SESAME PRAWN TOAST

- To make the prawn fillings, add the prawns, egg white, spring onions, garlic, and seasoning ingredients in the food processor. Blend it into a smooth paste.
- Place the sesame seeds in the plate and set aside.
- Cut the bread crust out and cut in the middle into triangle shapes.
- Place about 1 tablespoon size fillings on the bread, spread the fillings evenly on the bread by using a butter knife.
- Dip the filling side down gently in the sesame seeds until the fillings are coated with sesame seeds evenly. Repeat process to remaining bread slices and set aside. Gently toss the excess sesame seeds out before frying.
- Heat the oil into medium heat about 320°F, test with a wooden chopstick or a piece of bread, once the oil bubbles start sizzling steadily it's ready to fry.
- Fry the filling side down until crispy and turn sides and fry until golden brown.
- Remove from pan and place it on the paper towel to soak the excess oil.
- Garnish with chopped spring onions. Serve immediately with spicy mayo, sweet chilli sauce or any of your favourite dipping sauce.

- Put the prawns, haddock, one egg, salt and pepper to taste in the processor bowl.
- Fit the metal chopping blade and process until smooth.
- Spread evenly over the toast.
- Beat the other egg in a bowl.
- Brush it over the fish mixture.
- Press it down onto the sesame seeds until evenly coated.
- Deep fry each slice separately in hot oil for 2 minutes.
- Drain excess oil on a clean paper napkin.
- Cut into 8-12 fingers.
- Serve warm, garnished with watercress.
- Enjoy!

- Mix the prawns with the ginger, spring onion, egg white, cornflour, sesame oil, soy sauce and salt.
- Spread one side of each slice of bread with the prawn mixture, and dip the filling side into sesame seeds.
- Deep fry the toast in hot oil, over a moderate heat - filling side up until golden brown - about 3-5 minutes.
- Drain on absorbent paper and serve straight away.

Steps:
- To make the paste, put in your food processor: the prawns, salt, egg, ginger, soy, onions and sesame oil, process into a paste.
- Cut the bread into rectangles, approx 3 per slice.
- Spread the prawn paste on the bread, with a slight mound in the center.
- Put the sesame seeds in a small bowl and press the paste side into the seeds.
- Heat the oil to a medium heat and deep-fry the toasts paste side down for 2 to 3 minutes then turn them over and fry until they are golden brown.
- Remove from the oil, drain on paper kitchen towel.
- Repeat process until they are all done.
- NOTE: Use bread that is not fresh, if it is, dry it out in your oven, it will absorb less oil You can also make the paste by hand chopping everything very finely.
