CANDIED YAMS OR SWEET POTATOES

Steps:

• Boil yams or sweet potatoes until just tender.
• Peel and cut length-wise into 1/2-inch slices.
• In medium skillet or electric frying pan, combine sugar, butter, cream and salt; cook over medium heat, stirring constantly, until smooth and bubbly.
• Add yams; turn gently until glazed and thoroughly heated.

Steps:

• Preheat the oven to 350 degrees.
• Drain the yams.
• In a shallow baking dish mash one can of yams and leave the other can of yams in pieces (This is more of a personal preferance, you can leave both cans in pieces if you wish).
• Pour orange juice over the yams.
• Sprinkle on brown sugar and cinnamon.
• Dot with butter or margarine.
• Top the yams with marshmallows.
• Bake 30 minutes or until marshmallows have melted.
• Be sure to watch the yams the last 5 minutes because the marshmellows can burn.

GRANDMA'S CANDIED YAMS

Steps:

• Preheat the oven to 375 degrees F.
• Cut off the ends of the yams, then peel and cut the yams into 1/2-inch-thick circles. Add to a 2-quart baking dish. Set aside.
• In a medium pot, melt the butter over medium heat. Add the brown sugar and stir until thoroughly blended. Stir in the pineapple juice, cinnamon, vanilla and cloves. Taste the mixture to make sure it's sweet to your liking and pour over the yams. Spread the strawberry preserves on top of the yams.
• Cover the dish with aluminum foil and bake until the yams are semi-tender, about 40 minutes. Remove the foil and bake until the yams are caramelized, 20 to 25 minutes more.
• Plate and serve hot. And don't forget to pour the sauce from the baking dish on top!

Steps:

• Boil the potatoes or yams until tender; drain. Peel and cut in half lengthwise. Put the butter and sugar in a heavy skillet and heat, stirring occasionally, until melted. Add the potatoes or yams and turn until lightly browned. Add 1/4 cup water, cover, and simmer over low heat for about 10-15 minutes. After the butter and sugar have melted, put the potatoes in a buttered baking dish, pour the butter-sugar mixture on top, cover, and bake in a preheated 350°F (180°C) oven for 45 minutes to 1 hour.

Steps:

• In a large pot over medium heat, place potatoes in water. Top with butter and sugar, cover and bring to a boil. Reduce heat to low and simmer, without stirring, until mixture is thick and syrupy, 40 minutes. Mixture will thicken slightly as it cools. Remove from heat and serve warm.
