These quesadillas are very simple to make but they are full of flavor. They are ideal for a snack or lunch. Add a soup and you will have a meatless meal.

8 regular size corn tortillas
10 oz queso fresco
Pico de gallo salsa (learn how to make it with our recipe. *)

Steps:

  • I recommend buying fresh corn tortillas; the fresher the better.
  • Prepare the pico de gallo and place it in the fridge until ready to serve.
  • Cut the queso fresco in long slices. Set aside.
  • Heat the tortillas on a comal, a pan or griddle, until warm and soft. Transfer them to a tortilla warmer (tortillero)
  • I don't recommend trying to melt the queso fresco on the tortilla while warming the tortilla. First, it doesn't melt the way you would expect, and second, it will just make your quesadilla soggy.
  • Take one of the tortillas add a slice (or two) of queso fresco and pico de gallo to taste. That's it, enjoy!

A delicious, cheesy pre-dinner treat. I like to make quesadillas without butter, but you could put butter in the frying pan before placing the tortilla in. Serve with sour cream and salsa.

10 (6 inch) corn tortillas
2 cups shredded mozzarella cheese
1 (2 ounce) can sliced black olives
2 avocados - peeled, pitted and sliced
2 teaspoons hot pepper sauce

Steps:

  • Heat a large frying pan or griddle over a medium heat. Place one tortilla flat on the frying pan. After 1 minute flip the tortilla over. Sprinkle a little more than 1/4 cup cheese on the tortilla, followed by some olives, avocado, and hot pepper sauce. Place another tortilla on top to make a sandwich. Cover the quesadilla with a lid. After one minute, flip the quesadilla. When the cheese has melted on the inside, remove the quesadilla. Repeat with remaining ingredients.
  • Cut the quesadillas into triangles and serve.

  • Heat a medium skillet over medium heat. Warm your tortilla for about 30 seconds, flipping halfway. Flip once more, then sprinkle one-half of the tortilla with about half of the cheese. Cover the cheese evenly with the remaining fillings: beans, bell pepper, onion and jalapeño (if using).
  • Sprinkle the remaining cheese over the fillings, and fold over the empty side of the tortilla to enclose the fillings. Quickly brush the top of the quesadilla with a light coating of oil, then carefully flip it with a spatula.
  • Let the quesadilla cook until golden and crispy on the bottom, about 1 to 2 minutes, reducing the heat if necessary to prevent burning the tortilla. Brush the top with a light coating of oil, then flip it and cook until the second side is golden and crispy.
  • Immediately remove the skillet from the heat and transfer the quesadilla to a cutting board. Let it cool for a minute to give the cheese time to set, then use a chef’s knife to slice it into 3 pieces. Serve promptly, with any sauces or garnishes that you’d like.
