SEASONED OVEN-ROASTED CHICKEN



Seasoned Oven-Roasted Chicken image

Olive oil and dried herbs are all that's needed for this fuss-free, yet flavorful home-cooked roasted chicken breast. While it's baking, pull together a side of sautéed vegetables or potatoes to round out the meal. WIth just six ingredients, it's easy to make during your mid-week dinner slump, and versatile enough to make again and again.

4 boneless skinless chicken breasts (about 2 lb)
1 tablespoon olive or vegetable oil
1 1/2 teaspoons parsley flakes
1 teaspoon seasoned salt
1 teaspoon garlic pepper blend
1 teaspoon dried basil leaves

Steps:

  • Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Brush both sides of chicken with oil. Sprinkle both sides with remaining ingredients. Place in baking dish.
  • Bake 25 to 35 minutes or until juice of chicken is clear when center of thickest part is cut (at least 165°F).

This Chicken Seasoning makes absolutely the BEST, most flavorful roasted or rotisserie chicken! The best part is that this chicken seasoning is easy to make and you probably already have all the ingredients right in your pantry!

1/2 teaspoon onion powder
1/2 teaspoon garlic powder

1/2 teaspoon salt (Adjust to taste. This is on the low side.)

Steps:

  • Mix all ingredients together in a small bowl.Store excess in an airtight container.

4 lbs roasting chickens, giblets removed
1/2 cup butter, softened
1/4 teaspoon fresh ground pepper
1 teaspoon coarse salt
2 large garlic cloves, minced
1 teaspoon poultry seasoning
1 medium onion, quartered
1 tablespoon lemon zest
1 tablespoon fresh lemon juice
1 lemon (remaining part after zesting and juicing)

Steps:

  • Preheat roaster to 450 degrees.
  • In small bowl, combine butter, salt, pepper, poultry seasoning, lemon juice, lemon zest.
  • Rub mixture between skin and meat and over the skin of the chicken.
  • Stuff chicken with quartered lemon and onion.
  • Put chicken in roaster and cook at 450 for 15 minutes to crisp the skin.
  • After 15 minutes, reduce heat to 350 degrees and cook for an additional hour (or until chicken temperature is 170 degrees when tested with meat thermometer in the breast).
  • Extra tip - Save the drippings to make a sauce or chicken stock.

1 ½ teaspoons dried rosemary
½ teaspoon cayenne pepper

Steps:

  • Stir celery flakes, salt, paprika, garlic powder, onion powder, thyme, sage, black pepper, rosemary, and cayenne pepper together in a bowl. Transfer spice mixture to a spice grinder or food processor and blend until smooth.

I don't bother to baste the bird, though some like to for the first hour. The pan juices always caramelize at the bottom, and the chicken will turn golden brown...fall-off-the-bone good!

4 teaspoons salt
2 teaspoons paprika
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon white pepper
½ teaspoon cayenne pepper
½ teaspoon black pepper
½ teaspoon garlic powder
2 onions, quartered
2 (4 pound) whole chickens

Steps:

  • In a small bowl, mix together salt, paprika, onion powder, thyme, white pepper, black pepper, cayenne pepper, and garlic powder. Remove and discard giblets from chicken. Rinse chicken cavity, and pat dry with paper towel. Rub each chicken inside and out with spice mixture. Place 1 onion into the cavity of each chicken. Place chickens in a resealable bag or double wrap with plastic wrap. Refrigerate overnight, or at least 4 to 6 hours.
  • Preheat oven to 250 degrees F (120 degrees C).
  • Place chickens in a roasting pan. Bake uncovered for 5 hours, to a minimum internal temperature of 180 degrees F (85 degrees C). Let the chickens stand for 10 minutes before carving.
