Pan Seared Scallops with Sweet Yellow Corn and Black Truffle Succotash with Red Pepper Nage image

Number Of Ingredients 24

Corn:
2 cups milk
2 tablespoons kosher salt
2 tablespoons granulated sugar
8 ounces unsalted butter
3 ears corn on the cob
Red Pepper Nage:
1 tablespoon olive oil
3 shallots, peeled
2 cloves garlic
2 whole red peppers, halved and seeded
2 tomatoes, halved
1 sprig fresh thyme
Salt and ground white pepper
1/2 cup heavy cream
Scallops and Succotash:
2 teaspoons grapeseed oil
2 scallops (u-10) or comparable size
1 teaspoon minced garlic
1 teaspoon minced shallots
1 ounce black truffles, optional
1 tablespoon fresh minced chives
1 tablespoon diced tomatoes
2 tablespoons unsalted butter

Steps:

  • For the corn: Add the milk and 2 cups water to a 3- to 4-quart pot and bring to a simmer. Add the butter, salt and sugar and cook until the butter has melted. Add the corn, cover, and cook until tender, about 45 minutes.
  • Remove the corn from the pot and cool down enough to handle, then cut off the kernels with a knife. (Hint: it will be easier to remove the kernels from the cob if still warm.)
  • For the red pepper nage: Meanwhile, preheat the oven to 400 degrees F.
  • Mix together the oil, shallots, garlic, peppers, tomatoes, thyme and salt and white pepper to taste, making sure to coat all the ingredients evenly with the oil.
  • Lay all the vegetables on a baking sheet and roast for about 20 minutes. Transfer to a blender and mix until smooth.
  • Heat the heavy cream in a saucepot and bring to a boil. Pour the cream into the vegetable mixture and blend until incorporated. Strain the nage through a fine-mesh strainer.
  • For the scallops: Heat 1 teaspoon of the grapeseed oil in a saute pan until hot (about 350 degrees F), and then sear the scallops until golden brown on both sides.
  • Heat the remaining oil in a separate saute pan. Add the garlic and shallots and cook until soft, and then add the corn and cook for a few minutes. Turn down the heat and add the truffles, if using, the chives and tomatoes. Just before serving, add the butter and cook until melted and incorporated. Season with salt and white pepper.
  • To plate this dish, we use an 8-inch round white plate. First, place a small amount of the corn succotash in the center of the dish. Place the browned scallops directly onto the corn. Finally, spoon a few ounces of the red pepper nage around the corn and serve.

3 strips bacon
1 red onion, diced
2 carrots, diced
2 celery stalks, diced, tops roughly chopped and reserved
2 summer squash (patty pan or zucchini), diced
small handful of fresh basil, roughly chopped
8 chives or 3 green onions, chopped or sliced
12 cherry tomatoes, left whole, or 1 large tomato, chopped into large chunks
1/2 tsp coriander
1/2 tsp cumin
1/2 c (or a touch more) beer or dry white wine
4 medium or 3 large ears corn, cut from the cob
4 T butter
8-10 large scallops (about 1lb), muscle removed** and seasoned with salt and pepper on both sides

Steps:

  • Make Hash: In a large skillet, brown bacon over medium heat. Remove bacon and fat, reserving 1-2 tsps of fat in the pan. Crumble bacon and set aside. Saute onions, carrots and celery over medium-high heat in the bacon fat, allowing vegetables to brown in places, about 5 minutes. Add squash, coriander and cumin, and continue to cook for 3 more minutes. Deglaze pan with 1/2 cup wine or beer, scraping browned bits off the pan as you go. Use more liquid if you need to, but you want all the liquid to evaporate from the pan (a soupy consistency is not what you want here). Add tomatoes and cook for 1 minute, then turn off heat and add herbs and celery tops. Add 1/2 tsp each salt and pepper, and immediately remove vegetables mixture from pan, reserving in a bowl. Using the same pan, brown 3 tablespoons of butter over medium heat. Once butter is brown, add corn, season with salt and pepper and stir, cooking, for 3 minutes (for white corn) or 5 minutes (for yellow corn). Remove pan from heat, then add in the vegetable mixture. Set pan aside, or into a warm (200 degree) oven. Make Scallops: Heat a large non-stick skillet over medium. Working quickly, add 1 tablespoon butter to pan, allow to brown slightly, then add seasoned scallops to the pan. Allow scallops to sear and brown (that means you have to leave them alone and not move them) for 2-3 minutes. Once brown, turn scallops and brown the other side, again for 2-3 minutes (or longer if necessary). Don't worry: Cooking for this amount of time (or slightly longer) will not overcook your scallops; in fact, they'll be warm but rare in their middles. Spoon corn mixture into shallow bowls and top with scallops. We drink a nice Chardonnay with this, but a good hoppy beer would work too.

