Steps:
- In medium bowl, combine lime juice, tequila, cumin, salt, and pepper; mix thoroughly. Add the shrimp and toss to coat. Marinate for 10 minutes.
- Warm tortillas on grill or pan. Cover with a towel to keep warm.
- In a medium Dutch oven, heat the canola oil to 350 degrees F.
- Remove shrimp from marinade, shake off excess, grill for 4 to 5 minutes, or until light golden brown.
- Mix cabbage, cilantro and onion. Stack 2 tortillas; place 1/8th of shrimp on top of each, and top with cabbage mixture and Pico de Gallo, serve immediately.
- Directions for Pico de Gallo:.
- In a bowl, mix all ingredients, season with salt and pepper and refrigerate for 1 hour for flavors to meld.

- Clean the shrimp and set aside. Combine the cumin, garlic powder, onion powder, paprika, chili powder, oregano, and salt. Combine the shrimp and the spices, toss until the shrimp is well coated. Let the shrimp rest while you prepare the avocado sauce.
- For the Pico de gallo, combine the tomato, onion, peppers, and garlic, mix well. Add the lime juice and mix. Season with salt to taste. (The vegetables can be chopped the day before).
- For the avocado sauce combine the avocado, sour cream, lime juice, cumin, garlic powder and onion powder in a mini food processor. Process until the ingredients are well mixed and creamy. Season with salt to taste.
- Let the shrimp rest for 5 to 10 minutes. Heat 2 tablespoons of olive oil in a skillet. Add the prepared shrimp, cooking about 3 to 4 minutes on each side or until the shrimp turn pink.

- Make the batter: Combine All-Purpose Flour (2 cup), Baking Powder (1 1/2 teaspoon), Garlic Powder (1 teaspoon), Fresh Oregano (1/2 teaspoon), Salt and Pepper (to taste) in a bowl and mix thoroughly with a whisk. Add the Beer (1 can) and whisk until smooth, then set aside at room temperature for 30 minutes.
- To make the pico de gallo, roughly Onion (1), Tomato (1), Cucumber (3), and Green Chili Pepper (1) into big pieces. If you prefer less spice, de-seed your chilis by slicing them in half and cutting the seeds out.
- Add the juice of the Lime (1) and put all the prepared vegetables into a Blender. Add Fresh Cilantro (to taste), Salt (to taste), Ground Black Pepper (to taste), and pulse for 2 or 3 seconds so it stays chunky.
- Pour 1 inch of Oil (to taste) into a deep pan, and heat until shimmering. While it’s heating, check the batter; if it seems too thick to coat the shrimp well, add more beer, water, or milk, 1 tablespoon at a time. However, it's better for it to be slightly too thick than too thin!
