SALMON PATTIES {SALMON CROQUETTES}

These easy salmon patties (or "salmon croquettes") are a great way to use up leftover salmon -- or even canned salmon!

1 tablespoon olive oil
¼ cup finely diced onion
1 lb. grilled, poached, or baked salmon fillets, broken into large chunks
½ cup saltine cracker crumbs ((about 15 crackers before crushing))
1 large egg, lightly beaten
1 tablespoon mayonnaise
Zest and juice from ½ of a lemon
2 tablespoons chopped fresh parsley ((or sub with 2 teaspoons dried parsley flakes))
Kosher salt and ground black pepper
1 cup plain dry breadcrumbs
3 tablespoons butter, for sautéing
3 tablespoons canola oil or vegetable oil, for sautéing
Optional garnish: chopped fresh parsley; lemon wedges

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. When the oil shimmers, add the onion and cook, stirring occasionally, until soft and translucent, about 3-4 minutes.
  • Transfer the onion to a large mixing bowl. Add the salmon, saltine cracker crumbs, egg, mayonnaise, lemon zest and juice, parsley, and salt and pepper to taste. Stir gently to mix. Try not to break up the chunks of salmon too much; do not over-mix.
  • Form the salmon mixture into 8 patties, about ½ inch thick.
  • Place the breadcrumbs in a shallow bowl; season with salt and pepper to taste.
  • Dredge the salmon patties in the breadcrumbs, coating both sides and pressing gently to adhere.
  • Refrigerate the patties for at least 1 hour, or until firm.
  • In the same skillet used to cook the onions, heat butter and oil in a large skillet over medium-high heat until sizzling hot (use enough butter and oil to generously cover the bottom of the skillet).
  • Place the croquettes in the hot oil, cooking in batches if necessary to avoid overcrowding the pan. Cook until golden brown, about 4-5 minutes per side. Flip the patties only once; reduce the heat to medium if they start browning too quickly.
  • Drain on paper towels. Serve with seafood sauce, tartar sauce, or ketchup. Garnish with fresh parsley and lemon wedges, if desired.

1/2 cup breadcrumbs
3 tablespoons mayonnaise
2 eggs, beaten

2 tablespoons olive oil

Steps:

  • Drain and flake salmon in medium bowl.
  • Combine all ingredients except olive oil.
  • Shape into 6 patties. (It will be moist.).
  • In a large skillet heat olive oil and cook over medium heat until both sides are brown and heated through.

1 egg
¼ cup chopped onion
½ cup seasoned dry bread crumbs
1 tablespoon olive oil

Steps:

  • Drain and reserve liquid from salmon. Mix egg, onion, bread crumbs and salmon together.
  • Make into patties. If mixture is too dry to form into patties, add reserved liquid from salmon.
  • In a frying pan, heat olive oil. Place patties in pan. Brown on each side, turning gently. Drain on paper towels and serve.

4 slices onion
4 slices tomato
8 slices cucumber
4 slices cooked bacon
2 tsp. parsley
2 tsp. chives
2 hamburger buns, buttered
salt
pepper
canola oil
mustard

Steps:

  • Mix the salmon, chives, parsley, salt and pepper together. Mold into two patties. Add the canola oil to the pan to heat. When the oil is heated, place the patties into the oil and cook for 15 minutes on each side. When the patties are golden brown, remove from pan and place on hot buttered buns. Add onion, tomatoes, bacon, cucumber, and your favorite mustard. Enjoy!

1 (7 3/4 ounce) can salmon
2 teaspoons grated onions
1 egg, lightly beaten
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 dill (optional)
8 soda crackers, crushed
flour
oil (for frying)

Steps:

  • Mash salmon, bones and all, in a bowl with a fork.
  • Add onion, egg, salt, pepper and dill (if used).
  • Blend well.
  • Crush soda crackers and add to the salmon, mixing well.
  • Add just enough crumbs to make a mixture that will hold its shape.
  • Make patties and dip each in flour or more cracker crumbs to coat both sides.
  • Heat oil in a heavy skillet.
  • Add patties and fry slowly until golden on both sides.
  • Drain excess oil on paper towel and serve.

1 cup mashed potatoes (with added milk and butter)
1 can (6 ounces) salmon, drained, bones and skin removed
1/4 cup chopped onion
3 saltine crackers, crushed
1 teaspoon minced fresh parsley
1/8 teaspoon salt
1/8 teaspoon pepper
1 egg, separated
2 tablespoons vegetable oil
Lemon wedges, optional

Steps:
