English Cookie Bars image

Dense bar cookies with a hint of coffee flavor. Nicely spiced with cinnamon and nutmeg.

½ cup butter, softened
2 cups brown sugar
2 eggs
½ cup applesauce
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 cup cold coffee
1 cup chopped pecans
1 cup raisins

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13 inch pan.
  • In a large bowl, mix together the butter, brown sugar, eggs and applesauce. Combine the flour, baking powder, baking soda, cinnamon and nutmeg; stir into the batter alternately with the cold coffee. Finally, mix in the raisins and pecans. Spread the batter evenly into the prepared pan.
  • Bake for 15 to 20 minutes in the preheated oven, or until lightly browned. Cool and cut into bars.

low sodium keebler Club crackers
1 cup butter, not margarine
1 cup brown sugar, tightly packed
6 ounces semisweet chocolate morsels
6 ounces finely chopped walnuts

Steps:

  • Preheat oven to 350°.
  • Line a cookie sheet or jellyroll pan with aluminum foil.
  • Line pan tightly with crackers broken into fourths.
  • In a large saucepan bring butter and brown sugar to a boil.
  • Let boil for 3 minutes, stirring occasionaly.
  • Spread butter/sugar mixture evenly over crackers.
  • Bake for 350° for 5 minutes.
  • They are done when crackers appear to be floating.
  • Sprinkle with semi sweet morsels.
  • Spread evenly as they melt, if not melting well, return pan to oven briefly.
  • Sprinkle walnuts over chocolate and press firmly.
  • Refrigerate until hard.
  • Peel foil from cookies and break apart into separate pieces.

24 unsalted saltine crackers
1 cup butter
1 cup firmly packed light brown sugar
1/2 teaspoon vanilla extract
1 (6 ounce) package semisweet chocolate morsels
pecan halves

Steps:

  • Preheat oven to 375°.
  • Butter a 13x9 baking pan.
  • Arrange saltines right side up in a single layer in pan.
  • Melt butter and sugar over medium heat.
  • Bring to boil, boil 3 minutes stirring occasionally.
  • Remove from heat.
  • Stir in vanilla.
  • Pour over crackers, spread evenly with spatula.
  • Bake for 5 minutes, if crackers move, rearrange with a fork.
  • Cool for about 10 minutes.
  • Sprinkle chocolate morsels over top.
  • Let stand about 5 minutes the evenly spread over top.
  • Cool completely, then cut in 2x1 inch bars.
  • Place a pecan half over each piece.
  • Store in refrigerator.

2 cups flour
1 cup light brown sugar, packed
1 cup butter or 1 cup margarine
1 egg yolk, lightly beaten
1 teaspoon vanilla
6 milk chocolate candy bars (1.65oz)
1 cup coarsely chopped nuts

Steps:

  • In large bowl, combine flour and sugar. With pastry blender or 2 knives, use in scissor fashion, cut in butter until mixture resembles coarse crumbs. Combine egg yolk and vanilla. Add to crumb mixture, stirring until dough holds together. Press into 15x20-inch jellyroll pan. Bake 15-20 minutes at 350F until lightly browned.
  • Remove from oven and immediately place chocolate bars over hot cookies. Let stand until chocolate is softened. Spread chocolate evenly over dough, then sprinkle with walnuts. Cool completely on wire rack. Cut into bars.

1 cup packed light brown sugar
1/2 cup butter
1 cup pecan halves
1 cup hershey's milk chocolate chips
2/3 cup butter
1/3 cup packed light brown sugar

Steps:

  • Heat oven to 350°F
  • Combine flour and brown sugar in large bowl. With pastry blender or fork, cut in butter until fine crumbs form (a few large crumbs may remain). Press mixture onto bottom of ungreased 13x9x2-inch baking pan. Sprinkle pecans over crust.
  • Prepare TOFFEE TOPPING: Combine 2/3 cup butter and 1/3 cup packed light brown sugar in small saucepan; cook over medium heat, stirring constantly, until mixture comes to a boil. Continue boiling, stirring constantly, 30 seconds. Use immediately. Drizzle evenly over pecans and crust.
  • Bake 20 to 22 minutes or until topping is bubbly and golden; remove from oven. Immediately sprinkle milk chocolate chips evenly over top; press gently onto surface. Cool completely in pan on wire rack. Cut into bars. About 36 bars.
