Homemade Apple Bread with a lovely cinnamon swirl is the perfect fall breakfast, snack, or dessert! This easy apple bread recipe is moist, sweet and simply loaded with apples and the flavors of fall. Make enough to share with friends and family or keep the whole cozy loaf for yourself! This easy apple bread recipe is a must make this season!

½ cup brown sugar
1 ½ teaspoons ground cinnamon
2 large eggs (room temperature)
½ cup granulated sugar
½ cup butter (melted)
1 teaspoon vanilla extract
1 ½ cups all purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
2 cups chopped apples (Pink Lady, Gala, Honeycrisp - any apples that are good for baking, peeled and chopped, about 2 apples)

Steps:

  • Preheat oven to 350°F. Grease and flour an 8 x 5 inch loaf pan or line with parchment paper. Set aside.
  • In a small bowl, whisk together brown sugar and cinnamon and set aside.
  • Whisk eggs and granulated sugar together in a large mixing bowl.
  • Whisk in melted butter and vanilla extract until thoroughly combined.
  • Stir in all purpose flour, baking powder, baking soda and salt just until combined. The batter will be very thick. Fold in chopped apples.
  • Add half of the batter to the prepared loaf pan. Sprinkle about three quarters of the brown sugar mixture on top of the batter.
  • Spread the remaining batter carefully on top of the brown sugar mixture. Sprinkle remaining brown sugar mixture on top and use a knife or spoon to gently swirl it into the top layer.
  • Bake for 35 to 45 minutes or until lightly golden on top and an inserted toothpick comes out clean or with just a few moist crumbs. (If bread is browning too quickly, tent with foil for the last 10 to 15 minutes.)
  • Let bread cool completely before slicing and serving.

175g softened butter
50g golden caster sugar
50g icing sugar
2 egg yolks
2 tsp vanilla extract
300g plain flour
2 tbsp demerara sugar , plus a few extra pinches
2 tsp cinnamon

Steps:

  • Mix the butter, caster and icing sugar, egg yolks and vanilla with a wooden spoon until creamy, then mix in the flour in 2 batches. Roll out to a 20 x 30cm rectangle on a sheet of baking parchment. Mix the demerara sugar with the cinnamon, sprinkle all over the dough, then gently roll over a rolling pin again to press the sugar in a little. Roll up from one of the 20cm sides using the parchment to help, wrap in the parchment and chill for 30 mins, or up to a day.
  • Heat oven to 200C/180C fan/gas 6. Thinly slice into about 20 biscuits, scatter with a pinch more sugar, then bake on baking sheets for 10-12 mins until golden.

1/4 cup sugar
1/4 teaspoon salt
2/3 cup milk (very warm 120-130 F)
2 tablespoons butter or 2 tablespoons margarine, melted
2 tablespoons corn oil
1 egg
3 tablespoons butter or 3 tablespoons margarine, softened
3/4 cup brown sugar
1 1/2 teaspoons ground cinnamon
1 cup powdered sugar
1 -2 tablespoon milk
1 tablespoon butter or 1 tablespoon margarine, melted
1/2 teaspoon pure vanilla extract

Steps:

  • Spray a 8x8-inch baking dish with cooking spray.
  • Mixture batter ingredients right in prepared pan.
  • Let rest for 10 minutes.
  • Combine cinnamon mixture in a small bowl by mixing with fork.
  • Top batter evenly with cinnamon mixture, poke topping thoroughly into batter with fingers or the end of a spoon.
  • Place in a COLD oven; set temperature to 350°F
  • Bake 25-30 minutes, until lightly browned and firm in center.
  • Cool 10 minutes.
  • Combine icing ingredients and drizzle over warm cake.

1 tube (12.4 ounces) refrigerated cinnamon rolls with icing
FILLING:
5 cups thinly sliced peeled tart apples (about 5 medium)
2 tablespoons lemon juice
3/4 cup sugar
1/4 cup all-purpose flour
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
TOPPING:
1/3 cup graham cracker crumbs
1/3 cup packed brown sugar
3 tablespoons all-purpose flour
3 tablespoons cold butter

Steps:

  • Preheat oven to 400°. Refrigerate icing from cinnamon rolls. Separate cinnamon rolls; press onto bottom and up the sides of an ungreased 9-in. deep-dish pie plate. Bake 7-9 minutes or until set. Cool on a wire rack. Reduce oven setting to 350°., For filling, in a large bowl, toss apples with lemon juice. In a small bowl, mix sugar, flour, cinnamon and nutmeg. Add to apple mixture; toss to coat. Pour filling into prepared crust., For topping, in a small bowl, mix cracker crumbs, brown sugar and flour; cut in butter until crumbly. Sprinkle over filling. Bake 40-45 minutes or until filling is bubbly and topping is golden brown. Cover top loosely with foil during the last 15 minutes if needed to prevent overbrowning. Remove foil. cinnamon rolls, store bought (Entenmann's)
1 medium apple, peeled, cored and sliced (about 1-1/2 cups)
1/2 cup golden raisin
2 tablespoons sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
5 eggs
1 1/3 cups whole milk or 1 1/3 cups half-and-half
1 teaspoon vanilla
maple syrup

Steps:

  • Butter or spray a 3 quart baking dish.
  • Slice cinnamon buns into 1 inch thick slices and place in dish.
  • Combine sugar and spices and sprinkle over apples to coat.
  • Tuck apple slices and raisins in between bun slices.
  • In a separate bowl beat together eggs, milk and vanilla and pour over bun mixture.
  • Let set in refrigerator overnight or minimum 2 hours.
  • Bake at 350° for 40 minutes or until golden.
  • Serve warm with maple syrup.
  • May also be served cold with sweetened whipped cream and your favorite berries.
