1/2 pound ground beef
1 cup onion, chopped
1 medium Yukon gold potato, peeled and diced
1/2 cup carrot, diced
1/4 cup frozen peas
1/4 cup frozen corn
2 tablespoons Worcestershire sauce
1/2 cup canned chicken gravy
1 egg
1 tablespoon water
2 boxes (4 rolls) pre-made pie crust
8 slices American cheese, quartered

Steps:

  • Preheat the oven to 375°F. Line two (or three) baking sheets with parchment paper. Cook the ground beef and onions in a medium-size sauté pan over medium heat until the onions are translucent and the meat is no longer pink, about 5-8 minutes. Drain and set aside. While the beef is cooking, add the potatoes and carrots to a small saucepot. Cover the veggies with slightly salted water and boil until they're cooked through, but not mushy, about 3-5 minutes. Drain and set aside. Add the beef, onions, carrots, potatoes, peas, corn, Worcestershire sauce, and gravy into a medium-size mixing bowl. Fold together and set aside. Whisk the egg and water together in a small bowl; set aside. On half of the rounds, place a generous tablespoon of filling in the center, leaving a 1/2'' border. Stack two quarters of the American cheese on top of the filling. Then, using a pastry brush, apply the egg wash on the border of the crust. Place an empty round on top and seal the edges together with a fork. Place the pies on the papered baking sheets and brush the tops with egg wash. Bake for 25 minutes, or until golden brown.

1 1/2 pounds russet potatoes
1/4 cup half-and-half
2 ounces unsalted butter
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 egg yolk
2 tablespoons canola oil
1 cup chopped onion
2 carrots, peeled and diced small
2 cloves garlic, minced
1 1/2 pounds ground lamb
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 tablespoons all-purpose flour
2 teaspoons tomato paste
1 cup chicken broth
1 teaspoon Worcestershire sauce
2 teaspoons freshly chopped rosemary leaves
1 teaspoon freshly chopped thyme leaves
1/2 cup fresh or frozen corn kernels
1/2 cup fresh or frozen English peas

Steps:

  • Peel the potatoes and cut into 1/2-inch dice. Place in a medium saucepan and cover with cold water. Set over high heat, cover and bring to a boil. Once boiling, uncover, decrease the heat to maintain a simmer and cook until tender and easily crushed with tongs, approximately 10 to 15 minutes. Place the half-and-half and butter into a microwave-safe container and heat in the microwave until warmed through, about 35 seconds. Drain the potatoes in a colander and then return to the saucepan. Mash the potatoes and then add the half and half, butter, salt and pepper and continue to mash until smooth. Stir in the yolk until well combined.
  • Preheat the oven to 400 degrees F.
  • While the potatoes are cooking, prepare the filling. Place the canola oil into a 12-inch saute pan and set over medium high heat. Once the oil shimmers, add the onion and carrots and saute just until they begin to take on color, approximately 3 to 4 minutes. Add the garlic and stir to combine. Add the lamb, salt and pepper and cook until browned and cooked through, approximately 3 minutes. Sprinkle the meat with the flour and toss to coat, continuing to cook for another minute. Add the tomato paste, chicken broth, Worcestershire, rosemary, thyme, and stir to combine. Bring to a boil, reduce the heat to low, cover and simmer slowly 10 to 12 minutes or until the sauce is thickened slightly.
  • Add the corn and peas to the lamb mixture and spread evenly into an 11 by 7-inch glass baking dish. Top with the mashed potatoes, starting around the edges to create a seal to prevent the mixture from bubbling up and smooth with a rubber spatula. Place on a parchment lined half sheet pan on the middle rack of the oven and bake for 25 minutes or just until the potatoes begin to brown. Remove to a cooling rack for at least 15 minutes before serving.

Steps:

  • Boil potatoes in salted water until tender, about 12 minutes. Drain potatoes and pour them into a bowl. Combine sour cream, egg yolk and cream. Add the cream mixture into potatoes and mash until potatoes are almost smooth.
  • While potatoes boil, preheat a large skillet over medium high heat. Add oil to hot pan with beef or lamb. Season meat with salt and pepper. Brown and crumble meat for 3 or 4 minutes. If you are using lamb and the pan is fatty, spoon away some of the drippings. Add chopped carrot and onion to the meat. Cook veggies with meat 5 minutes, stirring frequently. In a second small skillet over medium heat cook butter and flour together 2 minutes. Whisk in broth and Worcestershire sauce. Thicken gravy 1 minute. Add gravy to meat and vegetables. Stir in peas.
  • Preheat broiler to high. Fill a small flameproof rectangular casserole with meat and vegetable mixture. Spoon potatoes over meat evenly. Top potatoes with paprika and broil 6 to 8 inches from the heat until potatoes are evenly browned. Top casserole dish with chopped parsley and serve.

