HEALTHIER HONEY-SESAME CHICKEN
This is a 'healthier' version of honey-sesame chicken. It is baked instead of fried and the chicken is not battered, making it healthier. All the flavors are here and the only thing sacrificed are the calories! Serve over rice with additional sauce on the side.

Steps:
- Mix honey, ketchup, olive oil, sesame seeds, soy sauce, lemon juice, Sriracha sauce, salt, pepper, garlic powder, and ginger in a bowl until well combined. Add chicken pieces and toss to coat. Cover and refrigerate for 2 to 6 hours.
- Preheat the oven to 350 degrees F (175 degrees C).
- Transfer chicken and sauce into an oven-proof dish.
- Bake in the preheated oven for 8 minutes. Remove from oven and turn chicken pieces over. Bake until chicken is no longer pink in the center and the juices run clear, 5 to 8 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

GREEK HONEY SESAME BARS (PASTELI RECIPE)
The ancient Greek version of a power bar is "Pasteli"! Greek honey sesame bars is a snack made from honey and sesame seeds in only 10 minutes!

- To prepare this Greek honey sesame bars (Pasteli) recipe start by toasting the sesame seeds. Place a frying pan over high heat and add the sesame seeds. Toast them for 2-3 minutes until golden (not too brown). Remove the sesame seeds from the pan and set aside. Continue with the rest of the recipe quickly, so that the sesame seeds remain hot. Alternatively you can spread the sesame seeds in a pan and toast them in the oven at 180-190C (375F).
- In the same pan add the honey and bring to a boil, until it starts to foam. Remove the foam using a spatula, turn down the heat to medium and let it simmer until its temperature has reached 125C/260F. If you don't have a thermometer, take a bowl of cold water and drip in a teaspoon of the honey syrup. Let it cool down for a few seconds then shape it into a small ball using your fingers. Take it out of the water and drop it on your work surface. If it sounds like it is solid, the honey syrup is done.
- Its now time to add the remaining ingredients for your pasteli. Add a pinch of salt and the toasted sesame seeds and stir for about 10 minutes over medium heat, using a wooden spatula. The mixture should thicken considerably and stick to the spatula.
- Remove the pan from the heat, add the lemon zest and stir.
- Line a round pan (22cm/ 8.5 inch. diameter) with parchment paper and pour in the mixture. Be careful not to touch it, as it is very hot. Spread the mixture very well using a spoon.
- Let the pasteli cool down for about 20 minutes and them cut into portions. If you let it cool completely then it would be harder to cut into pieces.
SESAME AND HONEY HEALTHY SNACK
Steps:
- In a pan, cook the sesame seeds over low to medium heat. Stir continuously for 5 minutes until lightly golden brown. Remove from heat and stir some more until seeds cool down.
- In a small pot add honey, orange or lemon peels, cinnamon, cloves and simmer for 5 minutes. Remove peels and cloves and mix well seeds with honey.
- Line a lightly greased parchment paper, pour the mixture and place another greased parchment paper on it (like a sesame sandwich). Place the mixture in silicone molds (providing cavities are not too big) or on a pan or on a table using a rolling pin to spread it out.
- Use your imagination and give the desired thickness and shape.
- Let it cool for about half an hour and carefully remove the top sheet. Use a knife to cut in shapes you prefer. Store them in airtight food container preferably with parchment paper between them.
SESAME HONEY CANDY

- In a saute pan, toast the seeds over medium heat for 2 minutes until golden (the pumpkins will pop). Combine the water, honey, and sugar in a saucepan. Over high heat, bring the syrup to 240 degrees F. Add the seeds and bring the syrup to hard crack (250 degrees F). Spritz a cookie sheet with non-stick spray and pour the syrup onto it. After a few minutes, score the candy into 2 by 1/2-inch bars. Let harden, and then cut into bars.

This is a lovely recipe if you are just looking for something sweet and light. I used to buy these in shops then realized they would be so much nicer hot and homemade, so I devised this recipe and have been making it ever since.

- Combine ingredients in a large heavy-based saucepan and bring to the boil, stirring occasionally, over low heat.
- Cook, stirring occasionally, until mixture reaches 320F on a candy thermometer.
- Line a cookie sheet with parchment paper. Pour mixture into sheet and smooth top.
- Allow to cool slightly, using a sharp knife, cut into pieces.
- Let cool completely, and then break into pieces. Will keep in an airtight container for up to two weeks.
GREEK PASTELI (SESAME SEED & HONEY SNACKS)
While in Greece I saw this "candy" that I loved from childhood...little bites of sesame and honey that were soft because they did not have any sugar. Inspired, I set out to see if I could buy them in the US but found instead that they are incredibly easy to make! So here is a recipe adapted from one found on www.globalgourmet.com. Each bar is 30 grams, which is a typical food bar you would get in the health food store.

- In a heavy pan, bring the honey and water to "firm ball stage" (130 degrees C/250 degrees F).
- Take off the heat and stir in the sesame seeds and lemon zest.
- On a flat marble surface (or metal trays moistened with water, or a layer of parchment) spread the mixture evenly with a spatula or knife (or try a rolling pin) to 1 cm (1/4 inch) thickness.
- Before it cools, cut into squares (try a pizza cutter).
- When it is completely cool, wrap the squares in waxed paper and store in a covered container.
