4 thin-cut sirloin steaks or minute steaks, trimmed of any fat and each cut into 3 long strips
100ml sachet stir-fry sauce (we used oyster and spring onion)
1 tbsp sesame seeds
1 tsp white wine vinegar
1 tsp light soy sauce
1 cucumber , cut into small chunks
3 spring onions , sliced
½ red chilli , deseeded and finely chopped
handful coriander leaves, chopped

Steps:

  • Heat grill to high. In a bowl, mix the steak strips with the stir-fry sauce and sesame seeds. Thread onto 12 skewers, then grill for 12 mins, turning halfway through, until golden and sticky.
  • For the salad, mix the vinegar and soy together, then toss with the cucumber, spring onions, chilli and coriander. Serve with the beef skewers and some boiled basmati rice.

Thai Beef Skewers With Pickled Cucumbers image

Number Of Ingredients 20

1/4 cup sugar
1/2 teaspoon kosher salt
1/4 cup rice vinegar (unseasoned)
1/2 Asian cucumber, peeled, halved lengthwise, seeded and thinly sliced
2 teaspoons fish sauce
1 small hot red or green chile, thinly sliced
1/2 cup thinly sliced red onion
1/4 cup chopped cilantro leaves
1/2 cup soy sauce
4 teaspoons rice vinegar (unseasoned)
2 teaspoons toasted sesame oil
2 teaspoons mirin
3 cloves garlic, finely chopped
2 teaspoons minced peeled fresh ginger
1 tablespoon packed light brown sugar
4 teaspoons sesame seeds, toasted
2 teaspoons red pepper flakes or Thai chili paste
Juice of 1 lime
1 pound sirloin, rib-eye or New York strip steak, cut into 1-inch cubes
2 scallions (white and light green parts), cut into 1-inch lengths, plus additional, sliced for garnish

Steps:

  • Pickle the cucumbers: In a small saucepan, heat the sugar, salt, vinegar and 1/4 cup water over medium-high heat until the sugar and salt dissolve; remove from the heat. Put the cucumber, chile and red onion in a medium bowl and pour the hot brine over them. Let cool, then add the cilantro. Chill.
  • Make the beef skewers: In a medium bowl, mix the soy sauce, vinegar, sesame oil, fish sauce, mirin, garlic, ginger, brown sugar, sesame seeds and red pepper flakes. Pour half of the mixture into a serving bowl, add the lime juice and reserve as a dipping sauce. Put the beef cubes in a zip-top bag and pour in the remaining marinade. Seal the bag and massage the marinade into the meat. Put in a bowl and refrigerate 1 to 2 hours. Preheat a grill to high. Drain the meat, discarding the marinade. Thread the cubes onto skewers (1 to 4 per skewer), separating each cube with a piece of scallion. Grill directly over the coals, turning once, until nicely charred, about 3 minutes per side. Sprinkle with sliced scallions. Serve warm or cold with the reserved marinade for dipping and the pickled cucumber and chiles on the side. A chilled sesame salad of spiralized cucumber. It reminds me of the seaweed salad you get at Japanese restaurants, but just cucumbers.

2 English cucumbers, peeled
1 teaspoon salt, divided, or to taste
2 tablespoons garlic-seasoned rice wine vinegar
1 tablespoon toasted sesame oil
1 tablespoon soy sauce
1 teaspoon white sugar
¼ teaspoon toasted sesame seeds

Steps:

  • Cut cucumbers into long, thin noodle shapes using a spiralizer set to the thinnest setting.
  • Place cucumber noodles in a fine-mesh strainer set over a bowl. Sprinkle with 1/2 teaspoon salt and toss until combined. Let cucumber stand until moisture is drawn out, about 30 minutes.
  • Whisk rice vinegar, sesame oil, soy sauce, and sugar together in a bowl until sugar is dissolved. Add cucumber; toss gently until coated. Season with remaining 1/2 teaspoon salt; sprinkle with sesame seeds.

1 pound beef top sirloin steak, cut into 1-inch cubes
6 tablespoons sesame ginger salad dressing, divided
1 tablespoon reduced-sodium soy sauce
2 cups chopped fresh pineapple
2 medium apples, chopped
1 tablespoon sweet chili sauce
1 tablespoon lime juice
1/4 teaspoon pepper
1 tablespoon sesame seeds, toasted

Steps:

  • In a bowl, toss beef with 3 tablespoons dressing and soy sauce; let stand 10 minutes. Meanwhile, in a large bowl, combine pineapple, apples, chili sauce, lime juice and pepper; toss to combine., Thread beef onto four metal or soaked wooden skewers; discard remaining marinade. Grill kabobs, covered, over medium heat or broil 4 in. from heat until desired doneness, 7-9 minutes, turning occasionally; brush generously with remaining dressing during the last 3 minutes. Sprinkle with sesame seeds. Serve with pineapple mixture.
