2 lb boneless skinless chicken breast
1 jar salsa, any
1 medium onion, chopped
salt and pepper, to taste
cumin, to taste

Steps:

  • In a crockpot, add raw chicken, onions, and salsa.
  • Cook on high for 3-4 hours or on low for 6-8 hours until chicken is thoroughly cooked.
  • Shred. Then, season to taste with salt, pepper, and cumin.
  • Serve with tortillas or on hamburger buns.

These shredded chicken tacos are easy to make, and everyone loves them! Top them with shredded cheese, avocados, lettuce, sour cream, and diced onion, or any of your favorite taco toppings.

2 pounds skinless, boneless chicken breasts
1 tablespoon olive oil
1 (10 ounce) container chipotle salsa, divided
¼ cup frozen corn
3 tablespoons chopped onion
2 cloves garlic, minced
½ jalapeno pepper, seeded and minced
1 tablespoon chopped fresh cilantro
8 (8 inch) flour tortillas

Steps:

  • Place chicken breasts in a large pot, cover with water, and bring to a boil over medium-high heat. Cover the pot, reduce heat to medium, and simmer until cooked through and no longer pink in the centers, about 10 minutes. Transfer chicken to a plate and let cool for 15 minutes. Discard cooking water.
  • Shred cooled chicken with your fingers or 2 forks.
  • Heat oil in a large skillet over medium heat. Add shredded chicken, 2/3 of the salsa, corn, onion, garlic, jalapeno pepper, and cilantro; bring to a simmer. Cook until heated through, about 15 minutes. Spoon into tortillas and top with remaining salsa.

I bought some beautiful chicken breasts at the market the other day and wanted smething different, yet tastey. I also had a taste for tang but not too spicy, easy to make, and able to have enough left for leftovers for lunches or freezing. This is what we made.

5 chicken breasts (sliced if more than 1/2-inch thick)
1 (8 ounce) jar chunky salsa (heat style to taste)
1 (8 ounce) can tomatoes and green chilies
4 ounces mozzarella cheese, shredded (or cheese of choice)
2 tablespoons minced garlic

Steps:

  • if chicken is more than 1/2 in thick slice horizontally 1/2 inches or less or pound out to thickne.
  • place in a 9 x 13 pan.
  • pour tomatoes and chilis, and salsa, minced garlic over top.
  • cook in oven covered with foil for 30 min at 350°F.
  • put cheese over top last 5 min for melting.
  • check for doneness, then check at 5 min intervels til no longer pink inside.
  • cut to fit rolls, serve with salad and veggies.
  • enjoy.

6 skinless, boneless chicken breast halves
salt and ground black pepper to taste
2 tablespoons olive oil
1 (15 ounce) jar mild picante salsa
1 (14 ounce) can chicken broth

Steps:

  • Season chicken breasts all over with salt and black pepper.
  • Heat oil in a large skillet over medium-high heat. Cook chicken breasts in hot oil until browned, 4 to 6 minutes per side. Pour salsa and chicken broth over chicken, bring mixture to a boil, reduce heat to medium-low, and simmer for 15 minutes. Turn chicken over, stir salsa mixture, and continue to simmer until chicken is tender and sauce is slightly thickened, about 15 minutes more. An instant-read thermometer inserted into the center of the chicken should read at least 165 degrees F (74 degrees C).
