3 lbs english-cut roast or 3 lbs chuck roast
2 onions, chopped
4 carrots, sliced thin
4 stalks celery, sliced thin
salt and pepper
1/2 cup water

Steps:

  • Rinse roast and put in a covered roaster with about 1/2 cup water.
  • Add onions, carrots and celery. Salt and pepper roast. Cover roaster with lid.
  • The secret of a very tender roast is to cook it slow at 275° for 3 hours, until tender and roast falls apart.
  • When cooked, you can make gravy from drippings , if desired.

3 lbs pot roast (chuck roast)
2 large white onions, sliced
2 lbs carrots, peeled & cut
8 medium potatoes, peeled & cut
1 (10 ounce) can cream of onion soup
1 (1 1/4 ounce) package onion soup mix
1 cup red wine
1 cup water

Steps:

  • Rinse meat, arrange in rectangular baking dish or in crock pot.
  • Arrange carrots, potatoes and onions around meat.
  • Whisk all liquids and soup mix together, pour over meat and veg.
  • Bake 4 hours @ 350°F in oven (cover with foil) or in crock pot for 8 hours on low, or until fork-tender.
