HOMEMADE HARD PRETZELS

Steps:
- Combine the warm water, sugar and kosher salt in the bowl of a stand mixer and sprinkle the yeast on top. Allow to sit for 5 minutes or until the mixture begins to foam. Add the flour and, using the dough hook attachment, mix on low speed until well combined. Change to medium speed and knead until the dough is smooth and pulls away from the sides of the bowl, approximately 4 to 5 minutes. Remove the dough from the bowl, clean the bowl and then oil it well with vegetable oil. Return the dough to the bowl, cover with plastic wrap and sit in a warm place for approximately 50 to 55 minutes or until the dough has doubled in size.
- Preheat the oven to 350 degrees F.
- Line 4 half sheet pans with parchment paper and lightly brush with the vegetable oil. Set aside.
- Place enough water into a large roasting pan to come 1/3 of the way up the sides of the pan and bring to a boil over high heat.
- In the meantime, turn the dough out onto a slightly oiled work surface and divide into 1-ounce portions, approximately 36 pieces. Roll out each piece of dough into a 14 to15-inch long stick and place on the sheet pans, 1/4-inch apart. Cover the dough not being used with a slightly damp towel to help prevent drying out.
- Gently place 6 to 8 pretzels at a time into the water for 30 seconds. Remove the pretzels back to the sheet pan, brush with the beaten egg yolk and water mixture and sprinkle with the pretzel salt. Bake until golden brown in color and hard, approximately 55 to 60 minutes. Transfer to a cooling rack for at least 20 minutes before serving. Store in an airtight container for up to 1 week.
SHARON'S BAR PRETZELS
Sharon makes some great pretzels and this is another one that is addicting. Be aware though these will leave you with what we call Danny DeVito breath!

- Put pretzels in a brown paper bag, pour oil on and shake. Mix garlic and ranch mix together and pour on pretzels. Shake and transfer into a new bag (you might have to change bags a few times) Let these sit overnight as they will seem greasy that night but will seem less so the next day.

Change to medium speed and knead until the dough is smooth and pulls away from the side of the bowl, approximately 4 to 5 minutes. Remove the dough from the bowl, clean the bowl and then oil it well with vegetable oil. Return the dough to the bowl, cover with plastic wrap and sit in a warm place for approximately 50 to 55 minutes or until the dough has doubled in size.
- Preheat the oven to 450 degrees F. Line 2 half-sheet pans with parchment paper and lightly brush with the vegetable oil. Set aside.
- Bring the 10 cups of water and the baking soda to a rolling boil in an 8-quart saucepan or roasting pan.
- In the meantime, turn the dough out onto a slightly oiled work surface and divide into 8 equal pieces. Roll out each piece of dough into a 24-inch rope. Make a U-shape with the rope, holding the ends of the rope, cross them over each other and press onto the bottom of the U in order to form the shape of a pretzel. Place onto the parchment-lined half sheet pan.
- Place the pretzels into the boiling water, 1 by 1, for 30 seconds. Remove them from the water using a large flat spatula. Return to the half sheet pan, brush the top of each pretzel with the beaten egg yolk and water mixture and sprinkle with the pretzel salt. Bake until dark golden brown in color, approximately 12 to 14 minutes. Transfer to a cooling rack for at least 5 minutes before serving.

- Preheat the oven to 250 degrees F (120 degrees C).
- Melt the butter in a saucepan over medium heat. Stir in the Worcestershire sauce, garlic powder, onion soup mix and hot pepper sauce. Coat pretzels in the mixture by dipping or brushing and place on a baking sheet.
- Bake for 1 hour in the preheated oven, stirring every 15 minutes. Cool, then serve or store in an airtight container.

