SHRIMP MOZAMBIQUE
This is a delicious Portuguese dish that my mom used to make for us all the time. A good crusty bread is a must to sop up the sauce. If you love bold, savory flavors, you'll love shrimp Mozambique.

Steps:
- Melt butter in a large skillet over medium heat. Add onion and garlic and cook until tender but not brown, about 5 minutes.
- Stir beer, white wine, sazon, hot sauce, and salt into the skillet. Bring to a boil. Reduce heat and simmer for 15 minutes.
- Add shrimp to the skillet and cook until pink, 3 to 4 minutes. Add rice; heat through for about 5 minutes. Stir in parsley.

EASY SHRIMP MOZAMBIQUE
Shrimp Mozambique is zesty shrimp in a saffron and garlic-based sauce. Great served over rice.

- Melt butter in a saucepan over medium heat. Add onion and saute until slightly golden, about 5 minutes. Stir in water, lemon juice, garlic, sazon, salt, and pepper. Cook for 2 minutes. Pour in beer and stir. Add hot sauce; bring to a boil. Add shrimp and cook until pink, about 3 minutes.

SHRIMP MADAGASCAR
This recipe is a perfect appetizer for any occasion. It's easy yet gourmet and delicious. The goat cheese adds a nice layer of tang to the sauce!

Steps:
- Heat a large heavy sauté pan over medium high heat Pour in oil
- Season shrimp with salt and pepper
- Sauté the shrimp in the oil for 1 minute on each side
- Remove shrimp from the sauté pan and set aside
- Pour out oil from the pan
- Add peppercorns back to the sauté pan and heat for 30 seconds
- Deglaze with Pernod*.
- Add goat cheese and chicken stock and bring to a boil
- Reduce until sauce is thick enough to coat the back of a spoon.
- Whisk in mustard and return to a simmer.
- Place shrimp back into simmering sauce to heat
- Place 6 shrimp on each plate and ladle sauce over each shrimp
- Garnish with chopped scallions
- Great served with rice and carrot julienne
- * licorice flavored liquor.

- Heat a large heavy sauté pan over medium high heat Pour in oil Season shrimp with salt and pepper Sauté the shrimp in the oil for 1 minute on each side Remove shrimp from the sauté pan and set aside Pour out oil from the pan Add peppercorns back to the sauté pan and heat for 30 seconds Deglaze with Pernod*. Add fresh Goat Cheese and chicken stock and bring to a boil Reduce until sauce is thick enough to coat the back of a spoon. Whisk in mustard and return to a simmer. Place shrimp back into simmering sauce to heat Place 6 shrimp on each plate and ladle sauce over each shrimp Garnish with chopped scallions Great served with rice and carrot julienne * licorice flavored liquor
MADAGASCAR CHICKEN
A very different way to spice up the same old chicken! Plus a name that may unspire kids to get excited about the recipe! I found this recipe while searching the web. Minor changes have been made to make this even better! NOTE: One pound shelled and deveined shrimp can be added to or substituted for the chicken.

Steps:
- Grate the lemon rind, removing the yellow only and leaving the bitter pith on the fruit. Reserve rind.
- Cut chicken into bite sized pieces and squeeze the juice of the lemon over the meat. Allow if to marinate for 30 minutes. Drain and season with salt and pepper to taste.
- In a hot skillet with a little oil or cooking spray, brown chicken over medium heat leaving chicken only partially cooked.
- Remove chicken and discard any oil, leaving just a light film or spray pan again. Add onions and cook until slightly browned.
- Add bell pepper and garlic and saute for 3 minutes. Reduce heat to simmer, add coconut milk, ginger, cayenne powder, and grated lemon rind.
- Return chicken to pan, cover and simmer 30 min or until in thick stew consistency. If mixture is too thin simmer with lid removed until desired consistency is reached.
- Serve over a bed of steamed white rice.

- In a Dutch oven, heat oil over medium-high heat. Add onion; cook and stir until tender, 4-5 minutes. Add garlic and shrimp; cook 1 minute longer. Stir in seasonings. Add beer and lemon juice; bring to a boil. Reduce heat. Simmer, uncovered, until shrimp turn pink, 10-15 minutes. Stir in ketchup and parsley; discard bay leaf. Serve with rice.
