SHRIMP WITH SPICY GARLIC SAUCE
Chili oil, chili paste and garlic give this Asian recipe a spicy boost!

Steps:
- Soak mushrooms in hot water about 20 minutes or until soft; drain. Rinse with warm water; drain. Squeeze out excess moisture. Remove and discard stems; cut caps into thin strips.
- Place carrot in boiling water; heat to boiling. Boil 1 minute; drain. Immediately rinse with cold water; drain.
- Peel shrimp. Cut shrimp lengthwise in half; wash out vein. Pat dry with paper towels. Mix cornstarch and water.
- Heat wok or 12-inch skillet over high heat. Add 1 tablespoon oil; rotate wok to coat side. Add shrimp and garlic; stir-fry until shrimp are pink and firm. Remove shrimp from wok.
- Add 1 tablespoon oil; rotate wok to coat side. Add mushrooms and cabbage; stir-fry 1 minute. Add broth; heat to boiling. Cover and cook 1 minute.
- Stir in cornstarch mixture; cook and stir about 30 seconds or until thickened. Add shrimp, carrot, onions and chili paste. Cook and stir about 30 seconds or until shrimp are hot.

- Heat a large skillet over medium high heat. Add extra-virgin olive oil, 2 turns of the pan, garlic, red pepper flakes and shrimp. Season with grill seasoning or salt and pepper and cook shrimp 3 minutes or until just pink. Toss with lemon zest, juice and chopped parsley. Remove shrimp to a serving platter leaving the garlic cloves in the pan.
SPICY SHRIMP IN CREAM SAUCE

- Heat olive oil in a large skillet over medium-low heat. Add habanero peppers, and garlic, and fry for a few minutes to release the flavors. Add shrimp, and cook stirring constantly until pink, about 5 minutes. Season with chili powder, salt and pepper, stirring to evenly coat the shrimp. Stir in the cream, and cook over low heat until heated through, but do not allow to boil. Serve hot with bread slices.

My brother just loves this shrimp dish, I do, too, but not so much of the spiciness. I like just a touch of heat. But of course, you put the heat to your taste.

- In a small bowl, mix together all the ingredients, except the olive oil, garlic and green onions.
- In a large skillet, heat the olive oil over medium-high heat. Add in the garlic, don't burn it, about 30 seconds, it will be bitter if you do.
- Add the shrimp, just cook till both sides are pink, about a minute and a half.
- Add all the sauce mixture and stir so the shrimp just cooks. Do not over cook the shrimp it will become rubbery.
- Remove from heat and place onto a serving platter and garnish with green onions.

- In a bowl, combine all marinade ingredients; stir in the shrimp until evenly coated; marinate for 20-25 minutes.
- Meanwhile, blend together all sauce ingredients.
- Slice the chili peppers in half lengthwise, and scrape out the seeds with the tip of a knife, then cut the peppers into 1/4-inch pieces (I use rubber gloves for this, watch your eyes, these are HOT!).
- In a large wok or large heavy skillet, over high heat, add in half of the marinated shrimp; stir-fry for 2 minutes, or until the shrimp turns pink; remove.
- Heat 1 Tbsp oil in the same wok/frypan, and stir-fry remaining shrimp in the same manner; remove.
- Wipe out the pan with a paper towel.
- Heat the remaining oil in the same pan.
- Add the chili peppers and garlic; stir-fry 10 seconds, or until peppers start to turn brown.
- Add in the green onions and bell pepper; stir-fry 1 minute.
- Add in the sauce mixture; cook, stirring until sauce boils and thickens.
- Stir in the shrimp and sesame oil.
- Serve immediately.

- Pat the shrimp dry and season with 1 teaspoon salt. Put the butter and hot sauce in a large bowl.
- Heat the oil in a large (12-inch) cast-iron skillet over high. Add the scallions and cook until softened and browned in spots, 1 to 2 minutes. Transfer the scallions to the bowl with the butter and hot sauce.

- In small saucepan, whisk together white wine with juice of 1/2 lemon, lemon pepper, oregano, basil, and thyme. Reduce over medium-low heat down to about 1/2 cup.
- In skillet, sauté garlic in 1/2 stick butter for about 4 minutes.
- Add red chili pepper flakes to garlic/butter mixture and sauté for about 1 minute.
- Add shrimp to skillet, cook until pink, about 5 minutes.
- Remove shrimp from pan, reserving leftover liquid.
- Add liquid from skillet to saucepan, whisking thoroughly, and raise heat to medium.
- Add 1/2 stick butter, sliced, to saucepan, continuing to whisk until melted.
- In separate ramekin or very small bowl, whisk together corn starch with small amount of half and half until smooth. Add to saucepan, continuing to whisk until entire mixture is smooth and begins to thicken.
- Add half and half to saucepan, continuing to whisk until thickened to desired consistency.
- Add to fettuccine, tossing until coated.
- Serve fettuccine on a plate, topped with sautéed shrimp.
