SCOTCH BARS
This was one of my mom's recipes, and one of the most popular dessert/cookie/snacks she made. It's ultra-simple and just about impossible to mess up unless you just flat-out burn it to a crisp.

Steps:
- Preheat the oven to 350 degrees F. Line a 9-inch square baking pan with aluminum foil and spray with nonstick spray.
- Mix together the flour, oats, brown sugar, baking powder and salt in a bowl. Cut in the butter with a pastry cutter until the mixture resembles coarse crumbs. Sprinkle the mixture into the prepared pan and pat lightly to pack it slightly.
- Bake until light golden brown on top and done in the middle, watching to make sure it doesn't burn, 30 to 35 minutes. Allow to cool for 15 minutes.
- Spoon the dulce de leche into a microwave-safe bowl and microwave to just slightly soften it, about 45 seconds. Scoop it on top of the oatmeal base and use an offset spatula to spread it out to the edges and into an even layer. Sprinkle on a layer of peanuts so that they completely cover the caramel and use your hands to gently press them into the caramel. Sprinkle on the butterscotch chips and mini chocolate chips in generous layers.
- Note: The warmth of the cookie base and caramel should slightly soften the butterscotch and chocolate chips. When that happens, use your hands to very gently press the chips just enough to anchor them together (but not enough to misshape them). If the pan isn't warm enough, pop it into the oven for 30 seconds or so and gently press the chips to anchor them together.
- Chill the bars for 2 to 3 hours to make them easy to slice. Remove them from the pan, place on a cutting board and use a long serrated knife to cut into small squares (they're rich!). Serve cold or at room temperature.

16 GREAT SCOTCH COCKTAILS YOU WON'T WANT TO MISS
From thespruceeats.com
- Rusty Nail. The rusty nail is an icon in the world of scotch cocktails and it's the perfect drink to use when exploring new bottles of scotch. This simple and sophisticated mix pairs the whisky with Drambuie, and it's also the signature cocktail for the scotch-based liqueur.
- Rob Roy. The Rob Roy is also known as a scotch Manhattan, and that alone should clue you in to the recipe. A Manhattan is a very simple cocktail of whiskey, sweet vermouth, and bitters.
- Affinity. There's a scotch version of nearly any famous whiskey drink. When it comes to the perfect Manhattan, the scotch counterpart is the affinity cocktail.
- Scotch and Soda. Interested in sprucing up your whisky without any distracting flavors? The scotch and soda is the drink for you! Requiring just the two named ingredients, this is more of a serving suggestion than a "recipe."
- Scotch Sour. The classic scotch sour is little more than an upgrade to scotch on the rocks. It's also a brilliant way to enhance some of the softer aspects of a great whisky.
- Blood and Sand. When you're ready for a complex cocktail, the blood and sand is an excellent choice. Like the Manhattan, this recipe uses scotch and sweet vermouth, though it adds cherry brandy and orange juice to the mix.
- Robert Burns. The Robert Burns is often hidden in the shadows of its more famous counterparts. That pesky absinthe ban certainly didn't help its notoriety.
- Mamie Taylor. The Moscow mule has nothing on this scotch cocktail! Created in 1899 and named for the opera singer who requested it, this old-fashioned cocktail puts ginger beer or ale to good use with scotch and a hint of lime.
- Godfather. Another old-timey favorite, the godfather should definitely not be overlooked. The recipe adds a short pour of amaretto to the whisky. Unlike the tart citrus of the sour, this does the opposite, bringing in a subtle sweetness that makes it an easy drinker almost everyone will enjoy.
- Smoked Rose. The smoked rose is the ideal transition to modern and slightly more complex drinks. This recipe plays up scotch's well-known smoky profile. It begins by smoking a glass with burning rosemary then adds a pour of rosemary syrup and Green Chartreuse.
