1 5/8 kg chicken, skinned, excess fat removed and cut into pieces, giblets reserved (3 1/2 lb)
1 teaspoon coriander seed, freshly ground
1/4 teaspoon cayenne pepper
1/2 teaspoon cumin, ground
1/2 teaspoon black pepper, ground
salt
175 g onions, thinly sliced (6 oz)
6 -10 cloves garlic, whole (to taste)
2 bay leaves
10 fresh figs
250 ml mavrothaphne (8 fl oz) or 250 ml ruby port (8 fl oz)
lemon, juice and zest of, finely grated
15 g flat leaf parsley, finely grated

Steps:

  • Arrange the chicken pieces and giblets in a heavy roasting dish.
  • Sprinkle with the spices and salt and massage into the flesh.
  • Distribute the onions, garlic, bay leaves and figs over and between the chicken pieces, pour in the wine and cover.
  • Cook in an oven preheated to 180 C/350 F/Gas 4 for about 50 minutes, until the chicken is barely tender.
  • Stir in the lemon zest and juice and return to the oven until almost falling from the bones - another 10-I5 minutes.
  • If there is an excess of liquid, leave off the cover for this part of the cooking.
  • Sprinkle with parsley and serve with saffron

Zest from one organic orange (optional)

Steps:

  • Place figs in a glass or ceramic bowl and pour wine over to cover. Cover bowl with plastic wrap and refrigerate for at least 24 hours or up to 1 week, until figs are soft and plump. Drain and toss with orange zest, if desired.

This is a dish inspired by my summers in California, a unique dessert using an elegant fruit. I roast the figs in a red wine glaze and add a dollop of ice cream for a decorative finish. It's a fun dish to make and a beautiful dish for entertaining.

1 bottle (750 ml) red wine, dry
1 cup sugar, granulated
1/4 cup honey
1/4 teaspoon black peppercorns
1 star anise pod, whole
1 teaspoon fennel pollen (optional), you can add a handful of fennel fronds if you can't find the pollen
2 pints figs, fresh, preferably Black Mission, Kadota or Candy Stripe
9 lemon verbena leaves, if lemon verbena is not available, fresh thyme or sweet basil are good substitutions
Ice cream or sweetened mascarpone, to serve with the figs

Steps:

  • Preheat the oven to 375 degrees F. In a nonreactive metal saucepan, combine the red wine, sugar, honey, peppercorns, star anise and fennel pollen (or fennel fronds). Bring to a rolling boil, lower to a simmer until the liquid is reduced by half, about 15 to 20 minutes.While the wine liquid is coming to a simmer, prepare the figs for roasting. With a small paring knife, trim and discard the tough stems and make a small incision down the middle of the fig. Stud each fig with a sliver of lemon verbena.Once the wine has come to a boil, reduce the heat to a low simmer, and let it reduce for about 15 to 20 minutes. Place the prepared figs in a tightly packed, single layer in a deep baking dish.
  • After the liquid has reduced by half, remove from the heat and pour through a fine mesh strainer into a bowl. Discard Solids. Cover liquid with plastic wrap and let cool for 20 minutes. Return the liquid to the same saucepan, and put it back on the heat. Bring it to a simmer, and let it reduce for another 15 minutes.Glaze the figs with the reduced liquid and place the pan in the oven. Roast for 30 to 35 minutes.
  • Remove the figs from the oven and serve warm with sweetened whipped cream, ice cream or mascarpone cheese.

1 1/2 pounds soft dried Mission figs, hard stem ends discarded
2 cups dry red wine
1/2 cup sugar
3 (3- by 1-inch) strips fresh orange zest, removed with a vegetable peeler
2 (3- by 1-inch) strips fresh lemon zest, removed with a vegetable peeler
Accompaniments:Mahón cheese ice cream Sherry vinegar syrup

Steps:

  • Put oven rack in middle position and preheat oven to 350°F.
  • Put figs in a 3-quart shallow glass or ceramic baking dish. Bring wine with sugar and zests to a boil in a 1-quart heavy saucepan, stirring until sugar is dissolved, then pour over figs (figs will not be covered by liquid). Bake figs, uncovered, stirring occasionally, until figs have absorbed about two thirds of liquid and are very tender but still hold their shape, 50 to 60 minutes.
  • Put a sheet of parchment directly on figs, pressing them into liquid, then let stand at room temperature 1 hour.
  • Serve figs with a bit of their juices and small scoops of ice cream, all drizzled with Sherry vinegar syrup.
  • Figs can be made 1 week ahead and chilled, covered. Bring to room temperature before serving.

fresh red raspberries (to garnish) (optional)
1/2 cup whipping cream, whipped with a little sugar (optional)

Steps:

  • Preheat oven to 350°F.
  • Prick each fig with a fork in a few places and place them in a single layer standing on end in a shallow baking dish.
  • Pour wine over.
  • Bake, basting often with wine, until figs are puffed and tender, 25-30 minutes.
  • To serve, arrange 3 figs in a serving dish.
  • Spoon a little of the wine over and drizzle each serving with 1/2 teaspoon of honey, or more, to taste.
  • Garnish with raspberries and pass the whipped cream.

1 package (10 ounces) dried Calimyrna figs, (1 1/2 cups, packed)
1 bottle (3 cups) red wine
1/3 cup sugar
Zest of 1 orange

Steps:

  • In a medium saucepan, combine all ingredients and bring to a boil, stirring occasionally. Reduce heat; simmer, covered, until figs are easily pierced with the tip of a sharp paring knife, 45 minutes to 1 hour.
  • With a slotted spoon, transfer figs to a bowl; simmer remaining liquid until reduced to about 1/3 cup, 3 to 5 minutes (liquid should look syrupy and coat the back of a spoon). Pour through a fine-mesh sieve over figs, and let cool slightly. (If refrigerating, bring to room temperature before serving.) Serve figs and syrup over ice cream or whipped ricotta cheese, if desired.

1/4 cup hazelnuts
1/4 cup honey
1/4 cup scotch or 1/4 cup other whiskey
8 large fresh figs or 12 small fresh figs
butter-flavored cooking spray
mint sprig (to garnish) (optional)

Steps:

  • Toast hazelnuts in a 400-degree oven for 5 minutes. Put them in a tea towel and rub them against each other to remove skins. Chop and set aside. Raise oven temperature to 500 degrees F.
  • Combine honey and Scotch whiskey in a small sauce pan and bring to a boil, stirring. Turn off heat.
  • Meanwhile, cut off stems of figs then cut in half, lengthwise. Spray an gratin dish large enough to hold all the figs in one layer with butter-flavor spray. Put in figs, cut side up. Drizzle with honey-Scotch mixture. Sprinkle with hazelnuts.
  • Bake 7 to 10 minutes, depending on size, or just until they soften but are not falling apart. Cool to warm and put 4 to 6 fig halves on each of 4 serving plates. Spoon pan juices over figs. If desired, put a mint sprig in the middle.
