Steps:
- Put the couscous in a bowl and pour over the hot stock. Cover with cling film, leave to stand and swell for 10 mins.
- Make the salsa by mixing the chickpeas with the tomatoes, half the oil and vinegar, the finely chopped chillies and some of the chopped herbs. Season and arrange between 4 serving plates.
- Heat a griddle pan or frying pan. Fry the halloumi for 2-3 mins each side, until golden and lightly charred. Fluff up the couscous with a fork and mix in the rest of the oil, vinegar and herbs with some seasoning. Pile onto the plates next to the salsa and top with the warm halloumi. Garnish with the sliced chillies.

CHICKPEA SALSA
Serve as a condiment with lamb or chicken. To shorten preparation time, substitute canned chickpeas for dried, and start at step 2.

Steps:
- Pick over dried chickpeas. Rinse and soak overnight in cold water with 1 teaspoon salt. Drain and rinse. Place chickpeas in a medium saucepan, and cover by several inches with fresh water. Bring to a boil, and skim off any foam. Turn heat down to medium, and simmer until tender, 35 to 45 minutes. Ten minutes before chickpeas are done, add 3/4 teaspoon salt. Remove from heat; let cool in cooking liquid for about 1 hour.
- If using cumin seeds, toast in a dry pan over medium-low heat until they release their aroma, about 2 minutes. Let cool and grind to a powder in a spice grinder. Set aside.
- Chop together 1/2 teaspoon salt, garlic, and 1/2 teaspoon olive oil to form a paste. Add chiles; chop to combine. Transfer to a small bowl, and add remaining oil.
- Drain soaked chickpeas. (If using canned chickpeas, rinse.) Combine with 1 teaspoon chile mixture or to taste. Add olives, cumin, lemon juice, and salt and pepper to taste. Refrigerate until ready to serve. The salsa can be made a day ahead (return to room temperature before serving).
- Just before serving, coarsely chop arugula, and toss with salsa.
CHICK PEA (GARBANZO) SALSA
Came up with this one myself after staring into the pantry for awhile awaiting inspiration to find me. Hubby and I both liked the result, so thought I would share. It's a quick, easy combination that can be used as a zesty side salad, a chunky "salsa" or a smooth hummus-like dip or spread. Depending on your chosen texture serve on the side, with tortilla chips and/or raw veggies. Parsley or cilantro or powdered cumin to taste can be added for variation. The addition of some green color is especially nice if preparing the side salad option. ENJOY!!

CRISPY CHICKPEA SALAD
"In my opinion, a crouton can make or break a salad - and this one has thick, fluffy pitas tossed in butter!" says Molly.

Steps:
- Roast the chickpeas: Drain, rinse and pat dry the chickpeas; let sit 30 minutes on a paper towel-lined plate to let them dry out. Preheat the oven to 350˚ F. Dump the chickpeas onto a rimmed baking sheet. Toss with the olive oil and season with salt and pepper. Roast, tossing occasionally, until crisp and dry, about 50 minutes. Let cool.
- While the chickpeas cool, bake the croutons: Toss the pita pieces with the butter and a pinch of salt on another baking sheet. Bake until golden brown, about 10 minutes. Let cool. (You can store the chickpeas and the croutons in separate containers at room temperature for up to 4 days.)
- Make the dressing: Mix the tahini, lemon juice and 3 to 4 tablespoons water in a bowl until creamy and pourable. Season with salt and pepper. (You can put the dressing in a cute jar and store it in the fridge for up to 5 days. If it gets too thick to pour, mix in a little water before using.)
- Make the salad: Combine the spinach, tomatoes, cucumber, onion, radishes and mint in a large bowl. Add the feta, za'atar, dressing and chickpeas and gently toss. Top with the croutons.

- Chickpea Nuggets. Delicious but also kid-friendly plant-based foods are sometimes a little challenging to find. So Meghan developed these vegan nuggets for her little ones, using smart ideas like grinding up oats for more protein and using the chickpea water as an egg substitute and binding agent.
- Tomato Chickpea Salad. On the surface, this salad is all about convenience — chickpeas from a can, one-bowl meal, simple preparation — but convenience will only take you so far if the flavor isn’t there.
- Mediterranean Chickpea and Feta Wraps. Chickpeas, feta, spinach, and tomatoes — already you know you can’t go wrong. Now add garlic, dill, yogurt, and roasted red peppers, and wrap it all up in a whole-wheat tortilla and there’s no turning back.
- Green Pea and Chickpea Falafel. Bright-green and intensely flavored, this springtime-inspired falafel can be made year-round with frozen peas. Even better, they’re shallow-fried, so they’re much lighter than (the usually deep-fried) classic falafel.
- Chickpea Blondies. Chickpeas don’t make their way into baking very often, but they should. They’re your chance to bring whole foods and a little more substance to your snacking.
- Cheetos-Style Chickpeas. These vegan (yes, vegan) chickpea snacks are first baked until they are crisp and crunchy and then rolled in a mixture of nutritional yeast, salt, and garlic powder to give them that cheesy tang.
- Spinach & Sweet Potato Chickpea Crustless Quiche. The miracle of vegan quiche is made possible here because of the hardworking chickpea, which contributes to the richness.
- Garlicky Chickpea and Fennel Salad with Baked Goat Cheese. This is from our Sunday Night Salad series — recipes that you can make ahead and eat all week.
- Alice Waters’ Chickpea and Broccoli Rabe Soup. This soup is classic Alice Waters, run through our Food Editor Hali’s skilled adaptation. In this version, canned chickpeas are just fine, and bacon will do when pancetta isn’t on hand.
- Chopped Kale, Farro & Chickpea Salad. This six-ingredient salad is made with a simple lemon-miso vinaigrette, tender kale, chewy farro, and nutty chickpeas.
