CROCKPOT SHREDDED BEEF BARBECUE

Perfect for a summer cookout or potluck, this shredded beef barbecue recipe is made easily in the crockpot!

2 - 3 Tbsp packed light brown sugar
2 1/2 tsp paprika
2 tsp garlic powder
2 tsp onion powder
1 1/2 tsp kosher salt
1 tsp black pepper
4 lb beef chuck roast
2 Tbsp yellow mustard
2/3 cup beef broth
1 tsp liquid smoke ((optional))
3 - 4 Tbsp unsalted butter ((sliced))
1 large yellow onion, finely minced
4 cloves garlic, minced
3 Tbsp butter
1 tsp olive oil
salt and pepper, to taste
20 - 24 oz bottle of ketchup
1/3 - 1/2 cup packed light brown sugar
1/4 cup apple cider vinegar
2 - 3 Tbsp molasses
1/2 tsp Worcestershire sauce

Steps:

  • Combine brown sugar, paprika, garlic powder, onion powder, salt and pepper in a small bowl. Set aside. Add chuck roast to slow cooker, drizzle with mustard and rub into the meat.
  • Sprinkle with half of the rub. Rub into the meat, flip the roast over and rub the remaining rub into the meat. Pour in beef broth and liquid smoke (if using), being careful to pour it around the roast, not over it. You don't want to wash away that rub and mustard! Top with butter slices. Cover and cook on LOW for 8-10 hours, or until roast is fork tender.
  • Remove roast from slow cooker to a large cutting board and shred, discarding large fat pieces. Drain cooking juices from the slow cooker and return shredded beef to the slow cooker.

3 medium green peppers, diced
2 large onions, diced
1 can (6 ounces) tomato paste
1/2 cup packed brown sugar
1/4 cup cider vinegar
3 tablespoons chili powder
2 teaspoons salt
2 teaspoons Worcestershire sauce
1 teaspoon ground mustard
14 to 16 sandwich buns, split

Steps:

  • In a 6-qt. slow cooker, combine the beef, green peppers and onions. In a small bowl, combine tomato paste, brown sugar, vinegar, chili powder, salt, Worcestershire sauce and mustard. Stir into meat mixture. Cover and cook on high for 8-10 hours or until meat is tender. , Skim fat from cooking juices. Shred beef, using two forks. With a slotted spoon, place about 1/2 cup beef mixture on each bun.

Steps:

  • Place the rump roast and water in a slow cooker. Cover, and cook 5 hours on High.
  • Remove the roast from slow cooker, and shred using two forks. Discard fat.
  • In the slow cooker, mix the barbeque sauce, honey, steak seasoning, cumin, onion powder, and garlic powder. Stir in the shredded beef.
  • Cook 1 hour on Low. Allow to sit for 10 minutes before serving.

1-1/2 cups ketchup
1/4 cup packed brown sugar
1/4 cup barbecue sauce
2 tablespoons Worcestershire sauce
2 tablespoons Dijon mustard
1 teaspoon liquid smoke, optional
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
12 sandwich buns, split
Sliced onions, dill pickles and pickled jalapenos, optional

Steps:

  • Cut roast in half and place in a 3- or 4-qt. slow cooker. In a small bowl, combine the ketchup, brown sugar, barbecue sauce, Worcestershire sauce, mustard, liquid smoke if desired and seasonings. I have not tried it with pork but was told that it was just as good as the beef. You can adjust the amount of chili powder and brown sugar depending on how spicy or sweet you like it. The leftovers also freeze well.
