Searing the fish fillets in a pan cooks the thin fillets quickly without a lingering fishy smell most home cooks fear. I pair the fish with a simple lemon butter sauce made in the pan.

2 (6 to 8 ounce) boneless, skin on white fish fillets (tilapia, halibut, cod, bass)
Kosher salt, (as needed)
Freshly ground black pepper, (as needed)
2 tablespoons canola oil, (or another neutral oil like grape-seed)
3 tablespoons unsalted butter
½ medium lemon
2 teaspoons nonpareils capers
2 tablespoons chopped mixed herbs, (like chives, tarragon, parsley)
Lemon wedges, (for serving)

Steps:

  • Pat the fish dry with a paper towel and discard. Season all over with salt and pepper.
  • Heat a large skillet over medium high heat, add the oil and heat through.
  • Place the filets skin side of the fish down in the pan, pressing down gently for a few seconds so the skin doesn't curl. Sear, until the skin is golden and easily releases from the pan, about 3 minutes.
  • Carefully flip the fish using a spatula and add the butter, lemon juice and capers to the pan. Continue to cook, tilting the pan so the butter pools in the side of the pan. Use a spoon to splash the butter over the top to baste the fish until it's cooked through, about an additional minute.
  • Garnish with the herbs and serve the fish with lemon wedges on the side.

Number Of Ingredients 12

2 tablespoons plus 1 teaspoon extra-virgin olive oil
4 shallots, sliced
4 garlic cloves, sliced
8 plum tomatoes, seeded and diced
Kosher salt and freshly ground black pepper
Sugar to taste
1/4 cup chopped fresh basil leaves
2 tablespoons chopped fresh thyme leaves
4 small kohlrabi, leaves removed
4 (6- to 8-ounce) boneless and skinless whitefish fillets
2 tablespoons grapeseed oil
2 ears white or yellow corn, kernels cut from the cob (about 1 cup), cobs reserved

Steps:

  • Prepare the compote:
  • In a medium saucepan, heat 2 tablespoons of the olive oil over medium heat and add the shallots and garlic. Cover and cook the mixture until it is soft. Add the tomatoes, reduce the heat, and continue cooking uncovered until thickened. Season to taste with salt, pepper, and sugar. Stir in the chopped basil and thyme. The compote will be thick, like tomato jam.
  • Bring a medium saucepan of salted water to a boil. Meanwhile, with a vegetable peeler, peel off the skin of the kohlrabi and discard; cut each kohlrabi into 1/2-inch wedges. Cook in the boiling water until the tip of a knife pierces through easily, about 10 minutes. Drain and set aside.
  • Preheat the oven to 350°F.
  • Pat the whitefish fillets dry and season generously with salt and pepper. In a large ovenproof skillet, heat the grapeseed oil over medium-high until almost smoking. Add the fish and cook on both sides until nicely browned, about 4 minutes per side. If necessary to finish cooking the fish, transfer the skillet to the oven for about 5 minutes, or until the fish is slightly firm to the touch.
  • While the fish is cooking, heat the remaining teaspoon of olive oil in a sauté pan and cook the kohlrabi and corn to heat through, seasoning to taste with salt and pepper.
  • Place the vegetables in the middle of warmed serving plates. Transfer the whitefish from the oven to the center of each plate, spoon a little compote over each fillet, and serve.

Cumin-Seared Halibut with Sweet Corn Sauce image

Northern Pacific halibut is my fish of choice to have in the warmer months. It is a flat fish and deserves special care when handling. Since it can be a little more expensive, I save it for special occasions. The sauce relies on corn, which is very important to Native American culture and recipes. Use blue corn if you can get ahold of it. Otherwise, sweet corn is a great go-to.

2 tablespoons canola oil
1/2 small onion, chopped
1 clove garlic, minced
2 fresh thyme sprigs
1 bay leaf
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1/2 cup white wine, optional
5 ears corn, kernels cut off, 2 cobs reserved
4 cups vegetable stock
8 teaspoons canola oil
1/2 teaspoon ground cumin
Zest of 1 lemon plus 1 teaspoon fresh lemon juice
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Four 6- to 8-ounce halibut fillets
2 teaspoons unsalted butter

Steps:

  • For the sweet corn sauce: In a medium heavy-bottomed saucepan, add the canola oil, onions, garlic, thyme, bay leaf, salt and pepper. Sweat on medium heat, stirring occasionally, until the onions are softened, 7 to 10 minutes. Add the wine, if using, and cook until it evaporates, about 5 minutes.
  • Add the corn kernels, reserved cobs and stock. Bring to a boil over medium-high heat, then reduce the heat to medium and cook for about 10 minutes.
  • For the halibut: Meanwhile, in a large plastic bag, combine 5 teaspoons of the canola oil, the cumin, lemon zest and juice, salt and pepper with the halibut fillets and allow to marinate in the refrigerator for 30 minutes.
  • Discard the corn cobs, thyme and bay leaf from the sauce. Carefully pour the mixture into a blender and puree on high speed for 4 to 5 minutes. The natural starches will activate and thicken the sauce. Pour the sauce through a fine-mesh sieve into a clean saucepan. Simmer over low heat until it reduces by half, about 15 minutes.
  • To finish the halibut, in a medium sauté pan, heat the butter and remaining 3 teaspoons canola oil over high heat until the butter melts and the oil is hot (a little smoke indicates it's ready). Place the halibut fillets in the pan skin-side up and cook until a nice crust forms on the bottoms, about 4 minutes. Carefully flip the fillets and cook 3 minutes more. Lower the heat and continue to cook until the internal temperature registers 140 degrees F, about 4 minutes. Let rest, covered with foil, for a few minutes. Serve topped with the sweet corn sauce.

Stuffed Kohlrabi with Tomatoes and Feta Cheese image

This kohlrabi dish can serve as a vegetarian main course or as a side dish. It's best to use medium-sized kohlrabi.

2 cups vegetable broth
½ medium lemon, juiced
4 kohlrabi, peeled, kohlrabi leaves reserved
4 medium Roma tomatoes
1 teaspoon butter
2 medium shallots, minced
1 (4 ounce) package crumbled feta cheese
1 bunch green onions, thinly sliced
½ bunch Italian parsley leaves, finely chopped
1 clove garlic, minced
1 pinch freshly ground black pepper, or to taste

Steps:

  • Combine vegetable broth and lemon juice in a large pot, bring to a boil, and cook kohlrabi until softened, about 20 minutes. Drain broth and reserve. Allow kohlrabi to cool lightly and scoop out the insides. Set aside kohlrabi shell and kohlrabi flesh.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Cut a small "x" into each tomato and boil for 1 minute. Drain tomatoes, remove tomato skins and seeds, and finely chop.
  • Melt butter in a skillet over medium-low heat and cook shallots until soft and translucent, about 5 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C). Grease a baking dish.
  • Finely chop kohlrabi leaves. Combine sauteed shallots, kohlrabi leaves, 1/2 of the tomatoes, feta cheese, green onions, parsley, garlic, and pepper in a bowl; mix to combine. Fill kohlrabi shells with the mixture.
  • Set stuffed kohlrabi close together in the prepared baking dish and sprinkle kohlrabi flesh and remaining tomatoes in between. Pour 1 cup of kohlrabi cooking water into the dish.
  • Bake in the preheated oven until kohlrabi is soft and filling is lightly browned and cooked through, 20 to 30 minutes.
