Perfectly thick, soft and chewy peanut butter bars with a peanut butter and chocolate glaze, and oats baked in the chewy cookie bars.

3/4 cup butter
1/2 cup granulated sugar
1 cup light brown sugar
2 large eggs
1/2 teaspoon vanilla extract
1/2 cup creamy peanut butter ((plus more for spreading over baked bars))
2 1/2 teaspoons baking soda
1/2 teaspoon salt
1 1/2 cups all-purpose flour
2 cups old-fashioned rolled oats
1/4 cup butter
1 Tablespoon unsweetened cocoa powder
1 1/2 Tablespoons milk
1 1/4 cups powdered sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F. In a large mixing bowl, cream together the butter, sugar and brown sugar.
  • Add the eggs, vanilla, and peanut butter and mix well.
  • In a separate bowl mix together the dry ingredients. Add dry ingredients to creamy mixture.
  • Press firmly into a greased 9x13'' pan. Bake at 350 degrees for 17-21 minutes. Do not over-bake! They will look just barely set in the center, and they will harden as they cool. Allow to cool completely.
  • Once cooled, spread a thin layer of peanut butter over the bars.

1 cup powdered sugar
1 cup peanut butter, plus an additional 2 Tbsp.
1 cup semi-sweet chocolate chips

Steps:

  • In a bowl, combine the graham cracker, sugar, and butter. Stir. Add in 1 cup (240g) of peanut butter and mix until combined.
  • Line a 9x9 (22x22 cm) or 8x8 (20x20 cm) pan with foil.
  • Spread on the peanut butter mixture.
  • Melt the chocolate chips with the 2 Tbsp. of peanut butter, and spread on top of the graham cracker mixture.
  • Refrigerate for 3 hours.
  • Remove from pan, cut, and serve.

1 tablespoon butter
6 cups crispy rice cereal (such as Rice Krispies®)
1 (11 ounce) package butterscotch chips
1 cup creamy peanut butter
1 (11 ounce) package semisweet chocolate chips

Steps:

  • Grease bottom and the lower 1 inch of the sides of a 9x13-inch baking dish with butter. Pour cereal into the prepared dish.
  • Mix butterscotch chips and peanut butter together in a bowl and melt in a microwave oven, stirring every 30 seconds, until smooth, 2 to 3 minutes; pour over cereal and stir until cereal is coated. Use a spatula or the back of a spoon to compact mixture into the dish.
  • Cover the baking dish with plastic wrap and refrigerate until firm, about 10 minutes.
  • Melt the chocolate in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting, for 1 to 3 minutes (depending on your microwave). Spread over the top of the bars with a spatula.

1 cup light corn syrup
1 cup white sugar
1 ½ cups peanut butter
6 cups crisp rice cereal
½ cup semisweet chocolate chips
½ cup butterscotch chips

Steps:

  • Generously butter a 9x13 inch baking pan. Set aside.
  • In a large pot, mix together corn syrup, sugar, and peanut butter. Cook over medium heat, stirring until peanut butter melts. Bring mixture to a boil. Remove from heat, and stir in crisp rice cereal.
  • Transfer mixture into a well buttered 9x13 inch pan. With your hands well buttered, pat it down into pan.
  • In a medium saucepan, over medium low heat, melt chocolate chips and butterscotch chips until smooth. Spread over top of bars and let bars cool. Cut into squares.

1 ⅛ cups brown sugar
1 cup unsalted butter, softened
2 large eggs
¾ cup peanut butter

1 teaspoon baking soda
1 pinch salt
2 cups powdered sugar
4 tablespoons unsalted butter, softened
2 tablespoons milk, or more as needed
2 tablespoons peanut butter
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 15x10-inch baking pan.
  • Cream white sugar, brown sugar, butter, and eggs together in a mixing bowl. Mix in peanut butter and vanilla extract. Add flour and blend well. Add oats, baking soda, and salt and mix to combine. Spread into the prepared pan.
  • Bake in the preheated oven until golden and the edges start to pull away from the sides of the pan, about 20 minutes. Remove from the oven and let cool or chill in the refrigerator, about 30 minutes.
  • While bars cool, blend powdered sugar, butter, milk, and peanut butter together in a bowl, adding more milk to give frosting the desired consistency. Frost cooled bars and cut into 20 pieces.

¾ cup peanut butter

This is a delicious sweet recipe that was given to me by my SIL. It combines peanut butter and butterscotch with a wonderful chocolate frosting in a unique bar, that is easy to prepare. We receive a plate of these every Christmas, and they disappear fast. Sometimes when I make these, I double the frosting recipe to have a thicker frosting, but that would be up to you. Hope you enjoy them too.

2/3 cup butter or 2/3 cup margarine, softened
1/2 cup brown sugar
1 1/3 cups flour
1 cup sugar
1 cup light corn syrup
1 (6 ounce) package butterscotch chips
1 1/4 cups creamy peanut butter
3 cups corn flakes
3 tablespoons butter, Melted
1 cup powdered sugar
3 tablespoons unsweetened cocoa
2 tablespoons milk (or more if needed)
1 teaspoon vanilla

Steps:

  • Preheat oven to 350 degrees.
  • For the crust, cream the butter and brown sugar together until light and fluffy. Add the flour and mix well (mix may be a little dry). Press into the bottom of an ungreased 9 by 13 inch pan. Bake for 15 minutes or until done, watch closely so it doesn't get to brown, it should be pale in color. Cool completely.
  • For the topping, combine the sugar and corn syrup in a large saucepan and bring to a boil. Remove from heat and add the butterscotch chips and peanut butter, mix well until the chips are completely melted and the peanut butter is throughly mixed through. Stir in the corn flakes and carefully spread over the crust.
  • For the frosting combine the melted butter and cocoa together until smooth, add the powdered sugar, vanilla, and milk and mix well until reaching a spreading consistancy. You may have to add more milk to achieve this. May frost while the bars are still warm. Cool and cut into bars. Enjoy.

Steps:

  • Preheat oven to 350 degrees F.
