SESAME MUSHROOMS

Number Of Ingredients 11

8 oz. medium-sized portobello mushrooms, rinsed
2 green onions, cut diagonally into 1″ pieces
1 carrot, peeled and sliced thinly
Handful of basil leaves
1 teaspoon garlic, minced
1 teaspoon ginger, minced
1 teaspoon thick soy sauce
1 tablespoon thin soy sauce
1 tablespoon sesame oil
1/2 teaspoon sugar
3 tablespoons water

Steps:

  • Remove the stalks from the mushrooms and cut into pieces
  • Over medium heat, saute garlic, ginger and the white parts of the green onion until fragrant
  • Add in mushrooms and carrots and stir to combine
  • Pour in the soy sauces, apple juice, sugar and water and mix thoroughly. Cover and simmer for 5 minutes or until the mushrooms have cooked down
  • Remove from heat and stir in the remaining green onions and basil leaves, mixing well
  • Dish and serve hot

6 medium carrots, peeled, cut into 1/8-inch rounds
2 tablespoons olive oil
1 garlic clove, peeled and smashed
2 cups fresh mushrooms, sliced
1 teaspoon sugar
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Place carrots in a medium saucepan. Add water to cover by one inch. Bring to a boil. Partially cover and boil until tender crisp, about 5-8 minutes. Drain.
  • Heat olive oil in a large skillet over medium low heat. Add garlic and mushrooms and saute, stirring occasionally, until mushroom liquid evaporates, about 6 minutes.
  • Add carrots, sugar, thyme, salt and pepper, cover and cook over low heat 15 minutes. Uncover, remove garlic; discard. Increase heat to medium-high; cook, stirring often, until carrots and mushrooms are very lightly browned, 2-5 minutes.

This simple way to cook carrots is one of the most popular vegetable dishes we make at work. The smell and taste is great with the addition of the sesame oil.

1/2 kg fresh, peeled carrot
2 tablespoons oil
2 teaspoons sesame oil
2 tablespoons sesame seeds, tossed in a dry pan over a medium heat until golden
salt and pepper

Steps:

  • Cut the carrots in 3 pieces, then each piece in half.
  • I would cut the chunky end into 4 if it was very big.
  • Place in a baking tray and roll in the 2 tablespoons of oil.
  • Cover and bake for 40 minutes in a moderate oven.
  • Remove the cover and sprinkle over the sesame oil and season with salt and pepper to taste.
  • Return uncovered to the oven for 10 minutes.
  • Serve sprinkled with the toasted sesame seeds.

6 ounces shiitake mushroom caps, sliced
4 cups thinly sliced napa cabbage
1 tablespoon reduced-sodium soy sauce
¼ teaspoon freshly ground black pepper
¼ cup cilantro leaves
2 tablespoons toasted sesame seeds

Steps:

  • Heat a large skillet over high heat. Add 2 tablespoons sesame oil; swirl to coat. Saute mushrooms until browned, about 4 minutes. Add cabbage; saute for 2 minutes.
  • Remove skillet from heat. Mix in 1 1/2 teaspoon sesame oil, soy sauce, and black pepper until well combined. Top with cilantro and sesame seeds.
