3 tablespoons light mayonnaise
1 tablespoon ketchup
1 teaspoon Worcestershire sauce
1 dash hot pepper sauce (such as Tabasco®)
salt and ground black pepper to taste
7 ounces cooked shrimp, peeled and deveined
4 Boston lettuce leaves
4 (9 inch) whole wheat tortillas
1 ripe avocado - peeled, pitted, and cut into 8 wedges

Steps:

  • Mix mayonnaise, ketchup, Worcestershire sauce, and hot pepper sauce in a bowl. Season with salt and ground black pepper to taste. Add shrimp; mix well.
  • Heat a skillet or grill pan over high heat; pan-fry tortillas one at a time, cooking until softened and browned, about 10 seconds per side.
  • Center a Boston lettuce leaf on each warm tortilla. Add shrimp mixture; top each with 2 avocado wedges. Fold tortillas at the ends to enclose filling, roll up, and cut in half diagonally to serve.

1 Tbsp extra virgin olive oil
1 tsp chipotle chili powder
1 tsp kosher salt
1/2 tsp garlic powder
1 Tbsp brown sugar
1/2 lb shrimp (raw, peeled and deveined (size 51-60))
2 Tbsp oil
juice of 1/2 of a lime (reserve other half for avocadoes)
2 Tbsp cilantro (chopped)
2 avocados (pitted and cubed)
juice of 1/2 of a lime
10 - 12 cherry tomatoes (or grape tomatoes, halved)
salt and pepper (to taste)
1 bag tortilla chip 'scoops'

Steps:

  • Mix olive oil, chili powder, salt, garlic powder and brown sugar in a medium-sized bowl until completely combined. Add the peeled and deveined shrimp then stir to coat. Cover bowl with plastic wrap and refrigerate for at least 1−4 hours.
  • After shrimp has marinated for at least 1 hour, remove from the fridge and drain any excess liquid from the bowl.
  • Place a large skillet over medium-high heat and add 2 Tbsp oil to the pan. When oil is hot, carefully add the shrimp and cook just until it is cooked through-this'll take about 1−2 minutes per side, depending on the size of the shrimp.
  • When the shrimp is cooked through, transfer it to a medium-sized mixing bowl and squeeze the juice of ½ a lime over the top. Sprinkle with 2 Tbsp chopped cilantro, stir to combine then set aside to cool slightly.
  • In a separate bowl, stir together avocado, lime juice and tomatoes then season with salt and pepper to taste.
  • Place approximately 2 tsp of the avocado mixture into each tortilla chip 'scoop' and top with a chipotle lime shrimp. Serve immediately and enjoy!

1 head romaine lettuce, chopped
½ cup cherry tomato, or grape tomato, halved
⅓ cup fresh cilantro, roughly chopped
2 avocados, chopped
4 tablespoons olive oil
1 tablespoon honey
½ teaspoon chili powder
1 bag blue corn tortilla chips

Steps:

  • In a medium bowl, toss shrimp with salt, pepper, and juice from one lime.
  • Sauté shrimp around 1-2 minutes each side, until the shrimp is pink and cooked through. Avoid overcrowding the pan, so you may need to sauté the shrimp in batches. Set aside.
  • Place chopped lettuce, tomatoes, cilantro, and avocados, in a large salad bowl.
  • In a small bowl, mix olive oil, juice from 2 limes, honey, chili powder, salt and pepper to form the dressing.
  • Toss salad with dressing. Add Shrimp and toss.

1 lb shrimp, peeled and deveined
1 cup english cucumber, diced
1 cup tomato, diced
1 avocado, diced
1 cup red onion, diced
1 lemon, juiced
1 lime, juiced
1 tablespoon fresh cilantro, chopped
salt, to taste
1 serrano pepper, finely chopped, optional

Steps:

  • Preheat oven to 425ºF (220ºC).
  • Lay the corn tortillas on a parchment paper-lined baking sheet and lightly brush both sides with olive oil.
  • Bake the tortillas for 5 minutes and then flip them over continue baking another 5 minutes. The tostadas should be brown and crispy. Set the pan aside to cool.
  • Roughly chop the shrimp and transfer to a bowl.
  • Add the cucumber, tomato, avocado, red onion, lemon juice, lime juice, cilantro, salt, and serrano chile (optional), and stir to combine.
  • Marinate for 10-15 minutes.

Steps:

  • Cook shrimp in a 5-quart pot of boiling salted water* until just cooked through, 2 to 3 minutes, then drain in a colander.
  • Whisk together vinegar, oil, capers, salt, pepper, celery seeds, and Tabasco in a large bowl, then add warm shrimp, onion, celery, and bay leaves and toss to combine. Marinate, covered and chilled, 24 hours to 2 days.

