NUT ROLL RECIPE

Nut Roll Recipe image

This nut roll recipe hails from an old family friend and is a Christmas staple. It only requires one rise, so it's easy to churn out a ton of nut roll!

Time 6h

Number Of Ingredients 16

1 teaspoon sugar
½ cup warm water
2 ounces cake yeast or 3 packets (6¾ teaspoons) active dry yeast
6 eggs
16 ounces sour cream
2 cups unsalted butter, melted and cooled
1 cup granulated sugar
1 teaspoon vanilla extract
½ teaspoon salt
9 to 10 cups grams all-purpose flour
3 pounds walnuts (finely ground)
3 cups granulated sugar
¾ cup unsalted butter, melted and cooled
¾ cup evaporated milk
½ cup whole milk
½ teaspoon vanilla extract

Steps:

  • Make the Dough: Dissolve 1 teaspoon sugar into the ½ cup warm water (if using fresh cake yeast, the water temperature should be between 90 to 95 degrees F; if using active dry yeast, the water temperature should be 120 to 130 degrees F). Crumble the fresh yeast or sprinkle the active dry yeast and stir to combine. Let sit for 5 to 10 minutes, or until foaming.
  • In the bowl of a stand mixer using the paddle attachment, beat the eggs on medium speed until combined, about 1 minute. Add the sour cream, melted butter, sugar, vanilla, salt and the softened yeast. Mix on medium speed until smooth and well-combined, about 2 to 3 minutes. Switch to the dough hook, reduce the mixer speed to low, and add the flour a little at a time, until the dough does not feel sticky but is still soft and supple. Continue kneading until the dough does not stick to the sides of the bowl. Cover with a damp dish towel while you prepare the filling.
  • Make the Filling: In a large bowl, combine all of the ingredients for the filling, stirring well to ensure that it is completely mixed and all of the ingredients are incorporated.
  • Assemble the Nut Roll: Line four baking sheets with parchment paper or silicone baking mats. Divide the dough into eight pieces. On a clean work surface and one at a time, roll each piece out into a 9x14-inch rectangle, using flour if necessary to keep from sticking. Spread one-eighth of the filling to within ½-inch of the edges. With the long side in front of you, roll up gently and pinch the seams shut. Place on the prepared baking sheets, 2 rolls per sheet. Cover loosely with plastic wrap. Repeat with all eight pieces of dough. Place the baking sheets in a draft-free area and allow to rise for 3 hours (the rolls will puff and swell but will not look huge).
  • Bake the Nut Roll: Preheat oven to 350 degrees F. Bake one pan at a time for 20 to 25 minutes, or until the tops are lightly browned. Cool completely before slicing. Wrap leftovers tightly in plastic wrap and store at room temperature for up to 1 week. The nut roll can be frozen by wrapping in plastic wrap, then again in foil, and stored in the freezer for up to 2 months. Thaw at room temperature.

1/2 tsp salt
3 large eggs; slightly beaten
FILLING
1 lb walnuts; ground fine
1 c sugar
1 c milk
1 stick butter (salted)

SICILIAN MEAT ROLL

Sicilian Meat Roll image

MY SISTER-IN-LAW shared this recipe years ago and it became our family's favorite meat loaf. The addition of ham and mozzarella is a colorful surprise and adds terrific flavor. This is always a big hit with company, and the leftovers are good either hot or cold. -Mrs. W. G. Dougherty, Crawfordsville, Indiana

Number Of Ingredients 17

DOUGH
3 cups all-purpose flour
1/2 cup sugar
1 teaspoon salt
1/2 cup shortening
4 tablespoons (1/2 stick) unsalted butter, at room temperature
2 large eggs
2 to 3 tablespoons cold milk
FILLING
1 cup toasted almonds
1 cup toasted walnuts
1/2 cup toasted and skinned hazelnut
1/4 cup sugar
1/4 cup honey
2 teaspoons orange zest
1/4 teaspoon ground cinnamon
confectioners' sugar

Steps:

  • 1 In a large bowl, combine the flour, sugar, and salt. Cut in the shortening and butter until the mixture resembles coarse crumbs. 2 In a small bowl, whisk the eggs with two tablespoons of the milk. Add the mixture to the dry ingredients, stirring until the dough is evenly moistened. If needed, blend in a little more milk. 3 Gather the dough into a ball and place it on a sheet of plastic wrap. Flatten it into a disk and wrap well. Refrigerate 1 hour up to overnight. 4 Process the nuts and sugar in a food processor. Process until fine. Add the honey, zest, and cinnamon, and process until blended. Preheat the oven to 350°F. Grease 2 large baking sheets. 5 Divide the dough into 4 pieces. Roll out one piece between two sheets of plastic wrap to form a square slightly larger than 8 inches. Trim the edges and cut the dough into 2-inch squares. Place a heaping teaspoon of the filling along one side of each square. Roll up the dough to enclose the filling completely. Place seam-side down on the baking pan. Repeat with the remaining dough and filling, placing the cookies 1 inch apart. 6 Bake 18 minutes or until the cookies are lightly browned. Transfer the cookies to wire racks to cool. Store in a tightly sealed container up to 2 weeks. Sprinkle with confectioner's sugar before serving. From "1,000 Italian Recipes." Copyright 2004 by Michele Scicolone. • To make the dough, heat the milk in a saucepan until lukewarm. Pour the milk into the bowl of a mixer. Add the yeast and 1/2 teaspoon of the sugar and let it become very foamy, about 10 minutes. Beat in the butter and the egg yolks one at a time until combined. Mix in the remaining 5 Tablespoons of sugar, lemon zest and sour cream and beat until combined.
  • *You could make the entire dough by hand by mixing the ingredients with a wooden spoon and then working the dough with your clean hands. It is a good warm workout. If doing by hand knead until the dough is smooth and doesn’t stick to your hands anymore. Then follow rest of the directions.
  • Slowly add in the flour one cup at a time. Mix together on medium-low speed stopping the machine to scrape down the sides of the bowl and incorporate the flour. Slowly add the rest of the flour and mix until combined. Stop the machine as you add each cup of the flour to scrape the sides of the bowl and incorporate the flour. Mix on low speed until dough is incorporated. The dough should be soft and supple. If it is still a bit sticky, add flour 1 Tablespoon at a time.
  • Take dough out of the mixer and form the dough into a ball. Place into a bowl oiled with vegetable oil (when I put the dough in the bowl I swish the dough around the bottom of the bowl and then flip it over so all of the dough is covered in a light film of oil).
