⅛ cup butter
2 large Vidalia onions, thinly sliced
2 teaspoons sugar
1 (10 ounce) package refrigerated pizza dough
1 pound Gorgonzola cheese, crumbled

Steps:

  • In a large saute pan, melt butter over medium heat. Saute onions in butter until the onions are soft and dark brown, approximately 25 minutes. Stir in sugar, and continue cooking for 1 or 2 more minutes.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Grease a pizza pan or cookie sheet, and press out the dough to desired thickness. Spread onions evenly over the dough, and top with crumbled Gorgonzola.
  • Bake for 10 to 12 minutes, or until done.

1 ball of pizza dough
1-2 tablespoons olive oil, spread over dough
3/4 cup grated mozzarella cheese (2 ounces/60 grams)
2 tablespoons freshly grated parmesan or romano cheese, divided
1/2 cup caramelized onions (4 & 1/2 ounces/122 grams)

Steps:

  • Preheat oven to 550 degrees F, with pizza stone set on middle rack while the oven preheats.
  • Toss or roll the dough into a flat, round shape, approximately 10-inches in diameter.
  • Spread the mozzarella and 1 tablespoon of the parmesan or romano cheese over the center of the pizza dough, leaving uncovered a ring of approximately 1-inch around the edge.
  • Add the caramelized onions, spreading them over the cheese. Sprinkle the remaining tablespoon of parmesan or romano cheese.
  • Slide the pizza onto the stone in the oven, either directly or using a pizza tray/cookie sheet. Bake for approximately 8 minutes until the crust is browning and the center bubbles. If you notice that bubbles develop on the ring of crust without cheese and onions, you should press them down or puncture them with a fork or knife. This keeps them from burning before the pizza is fully baked.
  • Once you remove the pizza from the oven, slice it into wedges for serving.

1 Tbsp Extra Virgin Olive Oil
1 Tbsp Butter
1 lb Onions, sliced ((yellow, white, or red onions will work))
1/2 tsp Salt
1/2 tsp Sugar ((optional))
1 lb Pizza Dough ((use your favorite dough, store-bought or homemade))
2 Tbsp Extra Virgin Olive Oil
5 oz Gruyere Cheese, grated
1 sprig Fresh Rosemary, leaves chopped

Steps:

  • If you are using fresh store-bought or homemade dough that has been refrigerated, set it out on a lightly floured surface and let it rest for 30 minutes before making your pizza. (The gluten in the dough will relax as it comes to room temperature and the pizza will be easier to work with.)
  • Caramelize onions: Heat a large skillet with olive oil (portion for onions) and butter over medium-high heat. Add onions and saute for about 5 minutes to get them started cooking. Sprinkle onions with salt and sugar (if using). Once the onions have softened slightly, reduce the heat to low-medium and continue to cook onions, stirring often, until they are dark golden brown and super tender, 30 to 50 minutes. (Note: To prevent burning, add a splash of water to the pan if the onions start to dry out or look like they may burn.)
  • Heat Oven: Preheat the oven to 500°F / 260°C. (If using a pizza stone, make sure the stone is in the oven as it heats.)
  • Prepare pizza dough by stretching it out on a sheet pan or on the counter (if you are using a pizza stone / pizza peel).
  • First Bake (5 minutes): Bake the pizza dough for 5 minutes without any toppings. This gives the crust a head start on getting a nice golden brown color and will help it to hold up to the toppings.
  • Remove the pizza from the oven and brush the entire surface with olive oil (portion for the pizza). Top with onions, rosemary, and cheese.
  • Second Bake (10 minutes): Bake pizza until crust is golden brown and cheese is melted, 10 to 14 minutes.
  • Slice and serve.

1/2 cup tomato sauce
2 prepared pizza crusts
1 cup grated mozzarella

Steps:

  • Put the onions, olive oil, and sugar into a skillet over medium heat and cook, stirring frequently, until the onions are wilted and brown, about 15 to 20 minutes. Reduce the heat if the onions are browning too quickly. Set aside to cool a bit.
  • Heat the oven to 450 degrees F.
  • Spread half the tomato sauce onto 1 of the crusts. Top with half the caramelized onions and half the mozzarella. Repeat with the other crust. 1 tablespoon unsalted butter
3 large yellow onions (about 1 1/2 pounds halved lengthwise, and thinly sliced)
½ teaspoon Kosher salt
Freshly ground pepper (to taste)
½ teaspoon sugar
1 cup fresh ricotta (preferably whole milk)
½ cup finely grated Grana Padano cheese
2 teaspoons minced fresh oregano (or 1 teaspoon dried)
2 anchovies (rinsed and very finely minced into almost a paste (optional))
Freshly ground pepper (to taste)
1 pound pizza dough, or 1 package refrigerated pizza dough
2 cups grated fresh mozzarella
1 cup grated Fontina Cheese
Snipped chives (to serve, optional)

Steps:

  • In a large skillet, melt the butter over medium heat. Add the onions and salt and pepper if using, and cook, stirring occasionally, until softened and just beginning to brown about 30 minutes.
  • Add the sugar, reduce the heat to medium low, and cook, stirring frequently, for another 20 minutes, until the onions are soft and nicely browned. Keep a close eye on the heat, and lower it a bit if the onions on the bottom of the pan starts to burn. If the onions start to stick you can add a tablespoon or two of water and give it a stir; repeat as needed. Taste and adjust the seasonings. Let cool slightly.
  • Preheat oven to 425°F. Blend the ricotta, Grana Padano, oregano, anchovies and pepper together in a medium bowl. Press the dough out into a rectangle, letting it rest between shaping. or, unroll the pizza dough right on its parchment paper onto a rimmed baking sheet. Spread the ricotta mixture over the dough, leaving a ½-inch border.
  • Sprinkle half of the grated mozzarella and half of the grated fontina evenly over the ricotta. Spread the caramelized onions evenly over the cheese, then sprinkle the rest of the grated mozzarella and fontina over the onions. Bake until the edges of the crust golden brown and when a spatula is slid under the tart it lifts up firmly, about 22 to 26 minutes.
  • Distribute the chives over the pizza, if desired. Serve warm or at room temperature, cut into squares.
