Steps:
- Preheat oven to 550 degrees F, with pizza stone set on middle rack while the oven preheats.
- Toss or roll the dough into a flat, round shape, approximately 10-inches in diameter.
- Spread the mozzarella and 1 tablespoon of the parmesan or romano cheese over the center of the pizza dough, leaving uncovered a ring of approximately 1-inch around the edge.
- Add the caramelized onions, spreading them over the cheese. Sprinkle the remaining tablespoon of parmesan or romano cheese.
- Slide the pizza onto the stone in the oven, either directly or using a pizza tray/cookie sheet. Bake for approximately 8 minutes until the crust is browning and the center bubbles. If you notice that bubbles develop on the ring of crust without cheese and onions, you should press them down or puncture them with a fork or knife. This keeps them from burning before the pizza is fully baked.
- Once you remove the pizza from the oven, slice it into wedges for serving.

Steps:
- If you are using fresh store-bought or homemade dough that has been refrigerated, set it out on a lightly floured surface and let it rest for 30 minutes before making your pizza. (The gluten in the dough will relax as it comes to room temperature and the pizza will be easier to work with.)
- Caramelize onions: Heat a large skillet with olive oil (portion for onions) and butter over medium-high heat. Add onions and saute for about 5 minutes to get them started cooking. Sprinkle onions with salt and sugar (if using). Once the onions have softened slightly, reduce the heat to low-medium and continue to cook onions, stirring often, until they are dark golden brown and super tender, 30 to 50 minutes. (Note: To prevent burning, add a splash of water to the pan if the onions start to dry out or look like they may burn.)
- Heat Oven: Preheat the oven to 500°F / 260°C. (If using a pizza stone, make sure the stone is in the oven as it heats.)
- Prepare pizza dough by stretching it out on a sheet pan or on the counter (if you are using a pizza stone / pizza peel).
- First Bake (5 minutes): Bake the pizza dough for 5 minutes without any toppings. This gives the crust a head start on getting a nice golden brown color and will help it to hold up to the toppings.
- Remove the pizza from the oven and brush the entire surface with olive oil (portion for the pizza). Top with onions, rosemary, and cheese.
- Second Bake (10 minutes): Bake pizza until crust is golden brown and cheese is melted, 10 to 14 minutes.
- Slice and serve.
CARAMELIZED ONION AND GORGONZOLA PIZZA
Steps:
- Put the onions, olive oil, and sugar into a skillet over medium heat and cook, stirring frequently, until the onions are wilted and brown, about 15 to 20 minutes. Reduce the heat if the onions are browning too quickly. Set aside to cool a bit.
- Heat the oven to 450 degrees F.
- Spread half the tomato sauce onto 1 of the crusts. Top with half the caramelized onions and half the mozzarella. Repeat with the other crust. Bake the pies until the mozzarella is browned and bubbling, about 10 to 15 minutes. As soon as the pies come out of the oven, sprinkle over the gorgonzola. Slice and serve.

Steps:
- In a large skillet, melt the butter over medium heat. Add the onions and salt and pepper if using, and cook, stirring occasionally, until softened and just beginning to brown about 30 minutes.
- Add the sugar, reduce the heat to medium low, and cook, stirring frequently, for another 20 minutes, until the onions are soft and nicely browned. Keep a close eye on the heat, and lower it a bit if the onions on the bottom of the pan starts to burn. If the onions start to stick you can add a tablespoon or two of water and give it a stir; repeat as needed. Taste and adjust the seasonings. Let cool slightly.
- Preheat oven to 425°F. Blend the ricotta, Grana Padano, oregano, anchovies and pepper together in a medium bowl. Press the dough out into a rectangle, letting it rest between shaping. or, unroll the pizza dough right on its parchment paper onto a rimmed baking sheet. Spread the ricotta mixture over the dough, leaving a ½-inch border.
- Sprinkle half of the grated mozzarella and half of the grated fontina evenly over the ricotta. Spread the caramelized onions evenly over the cheese, then sprinkle the rest of the grated mozzarella and fontina over the onions. Bake until the edges of the crust golden brown and when a spatula is slid under the tart it lifts up firmly, about 22 to 26 minutes.
- Distribute the chives over the pizza, if desired. Serve warm or at room temperature, cut into squares.

- The night before, combine the flour, salt, and yeast in a bowl. Stir to combine. Add just enough water to make the mixture form a ball of dough with no dry flour left on the bottom of the bowl. This will be around 3/4 cup of water. Loosely cover the bowl and allow the dough to rest at room temperature for 12-18 hours.
- The next day, about an hour and a half before you plan to eat, thinly slice three small (or 2 medium/large) yellow onions. Saute the onions in a skillet over medium-low heat with 2 tablespoons of olive oil for about 45 minutes, stirring the mixture every 2-3 minutes. The end result should be deep golden brown, soft, sweet onions. For a more detailed, step by step photo tutorial on how to caramelize onions, check here.
- While the onions are cooking, slice the mushrooms. Take the caramelized onions out of the skillet and add the mushrooms, along with a pinch of salt and pepper and the dried thyme. There should be some residual oil in the skillet to cook the mushrooms, if not add a tad more. Cook the mushrooms until all of the moisture has evaporated away (about 10 minutes over medium heat).
- While the mushrooms are cooking, prepare the cream sauce. Mince a clove of garlic and add it to a pot with 1 tablespoon of butter. Saute over medium heat until softened (about 2 minutes). Next, add the cream cheese, milk, and 1/4 teaspoon of salt. Heat and whisk this mixture until a smooth sauce forms (about 5 minutes).

