Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Whip butter with an electric mixer until fluffy. Stir in the confectioners' sugar, cornstarch, and flour. Beat on low for one minute, then on high for 3 to 4 minutes. Drop cookies by spoonfuls 2 inches apart on an ungreased cookie sheet.
- Bake for 12 to 15 minutes in the preheated oven. Watch that the edges don't brown too much. Cool on wire racks.

Steps:
- Put the butter in a large bowl and soften with a wooden spoon. Add the sugar and mix together. Be careful not to incorporate too much air or to overwork the mixture.
- Sift over the flour and semolina, then stir until well mixed. Knead briefly with your hands until smooth, then shape into a neat disc.
- Draw a 23cm circle on a sheet of baking paper. Roll out the dough to fit the circle, keeping the edge neat. Crimp the edge with your thumb, then, using a palette knife and ruler, mark 8 equal segments. Finally, use a fork to prick the dough - try to do this as neatly as possible, pressing the fork right through the dough (this will prevent it from rising).
- Chill for 20 minutes until firm. Preheat a flat baking sheet in the oven to 160°C/fan140°C/gas 3.
- Transfer the shortbread and its paper to the baking sheet and bake for 55 minutes until pale golden, being careful not to let it brown. Remove from the oven and sprinkle evenly with sugar. Loosen the base from the paper by running a palette knife underneath. Cool until crisp enough to move, then transfer to a wire rack to cool completely.

SHORTBREAD
This is a compilation of several Shortbread recipes I have from British cookbooks. I have been to England three times and REAL shortbread is a favorite. It should use real butter and not be TOO sweet.

- Preheat oven to 325 degrees F (165 degrees C).
- Line a baking sheet with greaseproof (parchment) paper. Sift the flour and rice flour into a medium mixing bowl. Add the sugar and mix.
- Cut butter into pieces and rub into the flour with your fingertips until the mixture begins to bind together. Knead into soft dough.
- Roll the dough into an 8 inch round (or for exact round, mold it in an 8 inch cake pan). Place on baking sheet. Using a fork, prick top and make tine marks along edge. Using a table knife, score top with wedge marks. (This is where it will break when cooled)
- Bake 45 minutes or until pale golden in color. Sprinkle a little superfine sugar over top and cool on baking sheet. Cut into wedges. Keeps for weeks in airtight tin.

MASTER SHORTBREAD RECIPE
If you use half a pound of butter in a batch of cookies, it becomes "short" - because "short" means, historically, pastry with a high percentage of fat. Thus shortbread cookies are - when correctly made - rich, crumbly and impossible to resist. In their simplest form, they taste mostly of sweet and sweetened butter, so the best butter you can lay your hands on will make a difference here. I like that side-of-the-tongue tingling presence of saltiness, and so I tend to use a little more salt than is strictly necessary, hence the range in the recipe.

- Use an electric mixer on low speed to combine the butter and sugar, about 30 seconds. Keeping the speed on low, beat in the egg yolk, then the flour, cornstarch and salt, until the mixture barely holds together. Don't overbeat.
- To make shapes, form the dough into a ball, wrap in plastic and freeze or refrigerate for at least 30 minutes, until firm. Roll it out on a lightly floured surface until it is 1/4 inch thick. Cut into any shapes you like, then put the cookies on an ungreased baking sheet. Chill for at least 1 hour. Alternatively, shape the dough into a round, triangular or rectangular log and refrigerate or freeze until firm, at least 30 minutes. Slice 1/4-inch cookies and put on the baking sheet.
- Heat the oven to 275. Bake the cookies until just firm but still quite tender and not at all brown, about 30 minutes. Cool for a minute on the sheet before using a spatula to transfer the cookies to a rack to finish cooling.

BASIC SHORTBREAD

- Preheat oven to 325 degrees. Butter an 8 1/2-inch round cake or springform pan. Sift together flour and salt in a small bowl. In a large bowl, with an electric mixer on medium, cream butter until fluffy, 3 to 5 minutes. Add sugar, and continue to beat until very light in color and fluffy, scraping down sides of bowl as necessary, about 2 minutes more. Add flour mixture, and beat on low, scraping bowl if necessary, until flour is just incorporated and dough sticks together when squeezed.
- Pat dough into prepared pan. Use a paring knife to score dough into wedges; prick all over in even intervals with a wooden skewer or fork.
- Bake until firm in the center and just starting to color, about 50 minutes. Transfer pan to a wire rack, and let cool completely. Cut into wedges. Cookies will keep, in an airtight container, at room temperature 3 weeks.
SHORTBREAD ALL BUTTER
Crisp thin and light as ideal for brûlée

- Beat butter and sugar for 2 mins until light and fluffy in mixer longer by hand
- Add egg yolk 1 at a time then add vanilla extract or essence for a further 30 seconds
- Add sifted flour gradually to mix while beating very slowly then knead together on cold bench for 30 seconds
- Add a dusting of flour and cut into 2 pieces and gently flatten by hand so it's easier to roll, wrap in cling film and refrigerate for an hr before rolling.
- Remove from fridge and roll to required thickness, cut and bake in a preheated oven at about 150degrees C until golden. Depending on thickness,.. about 12-16 mins. Cool and sprinkle with some caster sugar if required

- Preheat oven to 300 degrees. Line two baking sheets with parchment paper; set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and sugar. With the mixer on low, slowly add flour. Continue mixing until dough comes together to form a ball.
- Transfer dough to a lightly floured work surface; roll out dough to about 1/4-inch thickness, dusting rolling pin with flour as necessary to prevent sticking. Using a 2 1/4-inch round, fluted cutter, cut out dough. Transfer to prepared baking sheet, spacing about 1 inch apart. Gather up any scraps, gently re-roll, and repeat cutting process. SHORTBREAD, 10 WAYS
Shortbread is not only one of the easiest desserts you can possibly make, it's also one of the most adaptable. As long as you keep the butter-to-flour ratio constant (1 stick butter to 1 cup flour), everything else is negotiable. You can reduce or increase the sugar and salt, or mix in any type of flavoring from citrus zest to vanilla to herbs and spices. You can even alter the type of flour, swapping in some rice flour for all-purpose flour for increased crunch, or cornmeal for a nubby texture. Just be cautious about adding liquid to the dough; any more than one tablespoon could interfere with the texture. Here we give a master recipe and nine variations to play around with.
