1 pound ground pork
1 can (14 ounces) bean sprouts, drained
1 can (8 ounces) bamboo shoots, drained and chopped
1/2 pound cooked medium shrimp, peeled, deveined and finely chopped
1 can (4 ounces) mushroom stems and pieces, drained and chopped
4 green onions, chopped
1 tablespoon cornstarch
3 tablespoons soy sauce
1 tablespoon water
1 teaspoon garlic powder
1 teaspoon canola oil
2 packages (12 ounces each) wonton wrappers
Oil for frying
Sweet-and-sour sauce

Steps:

  • In a large skillet, cook pork over medium heat until no longer pink; drain. Stir in the bean sprouts, bamboo shoots, shrimp, mushrooms and onions. , In a small bowl, whisk the cornstarch, soy sauce, water, garlic powder and oil until smooth; stir into skillet. Bring to a boil; cook and stir for 1 minute or until thickened. Remove from the heat., Position a wonton wrapper with one point toward you. (Keep remaining wrappers covered with a damp paper towel until ready to use.) Place 2 heaping teaspoons of filling in the center of wrapper. Fold bottom corner over filling; fold sides toward center over filling. Roll toward the remaining point. Moisten top corner with water; press to seal. Repeat with remaining wrappers and filling. , In an electric skillet or deep-fat fryer, heat oil to 375°. Fry spring rolls, a few at a time, for 1-2 minutes on each side or until golden brown. Drain on paper towels. Serve warm with sweet-and-sour sauce.

1 cup sugar snap peas
1 ear sweet corn
2 red bell peppers, seeded and sliced into long, thin strips
1 1/2 cups shredded carrots
1 1/2 cups bean sprouts
1 cup snow peas, sliced on the diagonal into thin strips
2 tablespoons sesame oil
1 small yellow onion, very finely chopped
15 shiitake mushrooms (5 ounces), stems removed, caps very finely chopped, or 7 dried shiitake mushrooms covered in boiling water for 5 minutes, drained and chopped
2 cloves garlic, minced
1 tablespoon freshly grated ginger
8 ounces peeled and deveined small shrimp (see Cook's Note)
1 teaspoon reduced-sodium soy sauce or tamari
Twelve 8 1/2-inch round rice paper wrappers (available in Asian markets and the produce section of some supermarkets)
1/4 cup basil leaves
1/4 cup cilantro leaves
2 tablespoons toasted sesame seeds
2 scallions sliced on the bias
Hot sauce (I like Sriracha)
Citrus Ponzu Sauce, recipe follows, for dipping
Spicy Miso Dip, recipe follows, for dipping (optional)
1/4 cup reduced-sodium soy sauce or tamari
3 tablespoons rice wine vinegar
1 teaspoon freshly grated orange zest
1 teaspoon sugar, optional
1/2 cup olive oil mayonnaise or vegan mayonnaise
1 tablespoon red or white miso
1 tablespoon Sriracha
2 tablespoons thinly sliced scallions, sliced on the bias

Steps:

  • For the vegetables: Bring a medium saucepan of water to a boil. Blanch the sugar snap peas in the boiling water for 2 to 3 minutes. Drain and shock in ice water. Slice on the diagonal into thin strips. Set aside.
  • Grill or broil the corn with some sesame oil and a touch of miso, and then slice the kernels off the cob. Set aside.
  • For the garlicky shrimp filling: Heat the oil in a large skillet or wok over medium-high heat. Add the onions and cook, stirring, until they start to soften, 1 to 2 minutes. Add the mushrooms and cook, stirring often, until softened, about 3 minutes. Stir in the garlic and ginger and cook, stirring often, until the garlic is fragrant, about 1 minute. Add the shrimp and soy sauce and cook, stirring often, until the shrimp curl and become opaque, 1 to 2 minutes. Transfer to a medium serving bowl and set aside to cool. (Refrigerate if you're not using the filling within 30 minutes.)
  • For the fresh spring rolls: Dip a wrapper in a large shallow bowl of warm water for 10 seconds. Remove from the water and lay it flat on a dampened cutting board. Place 1 tablespoon of the shrimp filling on the bottom edge of the wrapper. Slightly spread it out horizontally to cover the lower third of the wrapper. Make sure to leave a 1-inch border at the edge of the wrapper and sprinkle with some of the vegetables, as desired, taking care not to overstuff. Sprinkle with some of the basil, cilantro, sesame seeds, scallions and hot sauce, to taste. Fold the sides over the filling and then fold the bottom up and over the filling, rolling the roll tightly. Place it seam-side down and cut in half diagonally. Repeat with the remaining wrappers and fillings. Serve with the Citrus Ponzu Sauce and Spicy Miso Dip, for dipping.

You might want to consider doubling this recipe, I ate practically all of these myself they are that good!. Don't be tempted to over-stuff the wrappers with filling or they will not seal properly. Plan ahead the filling needs to chill for a minimum of 4 hours before using.

