Shrimp Tacos with Peanut Sauce image

Delicious and easy shrimp tacos with a yummy peanut sauce

1/4 cup soy sauce
1/2 Tbsp garlic paste
1/2 Tbsp ginger paste
1/2 Tbsp lime juice
1 pound jumbo shrimp (peeled and deveined)
8 fajita size soft tortillas
1 cup chopped cilantro
1 cup thinly sliced red pepper
1 cup shredded carrots
1 cup shredded red cabbage
1/2 cup chopped peanuts
1/2 cup creamy peanut butter
1/3 cup soy sauce
1/3 cup sweet Thai chili sauce
1/2 Tbsp garlic paste
1/2 Tbsp ginger paste
1/2 Tbsp lime juice

Steps:

  • In a bowl, whisk together the soy sauce, garlic paste, ginger paste, and lime juice. Add the shrimp and toss to coat evenly. Marinate for 30 minutes.
  • Place the shrimp on a lined baking sheet. Place in a 400 degree oven for 6 to 8 minutes.
  • Assemble the tacos by placing shrimp in the center of the tortilla. Top with cilantro, red pepper, carrots, cabbage, and chopped peanuts. Drizzle peanut sauce over top (either store bought peanut sauce, or recipe below).
  • In a bowl, whisk together peanut butter, soy sauce, sweet Thai chili sauce, garlic paste, ginger paste, and lime juice.