PRETZEL-SHORTBREAD BARS
Bring on pretzel power by making this variation from Martha Stewart Oct. 2011. "Half cookie, half pretzel hybrid. Broken pretzels are worked into the dough. Finely ground crumbs go into the flour mixture, and bigger pieces stud the inside and top layer of the bars." Posting for safe keeping. Think it would be nice on appetizer assortment. Reviewers say dough is bit crumbly, so added vanilla and more butter. Easy to bake too long so need to be careful and if you use a 9 X 9 inch pan the reviews there say the bars are too THIN. They specify twisted salted miniature pretzels, but aren't all pretzels salted? And think the shape would not matter except for appearances. This shortbread can be stored at room temperature for up to 1 week. Time includes 1 hour cooling time. Another use for leftover pretzels.

- Preheat oven to 325 degrees.
- Line an 8 X 8 inch pan with parchment paper and spray with cooking spray.
- Pulse 1 3/4 cups pretzels in a food processor until POWDERY, transfer 1/2 cup to a bowl, DISCARD any remaining pretzel powder.
- Stir in flour and baking powder, set aside for Step 7.
- Transfer REMAINING 1 1/2 cups of pretzels to food processor and pulse a few times until coarsely CHOPPED.
- Beat butter, sugar, and vanilla with a mixer on medium speed until pale and fluffy, about 5 minutes.
- Reduce speed to low, and beat in egg yolk, then pretzel-flour mixture, until combined.
- Using spoon mix in 1/2 cup of the coarsely chopped pretzels.
- Press dough evenly into pan.
- Top dough with 1/4 cup of the coarsely chopped pretzels, pressing slightly; discard any remaining pretzels.
- Bake shortbread until pale brown and firm in the center -about 25 minutes, maybe 30.
- Transfer pan to a wire rack, and let shortbread cool for 1 hour.
- Remove shortbread from pan, and cut into 1/2 inch rectangles using a serrated knife.

- Preheat oven to 350 degrees F (175 degrees C). Line an 11x17-inch baking sheet with aluminum foil or parchment paper.
- Spread pretzels onto the prepared baking sheet.
- Combine butter and brown sugar in a saucepan over medium-low heat; cook and stir until sugar is dissolved and mixture is thickened, 5 to 8 minutes. Pour mixture over pretzels.
- Bake in the preheated oven for 5 minutes. Sprinkle chocolate chips over pretzel mixture. Bake for 1 minute more. Stir mixture to evenly spread chocolate over pretzels. Lightly sprinkle salt over pretzels. Cool until set, 2 to 3 hours. Break into pieces.

- Line a 13x9-in. baking pan with foil, letting ends extend up sides. Set aside 1-1/2 cups pretzels for topping. Pulse remaining pretzels in a food processor until fine crumbs form. In a large bowl, mix butter, peanut butter, confectioners' sugar and pretzel crumbs., Press into prepared pan. In a microwave, melt chocolate chips and shortening; stir until smooth. - Preheat the oven to 350°. Line a 9-by-13-inch baking pan with parchment paper or foil, allowing 2 inches of overhang on the 2 long sides.
- In a medium saucepan, combine the condensed milk with 2 cups of the chocolate chips and stir over moderately low heat until the chocolate is melted. Remove from the heat. Whisk in 1 1/2 teaspoons of the vanilla and let cool completely.
- In a medium bowl, whisk together the flour, baking soda and salt. In a large bowl, using a handheld mixer, beat the 2 sticks of butter with the brown sugar and the 3/4 cup of granulated sugar at medium speed until fluffy, about 1 minute. Beat in the eggs and the remaining 2 teaspoons of vanilla. At low speed, beat in the flour mixture until just incorporated. Stir in the remaining 2 cups of chocolate chips. Press the cookie dough in the prepared pan in an even layer.
- In a bowl, toss the pretzels with the melted butter and the remaining 1 tablespoon of granulated sugar. Spread the melted chocolate mixture over the cookie dough and sprinkle evenly with the pretzels. Bake for about 45 minutes, until set and the pretzel topping is golden brown. Transfer the pan to a rack and let the bars cool completely.