3/4 lb fresh shrimp, peeled and deveined
1 large egg, lightly beaten
1/2 lb ground pork (use pork only not beef!)
1 (8 ounce) can water chestnuts, drained and minced
1 (8 ounce) can bamboo shoots, well drained and minced
1 tablespoon minced fresh garlic
2 large green onions, finely chopped
2 tablespoons minced fresh ginger
1 1/2 tablespoons soy sauce
1/2 teaspoon salt (or to taste)
1/2 teaspoon pepper
15 spring roll wrappers
1 egg, beaten
vegetable oil (for frying)

Steps:

  • Finely chop the fresh shrimp.
  • In a bowl stir together the chopped shrimp 1 egg, pork and the next 8 ingredients; mix well to combine.
  • Cover and chill for a minimum of 4 hours to blend the flavors before using.
  • Spoon about 1 tablespoon of mixture in the center of each spring roll wrapper.
  • Fold the top corner of each wrapper over the filling, tucking tip of corner under the filling, then fold left and right corners over filling.
  • Lightly brush remaining corner with beaten egg.
  • Tightly roll filled end toward remaining corner, then gently press to seal.
  • Pour about 2-inches of oil in a skillet and heat to 350 degrees.
  • Fry the spring rolls a couple at a time only for about 6 minutes or until golden brown.
  • Drain on a brown paper bag or paper towels.
  • DELICIOUS!

2 tablespoons olive oil
1 teaspoon chili oil
1 ½ pounds medium shrimp, peeled and deveined
1 pound sugar snap pea pods
2 large cloves garlic, minced
1 ½ cups dry white wine
¼ cup reserved pasta water
1 tablespoon unsalted butter
1 tablespoon fresh lemon juice
⅓ cup chopped fresh basil

Steps:

  • Bring a large pot of lightly salted water to a boil. Add linguini pasta, and cook for 8 to 10 minutes or until al dente. Drain, reserving 1/4 cup liquid.
  • Heat the olive oil and chili oil in a wok over medium-high heat. Mix in the shrimp, pea pods, and garlic. Cook and stir 2 minutes, until shrimp are almost opaque. Remove from heat, and set aside.

2 Tbsp. lite soy sauce
2 Tbsp. oil, divided
1/2 lb. pork tenderloin, thinly sliced
2 cups small broccoli florets
2 carrots, peeled, thinly sliced
1 cup cut fresh green beans, blanched
1/2 cup fat-free reduced-sodium chicken broth
1/4 cup KRAFT Asian Toasted Sesame Dressing
1/2 lb. uncooked medium shrimp, peeled, deveined

Steps:

  • Mix cornstarch and soy sauce until blended. Heat 1 Tbsp. oil in wok or large skillet on medium-high heat. Add meat; stir-fry 5 min. or until done. Remove from wok; cover to keep warm.

Number Of Ingredients 15

1 tablespoon vegetable oil, plus more as needed and for frying
1/2 pound ground pork
1/2 cup minced onion
1/4 cup minced celery
1/4 cup finely grated carrot
3 garlic cloves, minced
1 tablespoon fish sauce
1/2 cup grated cabbage (3 ounces)
1/2 cup sugar snap peas (2 ounces), thinly sliced
1/2 pound shrimp, shelled and deveined, thinly sliced crosswise
Coarse salt and freshly ground pepper
10 spring-roll wrappers (8-inch square)
1 large egg yolk, lightly beaten
1 tablespoon water
Rice-Vinegar Dipping Sauce

Steps:

  • Heat oil in a medium saucepan over medium heat. Add pork, and cook, breaking it up with a spoon, until browned, about 5 minutes. Remove pork with a slotted spoon.
  • Add onion to pan, and cook until softened, about 3 minutes. Add celery, carrot, garlic, and fish sauce, and cook until vegetables are softened, about 2 minutes. Add cabbage, sugar snap peas, and shrimp, and cook until shrimp is pink and cooked through, about 2 minutes. Stir in reserved pork. Season with salt and pepper, and let cool slightly.
  • Stack spring-roll wrappers, and cut into quarters. (You should have forty 4-inch squares.)
  • Whisk yolk and water in a small bowl. Place 1 wrapper on a work surface, with 1 corner facing you. (Keep remaining wrappers covered with a damp kitchen towel.) Arrange 1 tablespoon filling in a mound in center of wrapper. Fold bottom corner over filling, then fold in sides halfway. Roll wrapper to form a tight cylinder, leaving top corner exposed. Brush top corner with egg wash, and press to seal. Cover with a damp kitchen towel. Repeat with remaining ingredients.
  • Heat 1/2 inch of oil in large, heavy skillet until it reaches 350 degrees. Working in batches, add spring rolls, seam side down, and fry, turning frequently, until golden brown, 2 to 3 minutes. (Adjust heat as necessary to keep oil at a steady temperature; add more oil if needed.) Drain on paper towels. Serve immediately with dipping sauce.