1/2 cup orange juice

Hot oil, for frying

Steps:

  • In a very hot pan with olive oil, sear the scallops; season with salt and pepper. Saute spinach with garlic and white wine to scald the spinach.
  • In the center of the plate, place 2 flapjacks. Place orange honey butter on top of flapjacks. Then top with spinach. Place scallops on the plate, in between the flapjacks. Place pancetta and chive in-between the scallops. Garnish with sweet potato curls.
  • Combine all ingredients. On a griddle using pan spray, drop 1 ounce of batter. Cook until golden brown.;
  • Reduce wine, orange juice, garlic, shallots, and thyme to sec (dry). Add heavy cream; reduce by half. Whisk in butter. Slowly finish with honey.;
  • Using a vegetable peeler, cut curls from sweet potato. Deep fry until crisp.

2 ears fresh white corn, kernels cut from cob
1 cup chicken broth
2 tablespoons butter
salt to taste
1 pinch cayenne pepper
12 large sea scallops, rinsed and patted dry
1 red Fresno pepper, thinly sliced
2 teaspoons canola oil
1 teaspoon kosher salt
½ teaspoon smoked paprika, or to taste
1 splash water
1 tablespoon butter, or more to taste
½ lemon, juiced
¼ cup radish sprouts, or to taste

Steps:

  • Stir corn kernels, chicken broth, 2 tablespoons butter, cayenne pepper, and salt together in a saucepan; bring to a simmer, reduce heat to medium-low, and cook until corn is tender, about 5 minutes.
  • Pour corn mixture into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth. Pour pureed corn mixture through a fine-mesh strainer into a saucepan. Season with salt to taste.

2 cups cream-style corn
1/2 cup butter, plus
2 tablespoons butter
2 teaspoons salt
2 cups heavy cream
2 cups dixie lily grits
1 cup shredded cheese, of your choice

1 lb large scallop
salt and pepper

Steps:

  • Toss the chicken stock, creamed corn, stick of butter and 2 tsps sea salt into a heavy-bottomed stock pot and bring to a fast boil. Add the Grits and give it all a good stir. Reduce heat and cook as per package directions until about 3/4 way done.
  • Slowly add 1/2 the heavy cream (1 cup)into the grits, stir until well blended with grits, then stir in the cheese. Mix thoroughly so that the cream and cheese are fully incorporated into the grits. Turn off the heat and put a heavy lid on the pot.
  • Make a cream sauce by dashing two TBSP butter into a large nonstick saute' pan on medium heat. When butter melts, add garlic and saute' until fragrant. Add remaining cream (1 cup)and reduce mixture by half. Season with salt and pepper, and reserve sauce in a seperate container.
  • Wipe out the saute' pan, and turn the heat all the way up. Drizzle in a little Olive Oil. Season the Scallops with salt and pepper. Sear Scallops about 2 minutes a side ( maybe a few seconds more). DO NOT OVERCOOK. At the end of the second minute, turn fire down a bit, add cream sauce to scallops and reheat. Ladle scallops and sauce evenly on top of the grits.

Coarse sea salt and freshly ground black pepper
2 tablespoons unsalted butter
2 tablespoons olive oil
1 shallot, minced

1/4 cup dry white wine
1 1/2 cups corn kernels (from about 3 ears)
1/4 cup heavy cream
4 fresh basil leaves, thinly sliced
2 tablespoons chopped fresh chives

Steps:

  • Remove the muscle from each scallop and discard. Season both sides with salt and pepper.
  • Heat 1 tablespoon butter with 1 tablespoon olive oil in a large nonstick skillet over medium-high heat until hot. Place half of the scallops in the pan and cook, turning once, until golden brown, 1 to 1 1/2 minutes per side. Transfer scallops to a plate and loosely cover to keep warm. Repeat process with remaining butter, olive oil, and scallops.
