To toast The Minimalist column upon its exit from the pages of the Dining section, a Champagne cocktail - developed with help from the bartender Jim Meehan. It is appropriately celebratory and bittersweet.

Number Of Ingredients 5

3/4 teaspoon bitters
1/2 ounce lemon juice
1/4 ounce maple syrup
6 ounces Champagne
Twist of lemon

Steps:

  • Stir the bitters, juice and syrup in a flute. When combined, add the Champagne. Squeeze the lemon twist over the top, wipe the rim with it and discard.

1 sugar cube
4 dashes Angostura bitters
1 wide strip lemon peel
1 teaspoon orange liqueur, such as Grand Marnier
6 ounces Champagne, chilled

Steps:

  • Add a sugar cube to a chilled coupe glass. Shake the bitters onto the sugar cube. Rub the rim of the glass with the lemon peel and drop the peel into the glass. Drizzle the orange liqueur into the glass, then top off with the Champagne. Serve immediately.

This is a new recipe posted in place of the earlier one, which I discovered to be a duplicate of the "Mock Champagne" recipe posted by Sharon123! Hey, that's two recipes for the price of one :-)

1 (14 ounce) can pear halves in natural juice (in syrup or fruit juice)
4 tablespoons elderflower cordial
1 1/2 tablespoons lemon juice
28 fluid ounces tonic water, chilled
6 cocktail cherries

Steps:

  • Empty the pear halves and syrup into a blender, add the elderflower cordial and lemon juice then 'whizz' ingredients together to a smooth puree.
  • Pour 2 fluid ounces puree into the bottom of each glass.
  • Top glasses up with tonic water (watch it fizz!)and give the contents of each glass a quick stir; serve with a cocktail cherry.
  • NOTE: you can make the puree in advance and leave it in the fridge until you're ready to use it; the longer you leave the puree, the more the flavours will develop.

Classic Champagne Cocktail image

This minimalist drink of sugar that's been soaked in bitters and topped with Champagne was first mentioned in Jerry Thomas's book 1862 "How to Mix Drinks." It's both festive and resplendent with bubbles as written, but there's also room to customize: Split the amount of Angostura bitters with a lesser-used bitter (grapefruit, celery, orange, persimmon, for example) from your bar. Trade granulated or Demerara sugar for the sugar cube: The drink's flavor will remain the same, lacking only in the drama of the cube bubbling to its demise at the base of the glass. Finally, use Champagne if you're on a champagne budget, and dry sparkling wine if you're not.
