HOMEMADE PUREED SWEET POTATO BABY FOOD
A quick and easy method for providing baby food for your little one without any added preservatives, sugar, or salt. Can store cooked puree for 3 days in refrigerator or 3 months in freezer.

Steps:
- Fill a small saucepan with water; add sweet potatoes. Bring water to a boil and cook sweet potatoes until tender enough to break apart with a fork, 25 to 30 minutes.
- Transfer sweet potatoes to a food processor or an immersion blender cup, reserving the cooking water. Blend sweet potatoes until smooth. Add 1/2 to 3/4 cup cooking water and blend until desired consistency is reached.

- Place potatoes in baking dish and roll in oil and seasonings.
- Try and keep potatoes in a single layer.

WHOLE ROASTED SWEET POTATOES

- Preheat the oven to 425 degrees F.
- Wash the potatoes well and pat dry. Poke holes all around each potato using a fork.
- Rub the potatoes all over with oil, then sprinkle liberally with salt and pepper. Place the potatoes on a baking sheet or aluminum foil and roast until tender when pierced with a fork, 40 to 45 minutes.
- Transfer the potatoes to a plate and serve with shaved Parmesan and a drizzle of olive oil.
ROASTED SWEET POTATOES
Steps:
- Preheat the oven to 350 degrees F.
- Put the sweet potato halves in a large bowl and set aside. In a small saucepan, melt the butter over low heat. Add the sugar and allspice and stir until melted and combined. Pour the spiced butter over the potatoes. Season with salt and pepper. Toss to coat. Put the potatoes on a rimmed baking sheet.
- Roast until the potatoes are tender, turning once, about 45 minutes depending on the size of the potatoes. Transfer to a warmed platter and drizzle over any accumulated pan juices. Taste and adjust for seasoning with salt and pepper. Serve immediately.

- Place racks in upper and lower thirds of oven; preheat to 400°F. Cut potatoes in half lengthwise and divide between 2 rimmed baking sheets. Drizzle with oil and season all over with salt. Rub sweet potatoes with your hands to evenly coat, then arrange cut side down. Roast potatoes, rotating baking sheets top to bottom halfway through, until fork-tender, 25-35 minutes (depending on their size, some may be done before others; test each one every 5 minutes after the 25-minute mark).

- Put the potatoes into a large bowl.
- In a small bowl, whisk the herbs, garlic, and oil together until blended.
- Pour over the potatoes. Sprinkle generously with salt and pepper, then toss to coat.
- Transfer the potatoes to a large heavy baking dish, spacing them evenly apart.
- Roast the potatoes until they are tender and golden, turning them occasionally with tongs for approx 1 hour.
