2 tablespoons olive oil
1 medium yellow onion, finely chopped
4 garlic cloves, minced
1 whole roasted chicken, bones and skin removed, meat shredded
1 cup shredded Mexican cheese blend
½ (8 ounce) package cream cheese, softened
¼ cup salsa verde
1 (2.5 ounce) can sliced olives, drained and diced
¼ cup chopped fresh cilantro
½ (4 ounce) can diced jalapeno peppers
¼ cup butter
¼ cup all-purpose flour
2 cups chicken broth
1 cup sour cream
½ cup salsa verde
16 corn tortillas
1 cup shredded Mexican cheese blend

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat olive oil in a saute pan over medium heat. Add onion; cook and stir until translucent, about 5 minutes. Add garlic and heat until fragrant, about 2 minutes. Remove from heat and let cool.
  • Combine chicken, onion mixture, cheese blend, cream cheese, salsa verde, olives, cilantro, and jalapenos in a large bowl for the filling. Mix well.
  • Melt butter in a saucepan over medium heat. Stir in flour, then chicken broth. Cook until sauce starts to thicken, 6 to 8 minutes. Stir in sour cream and salsa verde; cook until heated through. Spread a spoonful of sauce over the bottoms of two 9x11-inch casserole dishes.
  • Wrap a tortilla in a damp paper towel and microwave for about 30 seconds. Fill with the chicken mixture, roll up, and place seam-side down into a baking dish. Repeat with remaining tortillas until each dish holds 8 enchiladas.
  • Spoon remaining sauce over the enchiladas. Sprinkle cheese on top.
  • Bake in the preheated oven until heated through, about 20 minutes.

4 boneless skinless chicken breast halves

3 tablespoons fresh parsley, chopped
2 tablespoons chives or 2 tablespoons scallions, minced

Steps:

  • On a plate,combine the flour,1/4 teaspoon salt and pepper and dredge the chicken in it shaking off excess.
  • In a large nonstick skillet,heat oil over medium heat,adding chicken.
  • Cook until golden brown,turning once (about 5 minutes).
  • Add broth,garlic,lemon juice,parsley,chives,tarragon,red pepper flakes and remaining 1/4 teaspoon salt.
  • Bring to a boil,reduce to a simmer and cook,partially covered,until chicken is cooked through (about 10 minutes).
  • With a slotted spoon,transfer chicken onto 4 serving plates.
  • Bring sauce to a boil over medium-high heat,add the peas and cook,uncovered until the sauce is reduced to 1/2 cup (about 3 minutes).
  • Spoon the peas and sauce over the chicken and serve.

2 large limes, juiced, divided
1 tablespoon salt

Steps:

  • Place oil in the bottom of a slow cooker. Add chicken breasts and thighs, 1 can of chile peppers, onion, garlic, cumin, 1/2 of the lime juice, salt, and pepper.

6 boneless skinless chicken thighs
Kosher salt and pepper
2 tablespoons olive oil
1 cup Green Enchilada Sauce or Tomatillo Salsa

Steps:

  • Season the chicken thighs with salt and pepper on both sides.
  • Place a large skillet with olive oil over high heat and let the oil heat for a moment. Using a pair of tongs, add the chicken to the skillet and sear the chicken on both sides for 3 minutes each so that each side is golden brown.
  • Add the Mild Green Chile Enchilada Sauce to the skillet and cover the skillet with a tight fitting lid. Reduce the heat to medium and let the chicken cook for 25-30 minutes.
  • After 20 minutes, using a pair of tongs, flip the chicken over to the over side and continue to cook for another 10 minutes. Turn the heat off and using 2 forks, shred the chicken and then use as needed.

1 lb boneless skinless chicken breast, cut into 1/2 inch long thin strips
2 tablespoons shaoxing wine or 2 tablespoons dry sherry
2 teaspoons cornstarch
1 tablespoon fresh ground black pepper
2 tablespoons rice vinegar
2 tablespoons black vinegar
2 tablespoons dark soy sauce
1 tablespoon shaoxing wine
2 tablespoons sugar
2 teaspoons garlic and red chile paste
1/4 teaspoon sesame oil
1 head garlic, minced
2 tablespoons minced fresh ginger
1 bunch scallion, white and light green parts, minced
8 fresh water chestnuts, peeled and thinly sliced
1 piece black cloud ear mushrooms, soaked and drained (optional)
1 bunch scallion, dark green parts, thinly sliced
2 teaspoons cornstarch, dissolved into 2 tsp. water
3 tablespoons peanut oil (or canola oil)

Steps:

  • Marinate chicken with wine, cornstarch and black pepper while cutting vegetables. Mix together sauce ingredients: vinegars, soy sauce, wine, sugar, chili garlic paste and sesame oil. Set aside.
  • Slice water chestnuts into shreds, about three pieces per slice. Trim any woody parts from the fungus and discard. Roll up fungus into a cigar shape and thinly slice crosswise to make thin ribbon-like shreds.
  • Heat wok on high heat until it is about to start smoking, add oil and heat until it shimmers, then stir fry garlic, ginger and white part of scallion together for thirty seconds. Add drained chicken, and pat into a layer on the bottom of the wok. Allow chicken to brown lightly by sitting undisturbed on the wok for 45-60 seconds. Stir and fry until chicken is nearly done.
  • Add water chestnuts, fungus and sauce ingredients. Bring sauce to a boil. Add cornstarch and water, boil until thickened and glossy. Remove from heat and garnish with green scallion tops.

Remove the chicken to a bowl, cover and let stand while making the sauce. Reserve the broth. 2. In a skillet, heat the oil and cook the onion and garlic until softened, 3 to 4 minutes. Scrape the mixture into a blender or food processor. Add the tomatillos, serranos, cilantro, oregano, cumin, sugar, and 1/4 cup of the chicken broth. Purée until smooth. 3. Transfer the mixture to a saucepan and cook about 8 minutes, stirring, to reduce the liquid and blend the flavors. Add salt and pepper. Shred the cooled chicken and mix with the sauce. 8 thigh pieces (second joints) of chicken, skinned
1/4 cup olive oil
3 cloves garlic, peeled and cut in half
About 20 large sprigs fresh parsley, preferably Italian
5 whole scallions
Salt and pepper as desired

Steps:

  • Arrange the chicken pieces in a large, deep skillet and pour the olive oil over them. Turn the pieces to coat them evenly with oil. Scatter the garlic pieces in the pan and lay the parsley and scallions (both uncut) on top of the chicken so as to "smother" it during cooking. Sprinkle lightly with salt and pepper.
  • Cover the skillet securely and cook over very low heat for 1 hour.
  • Uncover the skillet. Using a fork, remove all the garlic, parsley and scallion pieces to a blender and puree for a few seconds. With the blender still running, pour in all the juices from the skillet and puree until a smooth green sauce is achieved. Taste the sauce and season as desired with salt. Remove the chicken pieces to a serving platter, pour the sauce over them to coat evenly and serve.