A light meal for the summer heat. Great as an appetizer if divided. Presentation/ serving changes around our house. If serving as a meal, I generally leave the shrimp on top. If serving as an appetizer, I tend to cut the shrimp in half and tuck into the tortilla and then cut the tortilla into 2-4 smaller pieces. If cumin seeds are not available at your local carneceria, ground cumin can be substituted- adjust to your preference.

1/4 cup oil, olive, divided
1 1/2 cups onions, diced
7 tomatillos, medium, charred, husks removed
2 cups avocados, diced
3 tablespoons cilantro, chopped
1 tablespoon cumin, seeds, toasted

1/8 teaspoon pepper, black
8 tortillas, 6 inch
2 cups monterey jack cheese, shredded, divided
1 1/2 teaspoons garlic, minced

24 shrimp, large, peeled and deveined

Steps:

  • Heat 1 tablespoon of oil in a large skillet over a medium-high heat. Add onion and saute, stirring frequently, until tender (5-7 minutes). Transfer to a mixing bowl and let cool.
  • Finely chop the tomatillos and add to the cooled onions along with the diced avocado. Use a wooden spoon or potato masher to work the mixture into a course paste. Stir in cilantro and cumin, season with salt and pepper to taste.
  • Spread the avocado mixture on one side of each tortilla, top with 2 tablespoons of cheese, and fold the tortilla in half, pressing lightly to close them. Continue until all are folded. This may be done up to an hour in advance.
  • Heat 1 tablespoon of oil in a large skillet over a medium heat. Add garlic and chipotles and saute until golden, about 2 minutes. Increase the heat to a medium-high. Add the shrimp and saute until opaque and cooked through, 4-5 minutes. Keep warm.
  • Brush both sides of the quesadillas with the remaining oil. Cook in batches if a large saute pan over a medium heat until golden brown on both sides (2-3 minutes each side).
  • Cut the quesadillas in half and serve each with 3 shrimp on top.

1 cup freshly squeezed lime juice
2 large, ripe avocados (diced)
2 large Roma tomatoes (diced)
3 green onions (diced)

1/2 cup freshly squeezed lime juice
1 teaspoon salt
tortilla chips or soft tortilla rounds

Steps:

  • Start with the shrimp! Peel and clean the shrimp, leaving several with the tails on for garnish, if desired. Preheat a large pot of water to a simmer. Add the shrimp and cook it for 2 minutes, just until they start to turn pink.
  • Remove the shrimp immediately and shock it in a large bowl of ice to stop the cooking process. Once the shrimp are cooled, place them into small bowl and pour over the 1 cup lime juice. Cover and refrigerate the shrimp overnight or at least 1 hour.
  • To assemble the ceviche, discard lime juice marinade. We'll add fresh lime juice! Chop the shrimp into small chunks and place them into a large bowl along with diced avocado, tomato, green onion, cilantro, salt, and remaining lime juice. If desired, also add diced cucumber for crunchiness.
  • Toss the ceviche gently with a rubber spatula or spoon and enjoy!
  • Serve the avocado ceviche in small serving bowls with a spoon and a full shrimp on top! This option is perfect for cocktail parties. For a less formal serving option, place the ceviche into a large bowl and serve with a side of tortilla chips!

  • Season the shrimp with salt and pepper; add to the skillet along with the garlic and cook, shaking the pan frequently, until the shrimp are almost cooked through, about 2 minutes.
  • Remove the skillet from the heat and add the tequila.
  • Tilt the pan slightly over the burner to ignite the tequila and cook until the flames subside. (Alternatively, remove the pan from the heat and ignite with a match, then return to the heat.)

2 ripe avocados
cayenne to taste
2 1/2 tablespoons fresh lemon juice, or to taste
1/2 cup seeded and chopped cherry tomatoes
about 50 round corn tortilla chips
about 50 flat-leafed parsley leaves for garnish if desired

Steps:

  • Fill a skillet with enough salted water to reach 1/2 inch up the side and bring the water to a boil. Add the shrimp and simmer them, covered, shaking the skillet occasionally, for 1 to 2 minutes, or until they are pink and just firm. Transfer the shrimp with a slotted spoon to a bowl of ice water, discard the shells, and halve the shrimp lengthwise, deveining them. The shrimp may be prepared up to 1 day in advance and kept covered and chilled.
  • Peel and pit the avocados and in a bowl mash them with a fork. Add the salt, the cayenne, the lemon juice, and the tomatoes and combine the mixture well.
  • Just before serving spread the tortilla chips with the avocado mixture, top the mixture with half a shrimp, and garnish each hors d'oeuvres with 1 of the parsley leaves if desired.