- Halve both onions through root end. Using the tip of your knife, cut a V-shaped notch around root to remove it (this will ensure that all slices separate when you cut the onion).
- Place 1 onion half on your cutting board so root end is facing you, then thinly slice onion lengthwise, starting at one side and working all the way to the other (so your knife runs through the root halfway through, not starting or ending at the root end). You’re going for slices that are ¼"–⅛" thick.
- Repeat same slicing procedure for remaining onion halves. It’s a lot of onion! But it will cook down quite a bit, so it’s best to start with a large quantity.
- Heat 2 Tbsp. butter in a large saucepan over medium until melted and sizzling. You can use a skillet to cook the onions, but a pan with high sides will keep the onions from flipping out onto your stove. Using a pan that also has a wide base gives water room to evaporate, allowing the onions to caramelize rather than steam.

- Preheat oven to 450 degrees Fahrenheit. Prepare the pizza crust according to the linked recipe above. Add homemade vegan mozzarella cheese overtop. Spread with a spoon or spatula leaving about a half inch of space around the edges of the crust. You may not need all of it depending upon how cheesy you want it. If there is leftover cheese, the cheese keeps well for up to five days in the refrigerator in an airtight container.
- Drizzle with olive oil and brush the olive oil overtop the entire layer of cheese. Bake for 10 minutes. I like to broil the pizza at 500 degrees Fahrenheit for the last 2 minutes or so of baking to give it a nice golden brown char. If you do, just watch it closely to avoid burning the cheese.
- Top with caramelized onions and chopped/smashed garlic. Bake for another 5 minutes at 450 degrees to allow the flavors of the onions and garlic infuse into the cheese.
- Remove the cast iron skillet pizza from the oven, top with any additional desired garnishes such as fresh basil, vegan parmesan cheese and/or crushed red pepper flakes. Slice and enjoy while hot. This recipe is best enjoyed the day it is made.

- Heat a tablespoon of olive oil in a medium skillet over medium heat. Add the baby spinach and saute until just wilted. Transfer the spinach to a strainer and using the bottom of a glass, press out some of the excess liquid from the spinach, set aside.
- Add another tablespoon of olive oil to the same skillet and saute the mushrooms for 3-4 minutes or until they brown just barely. Season with a little salt and pepper, remove to a plate.
- Add the last tablespoon of olive oil to the skillet set over medium heat. Add the onions and season them with a small pinch of salt. Allow the onions to cook down for 10 minutes, stirring as necessary. Do not allow the onions to brown. Add the sugar and stir to coat evenly. Allow the onions to cook for another 10 minutes. When the onions have cooked down, add the balsamic vinegar and stir to combine, set aside.
- Position a rack in the center of the oven and preheat the oven to 475ºF. Flatten the pizza dough into a 12-inch circle. Create a lip or rim by thickening the dough around the crust portion. This keeps the sauce in instead of running over the sides. Transfer dough carefully to a parchment lined baking sheet. Let dough rest for 10-15 minutes.

HOW TO CARAMELIZE ONIONS | ALLRECIPES
From allrecipes.com
Estimated Reading Time 4 mins
- Choose Your Onions. I usually use yellow onions, but white or purple will also work. The amount of onions to caramelize is up to you. I find that two to three work well for a large skillet.
- Slice Your Onion. Cut the stem and root ends off the onion. Then halve the onion and cut it into thin slices. The onion should then naturally separate into half-rings.
- Melt Butter in a Skillet. Add three to four tablespoons of fat to a large skillet over medium heat. Butter and olive oil both work well. I like to use a combination of the two, as the butter adds rich flavor and the oil can tolerate higher temperatures without burning.
- Add the Onions and a Pinch of Salt. The salt will season the onions, but it will also help pull out some of the moisture and move the process right along.
- Deglaze. If the onions stick to the bottom of the pan, deglaze with a tablespoon of red wine vinegar, balsamic vinegar, or wine. I usually stick with balsamic vinegar because the flavor complements the onions perfectly.

- Lightly spoon 1 1/2 cups all-purpose flour into a dry measuring cup; level with a knife. Combine 1 1/2 cups all-purpose flour, 1/2 cup bread flour, and salt in a large bowl, stirring with a whisk.
- Make a well in center of mixture. Add yeast mixture to flour mixture; stir well. Turn dough out onto a lightly floured surface. Knead until smooth and elastic (about 10 minutes); add enough of remaining all-purpose flour, 1 tablespoon at a time, to prevent dough from sticking to hands (dough will feel tacky).
- Place dough in a large bowl coated with cooking spray, turning to coat top. Cover and let rise in a warm place (85º), free from drafts, 45 minutes or until doubled in size. (Gently press two fingers into dough. If indentation remains, the dough has risen enough.) Punch dough down; cover and let rest 20 minutes.
