Crunchy Chicken Tenders image

This chicken is dipped in crushed cereal, then baked. A delicious alternative to fried chicken with a great crunch!

cooking spray
2 tablespoons all-purpose flour
1 pinch dried basil
1 pinch chili powder
salt and ground black pepper to taste
1 egg
1 tablespoon water
3 cups crushed cornflakes
6 skinless, boneless chicken tenders

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Coat a baking sheet with cooking spray.
  • Mix flour, basil, chili powder, salt, and pepper together in a bowl. Mix egg and water together in another bowl. Pour crushed cereal into a third bowl.
  • Dip each tender in the flour mixture first, shaking off excess. Dip in egg and then in crushed cereal. Place on the prepared baking sheet.
  • Bake in the preheated oven until browned and no longer pink in the centers, 10 to 12 minutes on each side.

2 pounds skinless, boneless chicken breast halves - cut into strips
2 eggs, beaten
½ cup milk
1 (12 ounce) package tortilla chips, crushed

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix egg beat and milk in a shallow dish or bowl; place crushed chips in a separate shallow dish or bowl. Dip chicken first in egg mixture, then in crushed chips to coat. Place coated chicken on an ungreased cookie sheet.
  • Bake in preheated oven for 10 minutes; turn sides and bake for another 10 minutes.

I found this recipe in one of my cooking magazines and tried it right away. It is so easy and cheesy! A great dish, any night of the week!

1 (8 ounce) package refrigerated crescent dinner rolls
1 cup shredded cooked chicken
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 cup shredded cheddar cheese, divided
2/3 cup condensed cream of chicken soup, undiluted
1/2 cup milk

Steps:

  • Separate crescent dough into 8 triangles.
  • Combine the cooked chicken, onion powder, garlic powder and 2 tablespoons cheese; place about 2 tablespoonfuls on the wide end of each triangle.
  • Roll up and place on an ungreased baking sheet.
  • Bake at 375 degrees for 18-20 minutes or until golden brown.
  • Meanwhile, in a saucepan combine soup, milk and remaining cheese.
  • Cook until heated through and cheese is melted.
  • Serve over crescents.

1 tube (8 ounces) refrigerated crescent rolls
1 cup shredded cooked chicken
1/2 cup shredded cheddar cheese, divided
2/3 cup condensed cream of chicken soup, undiluted

Steps:

  • Separate crescent dough into eight triangles. Combine the chicken and 2 tablespoons cheese; place about 2 tablespoonfuls on the wide end of each triangle. Roll up and place on an ungreased baking sheet. Bake at 375° for 18-20 minutes or until golden brown., Meanwhile, in a saucepan or microwave-safe bowl, combine soup, milk and remaining cheese. Cook until heated through and cheese is melted. Serve over crescents.

Chicken Parmesan is a little too time consuming when I am trying to juggle two kids under the age of three while trying to cook. This recipe is so simple and even my picky three year old devoured it!

8 chicken strips (fully cooked, (I used Tyson Crispy Chicken Strips))
8 ounces refrigerated crescent roll dough (1 can)
8 slices mozzarella cheese
24 ounces spaghetti sauce (1 jar)
1 Tablespoon butter (melted)
¼ teaspoon garlic powder
½ teaspoon Italian seasoning
1 Tablespoon grated parmesan cheese

Steps:

  • Cook chicken strips according to package directions. Preheat oven to 375 degrees.
  • Separate crescent rolls into 8 triangles. Place one slice of cheese on the wide end of each crescent roll.
  • In a saucepan over low heat, warm spaghetti sauce until heated through. Dip cooked chicken strips in spaghetti sauce so they are completely covered. Place dipped chicken strips on top of cheese and roll up crescent rolls. Place rolls on an ungreased baking sheet. Brush melted butter on top of each roll and sprinkle with garlic powder, Italian seasoning and Parmesan cheese.
  • Bake for 15 minutes, or until golden brown.

Scrumptious Creamy & Crunchy Chicken Crescents image

One of my favorite dishes and always a huge hit at my dinner party/get-togethers at my house. These little 'chicken balls' are so tasty. Crunchy and crusty on the outside, and warm, savory and creamy on the inside. I love them warm out of the oven and cold out of the fridge. I use Pepperidge Farm stuffing mix, as it has more of a fine texture. Bread crumbs could also be used. I would not recommend a coarse stuffing mix (like Stove Top) with large chunks. For parties, I make the full recipe, but cut the crescent rolls in half to make them more bite-size (although they are still a good 2-3 bites each!).

2 -3 large chicken breasts
1 (8 count) package refrigerated crescent dinner rolls
8 ounces cream cheese or 8 ounces neufchatel cheese
8 ounces sour cream
1/2 cup chopped onion
2 cups pepperidge farm seasoned stuffing mix
1/2 cup melted butter
salt and pepper
flour

Steps:

  • Boil chicken breasts until cooked through. Shred meat once cooked.
  • In a large bowl, combine cream cheese, sour cream, and onion. Add shredded chicken and salt and pepper to taste. Mix well.
  • Flour counter-top and rolling pin. Flatten crescent rolls until at least double in size.
  • Add one-eighth of the chicken mixture (approx. 3/4 cup) to the center of the flattened crescent roll. Roll up into a ball. (Should be 3-4" in diameter.).
  • Roll ball in melted butter and coat with stuffing mix.
  • Bake at 375 degrees for 20-25 minutes, or until crescent roll is golden brown.
