SHRIMP BRUSCHETTA RECIPE



Shrimp Bruschetta Recipe image

Not your average bruschetta recipe! For a special twist, I added shrimp, avocado, and good quality basil pesto.

5-6 firm Roma tomatoes, diced
1/2 lb shrimp, peeled and cooked
2 green onions, chopped
1 ripe avocado, peeled and diced
1 garlic clove, minced
8 oz baby mozzarella cheese balls, halved
salt and pepper
1/2 lemon, juice of
olive oil
3 tbsp good quality basil pesto
3 tbsp grated Parmesan, more if you like
1 French baguette, sliced and toasted

Steps:

  • Place the diced tomatoes in a colander for 10 mins to drain its juices. Meanwhile, prepare the remaining ingredients.
  • Slice the shrimp horizontally through the middle (see the picture).
  • In a large bowl, combine the tomatoes, shrimp, green onions, avocado, garlic and mozzarella. Season with salt and pepper. Add the lemon juice, 2 tbsp olive oil, basil pesto and Parmesan. Toss gently to combine.
  • Transfer the shrimp bruschetta into a serving bowl. Cover and refrigerate for 1 hr. When ready to serve, toss the bruschetta gently to freshen. Toast the bread slices and serve next to it. Enjoy!

4 plum tomatoes, seeded and chopped
6 tablespoons olive oil, divided
6 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon pepper
2 pounds uncooked small shrimp, peeled and deveined
1 cup (4 ounces) crumbled feta cheese
1 tablespoon lemon juice
2 teaspoons minced fresh basil
2 teaspoons minced fresh parsley
36 slices French bread baguette (1/4 inch thick)
1 garlic clove, halved
Optional: Lemon wedges and additional fresh basil

Steps:

  • Preheat oven to 425°. In a 13x9-in. baking dish, combine tomatoes, 4 tablespoons oil, minced garlic, salt and pepper. Bake, uncovered, 15 minutes. Stir in shrimp, cheese, lemon juice, basil and parsley. Bake, uncovered, 10-12 minutes longer or until shrimp turn pink., Meanwhile, brush baguette slices with remaining oil. Place bread on ungreased baking sheets. Bake 1-2 minutes on each side or until lightly browned. Rub toast with cut surface of garlic; discard garlic. Using a slotted spoon, top with shrimp mixture. If desired, serve with lemon wedges and top with additional fresh basil.

1 teaspoon dried basil
4 tablespoons grated Parmesan cheese

  • In a medium bowl, mix tomatoes, dried basil, Parmesan cheese, olive oil, garlic, seasoning salt and ground black pepper. Cover and chill in the refrigerator 8 hours, or overnight, before serving.

4 tablespoons extra virgin olive oil
2 cloves garlic, chopped
16 mussels, bearded and scrubbed
16 clams, scrubbed
½ cup white wine
pinch of crushed hot red pepper
2 ounces cleaned calamari, cut into rings
2 ounces bay scallops
12 medium shrimp, shelled and deveined
2 ripe tomatoes, peeled, seeded, and diced
1 tablespoon chopped fresh Italian parsley
4 broad, thick slices of country bread

Steps:

  • In a wide, shallow pan over medium heat, warm half the oil. Add half the garlic and cook until the garlic turns gold, about 3 minutes. Add the mussels and clams, cover, and cook over high heat until the shells are open, about 5 minutes. Add half the wine and cook uncovered until the alcohol has evaporated, about 2 minutes. Remove from the heat. When cool enough to handle, remove and discard the mussel and clam shells. In a clean wide, shallow pan over medium heat, warm the remaining oil. Add the remaining garlic and the crushed red pepper, and cook for about 3 minutes, until the garlic turns gold. Add the calamari, scallops, and shrimp, and cook, stirring frequently, until they are just cooked through, 2 or 3 minutes. Add the remaining wine, and continue cooking until it evaporates, about 3 minutes. Add the tomatoes and the clam and mussel mixture, and cook for 5 minutes more. Add the parsley, stir, and remove from the heat. Grill or toast the bread and top each slice with a portion of the seafood.

2 garlic cloves, minced
12 large shrimp, peeled, deveined and diced
6 bay scallops, rinsed and quartered
2 calamari, cleaned and cut into rings
4 ripe tomatoes, seeded and diced
1 red onion, finely chopped
1 Hass avocado, diced
1/2 cup chopped fresh basil leaves
Kosher salt and freshly ground black pepper
1 loaf crusty country bread, sliced 1-inch thick

Steps:

  • Preheat broiler or outdoor grill.
  • In a medium skillet over medium-high heat, add olive oil, garlic and seafood. Cook, stirring occasionally, until shrimp are completely pink and the calamari and scallops are opaque, about 3 to 5 minutes. Remove from heat, and let cool to room temperature.
  • In a medium bowl combine diced tomatoes, onion, avocado, and basil. Season with salt and pepper, and stir with a wooden spoon to combine all the ingredients. Add cooled seafood and a splash of olive oil, stirring to incorporate.
  • Toast the bread under the broiler or on the grill. Top each piece with a large mound of the seafood and tomato salad.

This makes a chic and tasty Christmas Eve supper dish. Prepare the seafood ahead of time, and it only takes a few minutes. Scallops, crab or lobster would also be nice. Here in Italy we have fish stock bouillon cubes, which saves a lot of bother when preparing the fish stock. I think the saffron really adds to the visual appeal of the dish. 8 mussels, scrubbed
400 g small clams (a little less than a pound)
2 teaspoons butter
1 tablespoon olive oil
1 shallot, chopped
1 cup dry white wine
1/2 cup heavy cream
2 cups fish stock
1/4 teaspoon saffron, ground or 1/2 teaspoon saffron thread
salt and pepper, to taste
32 medium shrimp, shelled and deveined
8 small squid, cleaned and chopped into rings
1 red bell pepper, cut into small dice
1 tablespoon parsley, chopped
8 slices bread, coarse country style
1 garlic clove, sliced in two
olive oil, for drizzling on the toast

Steps:

  • Steam open the mussels in a tablespoon of water, pluck out the meat, strain the liquor through a fine filter and discard the shells. Repeat the process for the clams.
  • In a large skillet melt the butter in the olive oil, add the shallot and saute until golden. Add the shellfish liquor, wine, cream, fish stock, saffron and salt and pepper to taste. Mix well, cook together, and reduce a few minutes.
  • Add the squid, mussels, clams, shrimp, bell pepper and parsley to the skillet, and cook for a few more minutes over medium-low, until the shrimp and squid are cooked through.
  • Meanwhile, toast the bread, rub it with the garlic, and drizzle with oil. Place two slices on each plate or shallow soup bowl and ladle the seafood stew over the toast.

Steps:

  • In a bowl, mix together 1 tablespoon olive oil, lemon juice, chives, basil, mint, and garlic.
  • Add in the crabmeat, shrimp, tomatoes, onion, and salt; toss to coat.
  • Cut the french bread into 48 thin slices.
  • Brush one side of each bread slice with a portion of the 2 tablespoons olive oil; sprinkle lightly with pepper.
  • Place bread slices, brushed side up, on a large baking sheet.
