1 cup Gold Medal™ white whole wheat flour
1 cup old-fashioned oats
3/4 teaspoon baking soda
1/4 cup ground flaxseed or flaxseed meal
1/4 cup chia seed
1/4 cup roasted salted hulled pumpkin seeds (pepitas)
1/4 cup roasted salted sunflower nuts
1 cup dried cranberries
1/2 cup almonds, chopped
1/4 cup honey
1/4 cup almond butter
1/2 cup butter, softened
3/4 cup packed brown sugar
1 teaspoon vanilla
1 egg

Steps:

  • Heat oven to 350°F.
  • In medium bowl, stir together flour, oats, baking soda, flaxseed, chia seed, pepitas, sunflower nuts, cranberries and almonds; set aside.
  • In large bowl, mix honey, butters, brown sugar and vanilla with electric mixer on medium speed until creamy. Beat in egg until well blended. Stir in flour mixture thoroughly. Drop dough by heaping 2 tablespoonfuls 2 inches apart on ungreased cookie sheets.
  • Bake 10 to 13 minutes or until golden brown. Cool 5 minutes; remove from cookie sheets to cooling rack.

1 1/2 sticks unsalted butter
1 cup brown sugar
3/4 cup granulated sugar
1 teaspoon vanilla extract
2 eggs
2 heaping cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 heaping cup quick oats
1/2 cup shredded coconut
1/4 cup flax seeds
1/4 cup sunflower seeds
3/4 cup dried apricots, chopped
1/2 cup dried cherries
1/2 cup chopped pecans
1/4 cup golden raisins

Steps:

  • Preheat the oven to 375 degrees F.
  • In the bowl of an electric mixer, cream the butter together with the brown sugar and granulated sugar. Add the vanilla and eggs. Next, add the flour, baking soda and salt. Add the oats, coconut, flax seeds and sunflower seeds. Fold in the apricots, cherries, pecans and raisins.
  • Drop the batter onto cookie sheets with a cookie scoop or two spoons. Bake for 12 minutes, then cool on a rack.
  • Eat and feel guiltless, because there's no chocolate in this cookie!

1/4 cup unsalted almond butter
1 teaspoon vanilla
1 egg
3/4 cup Gold Medal™ white whole wheat flour or whole wheat flour
2 tablespoons ground flax seed
1/2 teaspoon baking soda
1/2 teaspoon fine sea salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1 1/4 cups old-fashioned oats
3/4 cup dried cranberries, dried cherries or dried blueberries
3/4 cup chopped toasted almonds

Steps:

  • Heat oven to 350°F. In large bowl, beat brown sugar, butter, almond butter, vanilla and egg with electric mixer on medium speed until creamy. Stir in flour, flax seed, baking soda, sea salt, cinnamon and ginger until well blended. Stir in oats, cranberries and almonds.
  • On ungreased cookie sheets, drop dough by level measuring tablespoonfuls about 2 inches apart.
  • Bake 7 to 10 minutes or until edges are light golden brown. Cool 2 minutes; remove from cookie sheets to cooling rack. Cool completely. Store tightly covered.

4 sticks unsalted butter, room temperature
3 cups packed dark-brown sugar
4 large eggs
1 tablespoon plus 1 teaspoon pure vanilla extract
4 cups rolled oats
1 cup raw almonds, coarsely chopped
1/2 cup raw pumpkin seeds
1/2 cup raw sunflower seeds
1/2 cup shredded unsweetened dried coconut
1/2 cup raisins or currants
1/2 cup finely chopped dried mango
1/4 cup finely chopped dried papaya
1 cup banana chips

Steps:

  • Preheat oven to 350 degrees. Whisk together flours, baking soda, and salt in a large bowl.
  • Beat butter in a large bowl with a mixer until light and fluffy. Add sugar; beat until well combined. Add eggs, 1 at a time, beating well after each. Add vanilla; beat until just combined.
  • Slowly add flour mixture, and beat until well combined. Add oats, almonds, seeds, coconut, raisins or currants, mango, and papaya, and beat to combine.
  • Form dough into 8 cookies (using 1 cup each) or about 14 smaller cookies (using 1/2 cup each), and place on 2 parchment-lined baking sheets. Top with banana chips. Bake until golden and firm, 30 minutes for large cookies and 20-25 minutes for smaller cookies. Let cool completely on baking sheets, about 30 minutes.
