down from my grandfather. He fed a family of 7 (including 4 growing boys!) on these pancakes, and refused to give anyone the recipe until he finally relinquished it to my mother (his daughter-in-law) before he passed away. It is a long-standing family favorite!

¼ cup white sugar
1 tablespoon baking powder
¼ teaspoon salt
1 cup milk, at room temperature
1 egg, at room temperature
1 tablespoon oil

Steps:

  • Combine flour, sugar, baking powder, and salt in a bowl; make a 'well' in the center of the flour mixture. Pour milk, eggs, and 1 tablespoon oil into the well. Mix until well moistened.
  • Place a griddle over medium-high heat; sprinkle a few drops of water onto the griddle. If the droplets bounce, the griddle is ready; add 2 teaspoons oil.
  • Spoon batter onto the griddle; cook until bubbles form and the edges are dry, 3 to 5 minutes. Flip and cook until browned on the other side, 3 to 5 more minutes. Repeat with remaining batter.

Steps:

  • Combine flour, baking powder, baking soda, and salt in a mixing bowl with a fork. Add milk, starter, and oil; mix thoroughly.
  • Heat butter on a griddle or in a skillet over medium-high heat. Scoop 1/4 cupfuls onto the hot griddle and cook until bubbles begin to form on the top, 2 to 3 minutes. Flip and continue to cook until golden, 1 to 2 minutes more.

1 L of milk or soy milk
4 eggs
1 TBsp of sugar
1 tsp of salt
1 tbsp of oil
1.5 cups of white flour
1.5 cups of whole wheat flour
2 apples peeled, cored, and shredded

Steps:

  • Mix the flour and milk until they are smooth . . . Add in the eggs and sugar and a pinch of salt to taste . . . and mix Heat up a large frying pan on medium/medium high heat. Pour in enough batter to evenly cover the bottom of the pan. Try to make it as thin as possible. Let it cook for a bit and flip to the other side. This is tricky as you must make sure the first side is cooked before attempting "the flip". When done . . . remove from pan and add fresh fruit or jam or bacon or whatever your heart desires. Roll it up and top it with maple syrup. If you really have a sweet tooth . . . top it with icing sugar . . .
