seasoning, mix (onion, celery, red/green/yellow bell pepper - diced, as much as you like, but go easy, too much will)
1 jar pimiento
1 lb shrimp (can use canned, frozen or fresh - peel fresh if using)
1 lb bay scallop (the small ones)
1 lb lump crabmeat
1/2 cup mayonnaise
1 tablespoon Dijon mustard
Tony Chachere's Seasoning, to taste
half-and-half
breadcrumbs
parmesan cheese
1 egg
fresh parsley

Steps:

  • Saute seasoning mix in a little good olive oil until clear.
  • Add shrimp, saute 5 minutes; add scallops, saute 2 minutes.
  • Add mayo, mustard, and Tony's to taste; simmer about 5 minutes (may be a little liquid).
  • Beat egg; add a little liquid from pot to egg, stir well and add mixture to seafood.
  • Add about 1/4 cup Parmesan cheese and 1/3 cup half and half.
  • Mixture may be a little soupy; add just enough bread crumbs to tighten it up.
  • Add crabmeat and about 1/4 cup chopped fresh parsley; gently stir as to not break up crabmeat.
  • Serve in puff pastry shells baked according to package directions.

4 oz. bay scallops
1/2 cup mayonnaise
1 tablespoon fresh lemon juice
1 teaspoon Worcestershire sauce
1/2 teaspoon Cajun or seafood seasoning
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon dry mustard
1 egg, beaten
1/4 cup fresh bread crumbs (or Ritz crackers)
1 teaspoon paprika
3 tablespoons butter

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). 1. Quickly saute shrimp and scallops in 2 T. butter until almost done. 2. In a medium bowl, combine crab meat, shrimp, scallops, mayonnaise, lemon juice, Worcestershire sauce, seafood seasoning, salt, cayenne pepper, dry mustard, and beaten egg.. Mix thoroughly. 3. In an 8" pie dish (or 8 individual gratin dishes), spread mixture and lightly coat the entire dish with bread crumbs. Then sprinkle the top with paprika. Dot the dish with the butter. 4. 1 tablespoon margarine
2 tablespoons all-purpose flour
2 cups milk
1 pound cooked crabmeat
2 teaspoons Worcestershire sauce
½ green bell pepper, minced
1 egg, beaten
salt and ground black pepper to taste
cayenne pepper to taste
2 slices white bread, crumbled into fine breadcrumbs
1 tablespoon melted butter

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Butter a 9x9-inch baking dish.
  • Melt the margarine in a large saucepan over medium heat. Stir in the flour, and cook a few minutes until the bubbles begin to subside. Whisk in the milk, and cook over medium-high heat until thickened. Stir in the crabmeat, Worcestershire sauce, green pepper, and beaten egg. Season to taste with salt, black pepper, and cayenne pepper. Cook, stirring constantly until quite thick. Spoon into the prepared baking dish.
  • Place the breadcrumbs into a mixing bowl, and drizzle with the melted butter. Toss together until the breadcrumbs are evenly moistened with butter. Sprinkle the breadcrumbs evenly over the crab mixture.
  • Bake in the preheated oven until the casserole has firmed and the bread crumbs are golden brown, 10 to 15 minutes.

1/4 cup mayonnaise
1/4 teaspoon lemon juice
1/4 teaspoon Worcestershire sauce
1/4 teaspoon Old Bay Seasoning
1/4 cup plain breadcrumbs
2 tablespoons butter
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 cup white wine
16 shrimp (the large tiger shrimp called prawns)

Steps:

  • DIRECTIONS:.
  • Preheat oven to 350 degrees.
  • Mix first 9 ingredients to make the Imperial Stuffing.
  • Peel the shrimp leaving the tails on, and then split the prawns in half lengthwise, not cutting all the way through, and butterfly them to lay flat.
  • Spray a baking dish with a non-stick cooking spray.
  • Place the prawns into a baking dish, and spoon the stuffing on top of each prawn.
  • Bake for 15 to 20 minutes, or until the prawns are pink and the stuffing is lightly browned.
