MULLED CIDER
This is a classic warmer-upper that you can serve on chilly winter days. Pass the brandy separately for those who want it.

Steps:
- Place the cinnamon stick, cloves, allspice and bay leaf on a double thickness of cheesecloth; bring up corners of cloth and tie with kitchen string to form a bag. , In a large saucepan, combine the apple cider, juices, orange zest, brown sugar, salt and spice bag. Bring to a boil. Reduce heat to medium-low and simmer mixture for 30 minutes to blend flavors. Discard spice bag. Strain cider mixture and stir in brandy if desired. Serve immediately.

MULLED CIDER ("WASSAIL")
An old-fashioned Mulled Cider recipe makes the perfect fall and winter beverage!

Steps:
- Combine all of the ingredients in a large pot and bring to a boil. Reduce the heat to low; simmer for 20 minutes. Ladle into mugs and serve warm. If you want to strain off bits of spices and fruit that are floating in the cider, you can pour the liquid through a fine mesh sieve or cheesecloth before serving.

- Place all ingredients in a large saucepan and bring to a simmer on the grates of the grill or over a burner. Divide among individual mugs and serve hot.

MULLED CIDER
Steps:
- Boil the cider to 175 degrees F.
- Add the cloves, cinnamon sticks, star anise and orange zest. Remove from the heat and add the maple syrup. Stir.
- Strain the cider into mugs. Garnish with orange wedges studded with cloves.
EASY MICROWAVE MULLED "APPLE CIDER"
Adapted from a stovetop recipe in an old Pleasant Company (Yes, as in American Girl) cookbook called "Great Girl Food". Simple to make, and good for when you want a quick, warming drink! I should note that the sugar HAS to be brown. The molasses in brown sugar adds an extra needed touch of spice. The spice mixture will also leave a bit of grit behind in the mug if you don't stir it around every once in a while as you're drinking it. I wish I could come up with a way to fix that, but so far I haven't thought of one yet.

- Combine all ingredients in a microwave safe mug.
- Place mug in microwave and cook on HIGH for 1-2 minutes, depending on the wattage of your microwave. You may have to wait for a minute or so before you drink it, because it will be hot.
- Enjoy your "cider"! TIP: this tastes even better with a little caramel sauce stirred into it!

Steps:
- Pour the cider into a crock pot, up to about 2 inches from the top.
- Drop in cardamom, nutmeg, allspice, brown sugar, and cinnamon.
- Chop the oranges each into 4 wedges longitudinally.
- Stick 3 cloves into the skin side of each orange wedge.
- Put the cleaved and cloven oranges into the crock pot.
- If there's room, add more cider to within an inch of the top.
- Stir with a ladle.
- Cover the crock pot with a folded towel and crank it up to "high.".
- Allow to boil for at least an hour, then remove the towel and set to "low.".
- (Optional) Serve with a shot of spiced rum in each mug.
