SHRIMP PINWHEEL WITH JALAPEñO AND CILANTRO SAUCE

- 1. In a medium skillet with a cover bring to a boil about 3 cups of water. Add the shrimp and salt. Reduce the heat to low, cover, and simmer until the shrimp are pink and cooked through, about 10 minutes. Drain the shrimp under cold running water. Peel and devein them, leaving the tail intact. Put the shrimp in a bowl, cover and refrigerate. While the shrimp cool, prepare the jalapeño sauce. 2. In a shallow 8-inch round soup plate with a rim, place an attractive smaller bowl that will fit in the center. Arrange the shrimp around the outside of the smaller bowl so they are touching in a tight circle, with the tails resting on the rim of the bowl. Fill the small bowl with dipping sauce. Refrigerate. SWEET AND SPICY JERK SHRIMP
Steps:
- Preheat the oven to 425 degrees F (220 degrees C). Line two 10x15-inch baking pans with foil.
- Peel and devein shrimp, leaving tails intact if desired. Rinse shrimp and pat dry.
- Gently toss shrimp together with pineapple, bell peppers, red onion, jalapeno, oil, and jerk seasoning in a large bowl. Divide mixture between the prepared pans.
- Roast in the preheated oven until shrimp are opaque, about 15 minutes.
- Sprinkle with cilantro and serve with brown rice and lime wedges.

QUICK AND EASY SEAFOOD PINWHEELS
My daughter and I loved seafood and wanted to take an easy serve snack to a friends. I came up with this.

- 1. Combine cream cheese, sour cream, and cocktail sauce. Stir until smooth. Add green onions if you like them. If you are using the shrimp it can be mixed in at this time. Spread the mixture on tortillas. If you are using the crab sticks they will be rolled into the center of each roll up. You will need 1 ½ to 2 per roll up depending on the size of your tortillas. Once you have them rolled up wrap each one in plastic wrap. It is best if they sit an hour before serving. These can be made a couple days in advance. Slice in 1/2 to 1 in. slices. You can serve it with a dot of cocktail sauce on top of each one.
- 2. Alternative Cracker spread: Mix cream cheese and sour cream. Spread on a plate. Spread cocktail sauce on top of that. Sprinkle 1 can of baby shrimp on top. Serve with your favorite crackers.

- 1. In a medium bowl, mash avocado with a fork. Add cream cheese; stir until smooth. Stir in the shrimp cocktail sauce. Or you can just spread them individually. 2. Spread 1/4 cup of the avocado mixture onto one of the tortillas, leaving a 1-inch border around the edge. Top with a layer of spinach. Sprinkle with a scant 2 tablespoons of the almonds and about 1/4 cup of the chopped shrimp. Roll up tightly. Secure with a party pick, if necessary to prevent unrolling. Repeat with remaining tortillas, avocado mixture, spinach, almonds, and shrimp. Place rolled tortillas on a tray or platter. 3. To serve, cut each rolled tortilla into 1-inch-thick slices, discarding ends. Secure with party picks, if necessary. Arrange slices on a serving platter. Make-Ahead Directions: Prepare as directed through Step 2. Cover and chill for up to 4 hours. Serve as directed in Step 3.
