2 cans (10-3/4 ounces each) condensed cream of celery soup, undiluted
2 cups sour cream
10 bacon strips, cooked and crumbled, divided
6 green onions, thinly sliced
Chopped chives and coarse cracked pepper, optional

Steps:

  • Place potatoes in a 3-qt. slow cooker. Combine the remaining ingredients, reserving 1/3 cup bacon crumbles; pour over potatoes and mix well. Cover and cook on high for 4-5 hours. Top with reserved bacon and if desired, chopped chives and coarse cracked pepper.

1 (3 ounce) package cream cheese
1 (8 ounce) package sour cream
1 (8 ounce) jar processed cheese spread
1 (10 3/4 ounce) can cream of mushroom soup, undiluted
1/8 teaspoon seasoning salt
buttered breadcrumbs (optional)

Steps:

  • Cook potatoes in boiling water 15 to 20 minutes or until tender.
  • Drain and set aside.
  • Combine cream cheese, sour cream, cheese spread, soup and seasoned salt in a saucepan, cook over low heat until mixture is thoroughly heated, stirring often.
  • Pour over potatoes, mixing well.
  • Spoon into a greased 2 1/2 quart casserole dish.
  • Sprinkle with breadcrumbs, if desired.
  • Bake at 350 degrees for 20 to 25 minutes.

5 pounds small red potatoes
½ cup olive oil, or more as needed
8 large cloves garlic, minced
1 ½ teaspoons salt
¾ teaspoon ground black pepper
2 tablespoons chopped fresh parsley

Steps:

  • Place potatoes into a very large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 40 minutes. Drain.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Arrange potatoes close together in a 9x13-inch baking dish. Use a fork to press about 1 inch deep in the center of each potato until inner flesh is exposed.
  • Whisk 1/2 cup olive oil, garlic, and salt together in a small bowl to blend. Drizzle over potatoes.
  • Bake in the preheated oven, basting occasionally with the oil mixture, until potatoes are crisp and brown on top, about 1 hour 10 minutes. Add additional oil if potatoes seem dry.