I found this on a blog on the internet site I can do that. This is a recipe that author "Oggi" adapted from Gordon Ramsay's show "Kitchen Nightmares" where he tried to save the restaurant. This recipe ended up being the signature dish of the restaurant.

2 lbs extra lean ground beef (or lamb)
2 tablespoons olive oil
1 large onion, grated
1 large carrot, grated
3 garlic cloves, finely minced
2 tablespoons Worcestershire sauce
1 1/2 tablespoons tomato paste
1 teaspoon thyme
1 teaspoon chopped rosemary
1 cup red wine
1 1/2 lbs yukon gold potatoes, peeled and quartered
water
1/2 teaspoon salt
1/4 cup heavy cream or 1/4 cup half-and-half cream
2 tablespoons butter
salt
1 cup chicken broth
2 teaspoons salt (to taste)
3 tablespoons parmesan cheese (grated-for mashed potato topping)

Steps:

  • Prepare the mashed potatoes:.
  • Place potatoes in a pot, add enough water to cover, add salt, cook for 15 minutes or until tender when pierced with a fork. Drain potatoes and mash (I prefer using a ricer). Warm the cream and butter then add to the mashed potatoes. Season with salt, then beat with a wooden spoon or hand beater for 1 minute until fluffy. Do not overbeat or it might turn gummy.
  • Prepare the filling:.
  • Add 2 T grated Parmesan cheese. Cover, set aside, keep warm while preparing beef.
  • In a large skillet, heat olive oil, stir fry beef until no longer pink. Drain off excess grease. Add onion, garlic, and carrot and stir fry for 3 minutes.
  • Add worcestershire sauce, tomato paste, thyme and rosemary, cook for 1 minute. Add wine and simmer until wine has almost evaporated. Add the broth and simmer for 5 minutes or until sauce has thickened. Taste and adjust seasoning.
  • Transfer beef to a deep dish.
  • Spoon mashed potato on top of beef. Sprinkle with 1 T grated Parmesan cheese. Fluff with a fork to create peaks.
  • Bake in a 400° F oven for 20 minutes or broil until top is brown.

A fun way to turn a delicious shepherd's pie filling into crispy, individual filo pies.

1 package thin filo, like the Fillo Factory, defrosted
1 med. onion, chopped
1 med. carrot, chopped
1 med. celery, chopped
4-5 TBSP. extra virgin olive oil
1 lb. lean ground meat
1 tsp. sea salt
¼ tsp. freshly ground pepper
2 TBSP. tomato paste
1 TBSP. Worcestershire sauce
1 cup beef stock
½ cup frozen English peas, thawed
2 cups mashed potatoes, room temperature
--- melted butter and/or olive oil for brushing on the fillo

Steps:

  • Remove your defrosted filo dough from the refrigerator and place it on your counter. Chop the vegetables and set aside.
  • Heat a large skillet, add the olive oil and then add the vegetables. Sauté until lightly brown, stirring frequently. Push the vegetables to the sides of the skillet and add the ground meat. Cook over medium-high heat until brown. Season with sea salt and pepper, stir in the tomato sauce and the Worcestershire sauce and cook for 2-3 more minutes. Pour the beef stock over the mixture, bring to a boil, reduce to simmer, cover the skillet and cook for about 10-15 minutes, or until most of the water is evaporated. Stir in the peas, cover the skillet and let it sit off heat for 10 minutes. Uncover, taste and adjust the seasoning if necessary. Let the mixture cool completely.
  • Open the filo dough package and unroll it. Cut the filo in half cross-wise. You should have two stacks of filo sheets, each one about 14"x9". Keep the filo sheets covered while you work on the recipe.
  • Preheat the oven to 350°F.
  • Place one filo sheet on a work surface, the shortest side in front of you. Brush lightly with the melted butter. Place a second one on top of the first and brush with some more butter. Repeat with a third filo sheet. Place ¼ cup of mashed potatoes onto the filo, about one-inch above the boarder closest to you. Spread it slightly to the right and the left, making sure there is still a two-inch boarder on either side. Top with ½ cup of the meat mixture and spread it over the mashed potatoes. Fold both sides of filo over the filling and brush those folded edges with butter. Roll the filo upwards to completely enclose the mixture, just as you would with a burrito. Place pie on a sheet pan lined with parchment paper. Repeat with the rest of the fillo sheets, until you run out of mashed potatoes and meat mixture. (Wrap the unused filo tightly with plastic wrap and refrigerate for another use.)
  • Brush some butter over the enclosed filo pies and bake for 30-35 minutes or until golden brown. Remove from the oven and sprinkle with some sea salt and freshly ground pepper.
  • Let the filo pies cool slightly, and then serve with some tzatziki sauce.

  • In pan, bring milk and butter to a simmer; remove from heat. Return potatoes; mash. Season with 2 teaspoons salt and 1/4 teaspoon pepper. Spread over pies; use a fork to make peaks. Bake on a baking sheet until tops are browned, 25 to 30 minutes. Cool slightly; serve.
