SHRIMP IN SPICY RED SAUCE

This is a Mexican recipe I found on one of my many travels around the country. I love the smokey taste of chipotles and try to use them in many dishes, or alone. Have fun with this one and make it your own.

2 heads garlic, mashed into a paste.
1/3 cup butter, melted.
salt
8 ounces fresh tomatoes (or canned for convience.)
1 (3 ounce) can chipotle chiles, drained if desired.
4 lbs shrimp (shell, heads on or off.)

Steps:

  • Mix the mashed garlic with the melted butter and saute the shrimp until pink.
  • Puree peeled tomatoes and chipotles in a food processor or blender etc.
  • Pour over the shrimp and simmer until it is thickened.
  • Serve hot.
  • White rice goes well with this dish and a nice Mexican beer, or if you are lucky enough to find it try pulque, an alcaholic beverage made from the maguey cactus.

2 tablespoons extra virgin olive oil, 2 turns of the pan
4 cloves garlic, crushed away from skin
1/2 teaspoon crushed red pepper flakes
24 jumbo shrimp, peeled and deveined, tails in tact, ask for easy peels at your fish counter
2 teaspoons grill or steak seasoning blend (recommended: Montreal Seasoning by McCormick) or coarse salt and pepper
1 lemon, zested and juiced
2 tablespoons chopped parsley leaves, a handful

Steps:

  • Heat a large skillet over medium high heat. Add extra-virgin olive oil, 2 turns of the pan, garlic, red pepper flakes and shrimp. Season with grill seasoning or salt and pepper and cook shrimp 3 minutes or until just pink. Toss with lemon zest, juice and chopped parsley. Remove shrimp to a serving platter leaving the garlic cloves in the pan.

Red Shrimp Sauce With Imported Italian Pasta image

Red shrimp sauce should be flavorful without overpowering delicate shrimp. Be very careful not to overcook the shrimp. The combination of simple plain Italian crushed tomatoes, abundant olive oil and garlic, lots of fresh basil, shrimp and the cooking sequence below ensures both goals. The full flavor of the shrimp is captured in a remarkably simple and delicious sauce. See picture below as you follow cooking sequence.

2 lbs large shrimp, 21-30 per pound
1 cup olive oil
4 garlic cloves
2 (28 ounce) cans Italian plum tomatoes
1/4 teaspoon red pepper flakes
basil
1 (8 ounce) bottle clam juice (optional)
2 lbs your favorite italian imported pasta
salt and pepper

Steps:

  • Peel and devein shrimp. Save shells.
  • Core, peel and coarsely chop garlic cloves.
  • In a pot large enough to hold all ingredients, saute garlic over low heat until translucent; remove. Increase heat to medium and add shells. Stir until pink. Discard shells with a slotted spoon retaining as much juice as possible.
  • Quick cook shrimp in the same pot until partly cooked through. Remove and reserve shrimp in a bowl. Refrigerate until final reheat and cooking at the end. Protect all secreted juices.
  • Place tomatoes, red pepper flakes, remaining olive oil, several stalks of basil, salt and pepper in the pot. Simmer for about 2 hours, adding water or optional clam broth as needed.
  • When close to serving, place pasta in a pot of salted and rapidly boiling water. Cook pasta according to package until al dente.
  • Just before pasta is ready, remove basil and reheat the shrimp in the sauce.
  • Strain pasta and place some of the shrimp sauce in the empty pasta pot. Add cooked pasta and mix, adding more sauce if needed to make sure pasta is coated with sauce. Place in a large serving bowl and top with a generous amount of additional sauce. Serve with additional sauce on the side.

1 teaspoon whole coriander seeds
3/4 teaspoon cardamom seeds
3/4 teaspoon cumin seeds
3 tablespoons olive oil
1 tablespoon minced peeled fresh ginger
2 teaspoons hot chile sauce
3/4 teaspoon ground cinnamon
1/2 teaspoon honey
12 uncooked large shrimp, peeled, deveined, tails left intact
1 red onion, halved, peeled, each half cut into 4 wedges through root end
Fresh cilantro leaves (optional)

Steps:

  • Toast first 3 ingredients in small skillet over medium-high heat until fragrant, shaking skillet, about 1 minute. Coarsely grind spices in mortar and pestle or spice grinder. Transfer to large bowl; mix in oil, ginger, chile sauce, cinnamon, and honey. Sprinkle with salt and pepper. Add shrimp and onion; toss to coat.
  • Heat large nonstick skillet over medium-high heat. Add onion; cook until blackened in spots, turning occasionally, about 5 minutes. Move onions to side of pan. Add shrimp and marinade; sauté until shrimp are just cooked through, about 3 minutes. Transfer shrimp and onions to plates. Top with cilantro, if desired.

1 lb large shrimp, peeled and deveined
1 red bell pepper, diced
½ teaspoon red pepper flakes
1 tablespoon low sodium soy sauce
2 tablespoons sesame oil
½ teaspoon salt, divided
¼ cup green onion, sliced, for topping

Steps:

  • Heat 1 tablespoon of sesame oil in a large, nonstick skillet over medium heat.
  • Pour in the shrimp and season with ¼ teaspoon of the salt.
  • Fry the shrimp for 1 minute on each side.
  • Remove the shrimp from the pan and pour in the remaining 1 tablespoon of oil.
  • Toss in the red bell pepper, remaining ¼ teaspoon of salt, and red pepper flakes and sauté for a few minutes until they begin to soften.
  • Add in the soy sauce and sauté about 1 more minute.
  • Toss the shrimp back into the pan and mix until everything is well incorporated and the shrimp is fully cooked, about 1 minute.
  • Divide the mixture evenly between 4 bowls and top with green onion.
  • Enjoy!

White of a small egg
1 tablespoon Shao-Hsing wine or sherry
1 tablespoon vegetable oil
1 teaspoon cornstarch
1/4 teaspoon salt
Pinch white pepper
1 pound large shrimp (about 26), shelled, deveined and washed
3 cups vegetable oil
1 tablespoon minced carrots
1 tablespoon minced ginger
1 tablespoon minced garlic
1 tablespoon chopped onions
1 scallion, chopped
1 teaspoon sugar
1 teaspoon soy sauce
1 1/2 tablespoons Shao-Hsing wine or sherry
2 tablespoons ketchup
1 teaspoon cornstarch
1/2 teaspoon salt
1/8 teaspoon white pepper
1/4 cup chicken broth
1 teaspoon white vinegar
1 teaspoon sesame oil

Steps:

  • Mix first six ingredients together and marinate shrimp in mixture for 3 hours, refrigerated.
  • Mix all the sauce ingredients except the sesame oil and set aside.
  • Heat 3 cups vegetable oil in wok to 350 degrees. Add marinated shrimp and cook 1 minute, until shrimp change color. Drain shrimp and set aside. Drain wok and reserve 2 tablespoons of the oil.
  • Heat wok over high heat and add reserved oil. When a wisp of white smoke appears add carrots, giner, garlic, onions and scallion and stir-fry thoroughly. Add sauce to mixture, stirring until it boils and thickens. Add shrimp and stir a few seconds to heat. Turn off heat, stir in sesame oil and serve immediately in a preheated serving dish.

  • In a deep 12-inch heavy skillet stir together oil and flour and cook roux over moderate heat, stirring constantly, until color of peanut butter, about 10 minutes.
