Belgian Buttermilk Waffles with Glazed Bananas image

For waffles
2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
2 cups well-shaken buttermilk
3/4 stick (6 tablespoons) unsalted butter, melted and cooled to room temperature
2 large eggs
Vegetable oil for waffle iron
For topping
2 tablespoons unsalted butter
2 firm-ripe large bananas, cut diagonally into 1/3-inch-thick slices
1 1/4 cups pure maple syrup
Accompaniment: sour cream or whipped cream
Special Equipment
a waffle iron (preferably Belgian-style)

Steps:

  • Make waffles:
  • Put oven rack in middle position and put a large metal cooling rack directly on it. Preheat oven to 250°F and preheat waffle iron.
  • Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
  • Whisk together buttermilk, melted butter, and eggs in another bowl, then whisk into flour mixture until just combined.
  • Brush hot waffle iron lightly with vegetable oil and pour a slightly rounded 1/2 cup of batter into each waffle mold (see cooks' note, below). Cook waffles according to manufacturer's instructions until golden and cooked through, about 3 minutes. Transfer as cooked to rack in oven to keep warm, keeping waffles in 1 layer to stay crisp. Make more waffles in same manner.
  • Make topping:
  • While last batch is cooking, heat butter in a 12-inch heavy skillet over moderately high heat until foam subsides, then add banana slices in 1 layer and cook until golden, about 1 minute per side. Remove from heat and add syrup to skillet.
  • Spoon bananas over waffles, then drizzle with warm syrup before serving.

½ cup unsalted Gay Lea Butter, softened
2 tablespoons icing sugar
Pinch salt
½ cup chopped, crispy bacon
2 tablespoons finely chopped chives
1 cup all-purpose flour
2 tablespoons rice flour
1 tablespoon pure maple syrup

Steps:

  • Grease an 8-inch (20 cm) square baking pan; reserve. In a large bowl, beat the butter with the sugar and salt using an electric mixer, for 2 minutes or until light and fluffy.
  • Add the bacon and chives; mix until evenly distributed. Combine the all purpose flour with the rice flour. Add the flour mixture to the butter mixture; stir until just combined.
  • Press the dough, in an even layer, into the prepared pan. Cover and chill for 30 minutes or until firm.
  • Preheat oven to 325 degrees F (160 degrees C).
  • Lightly score the dough with a knife into 16 squares (do not cut all the way through the dough). Brush the top with maple syrup.
  • Bake for 25 to 35 minutes or until set and lightly golden. Immediately cut through the scored wedges. Transfer pan to a wire rack and cool completely.

4 large waffles
Sweetened whipped cream for serving

Steps:

  • In a large sauté pan over medium heat, melt the butter with the maple syrup. Stir in the cinnamon, rum and vanilla and simmer for 1 minute. Add the bananas to the pan and cook for 2 to 3 minutes. Using a slotted spoon, transfer the bananas to a serving plate. Pour the maple syrup mixture into a sauceboat. Serve immediately with waffles and whipped cream. Serves 4

This recipe comes from Williams-Sonoma. It is delicious for brunch or scale the servings down to serve 8 for dessert. My addition to this recipe is using green tipped bananas. They are firmer and will hold their shape when cooked. I also tossed in the pecans and have listed them as optional.

3/4 cup maple syrup
3/4 teaspoon ground cinnamon
1/4 cup dark rum (optional) or 1/4 teaspoon rum extract
1 teaspoon vanilla extract
4 bananas, green tipped, peeled and cut diagnoally into 1/2 inch slices
1/4 cup pecans, coarse chopped (optional)
4 large waffles, warmed
sweetened whipped cream

Steps:

  • In a large saute pan over medium heat, melt the butter with the maple syrup; stir in cinnamon, rum if using and vanilla; simmer 1 minute.
  • Add the sliced bananas to the pan and cook for 2 to 3 minutes.
  • With a slotted spoon, remove the bananas from the syrup mixture and place in a serving dish.
  • Sprinkle the pecans over the syrup and allow to warm and glaze.
  • Pour the syrup and pecan mixture over the bananas and stir gently.
  • Serve immediately over warmed waffles and top with whipped cream.
