250g digestive biscuits
100g butter, melted
1 vanilla pod
600g full fat soft cheese
100g icing sugar
284ml pot of double cream
400g punnet of strawberries, halved
25g icing sugar

Steps:

  • To make the base, butter and line a 23cm loose-bottomed tin with baking parchment. Put the digestive biscuits in a plastic food bag and crush to crumbs using a rolling pin. Transfer the crumbs to a bowl, then pour over the melted butter. Mix thoroughly until the crumbs are completely coated. Tip them into the prepared tin and press firmly down into the base to create an even layer. Chill in the fridge for 1 hr to set firmly.For more detail on how to make a biscuit base, take a look at our how to make a biscuit base video.
  • Slice the vanilla pod in half lengthways, leaving the tip intact, so that the two halves are still joined. Holding onto the tip of the pod, scrape out the seeds using the back of a kitchen knife.
  • Pour the double cream into a bowl and whisk with an electric mixer until it's just starting to thicken to soft peaks. Place the soft cheese, icing sugar and the vanilla seeds in a separate bowl, then beat for 2 mins with an electric mixer until smooth and starting to thicken, it will get thin and then start to thicken again. Tip in the double cream and fold it into the soft cheese mix. You're looking for it to be thickened enough to hold its shape when you tip a spoon of it upside down. If it's not thick enough, continue to whisk. Spoon onto the biscuit base, starting from the edges and working inwards, making sure that there are no air bubbles. Smooth the top of the cheesecake down with the back of a dessert spoon or spatula. Leave to set in the fridge overnight.
  • Bring the cheesecake to room temperature about 30 mins before serving. To remove it from the tin, place the base on top of a can, then gradually pull the sides of the tin down. Slip the cake onto a serving plate, removing the lining paper and base. Purée half the strawberries in a blender or food processor with the icing sugar and 1 tsp water, then sieve. Pile the remaining strawberries onto the cake, and pour the purée over the top.

¼ cup white sugar
2 teaspoons ground cinnamon
⅓ cup butter, melted
2 (10 ounce) packages frozen sweetened sliced strawberries, thawed and drained
1 tablespoon cornstarch
3 (8 ounce) packages cream cheese, softened
1 (14 ounce) can sweetened condensed milk
¼ cup lemon juice
½ teaspoon vanilla extract
3 eggs
1 tablespoon water

Steps:

  • Combine graham cracker crumbs, sugar, cinnamon, and butter in a bowl. Press onto the bottom of an ungreased 9-inch springform pan. Refrigerate for 30 minutes.
  • Preheat oven to 300 degrees F (150 degrees C).
  • Place strawberries and cornstarch into a blender. Cover and puree until smooth. Pour strawberry sauce into a saucepan.
  • Bring to a boil over high heat. Boil and stir until sauce is thick and shiny, about 2 minutes. Set aside 1/3 cup strawberry sauce; cool. Cover and refrigerate remaining sauce for serving.
  • Beat cream cheese in a mixing bowl with an electric mixer until light and fluffy; gradually beat in condensed milk. Mix in lemon juice and vanilla extract, then beat in eggs on low speed until just combined. Pour half of cream cheese mixture over crust; drop half of reserved strawberry sauce by 1/2 teaspoonfuls on cream cheese layer. Carefully spoon remaining cream cheese mixture over sauce; drop remaining strawberry sauce by 1/2 teaspoonfuls on top. Cut through top layer only with a knife to swirl strawberry sauce.
  • Bake in preheated oven until center is almost set, 45 to 50 minutes. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Serve reserved strawberry sauce with cheesecake. If the sauce it too thick, stir in water.

2 cups graham cracker crumbs
3 Tablespoons sugar
5 Tablespoons unsalted butter-melted
1/8 teaspoon salt
2 lbs. full fat cream cheese-softened to room temperature
1½ cups sugar
¼ tsp. salt
2 teaspoons vanilla extract
1 Tablespoon fresh lemon juice
1 Tablespoon cornstarch
4 eggs-room temperature
1 cup sour cream- room temperature
1 lb. fresh strawberries-diced
6 Tablespoons sugar
1 Tablespoon fresh lemon juice
½ teaspoon vanilla

Steps:

  • Preheat the oven to 350 F and place the rack in lower third.
  • Place double layer of extra-large aluminum foil under your 9 inch springform pan and cover the bottom and sides of the pan, wrap it tightly around the sides to make sure no water gets in during baking in water bath.
  • To make the crust mix together graham cracker crumbs, sugar, melted butter and salt. Press the mixture into the bottom and sides of springform pan. Bake for 10-12 mins, then set aside to cool.
  • Turn down the oven temperature to 325 F!!!
  • To make the filling beat softened cream cheese until smooth and creamy.
  • Gradually beat in sugar until light and fluffy. Then, beat in salt, vanilla, lemon juice and cornstarch.
  • Beat in eggs one at a time running your mixer on low speed and just slowly combine ingredients until smooth. You don't want to incorporate a lot of air into the batter.
  • Finally, beat in sour cream.
  • Place springform pan into roasting pan. Pour the batter into springform pan and smooth the top. Pour boiling water in roasting pan halfway up the side of the springform pan make sure no water drip on the batter.
  • Place in the oven and bake at 325 F for 1 hour and 40-50 minutes.
  • When the cheesecake is baked let it sit in the oven with the door slightly open for 1 hour (don't forget to turn off the oven!!!)
  • Remove the cheesecake from the water bath, dry the bottom of the pan, run a thin knife around the edges to loosen the cake and let it cool to room temperature. Cover the top and place it in the fridge to chill for at least 5 hours or overnight before you add strawberry topping. When the cake is cooled, run a thin knife around the cake and release the ring from springform pan. Transfer the cake onto serving plate.

  • Make cheesecake mixture: In a large bowl using a hand mixer, beat cream cheese and sugar until combined. Add eggs and beat until combined, then add sour cream, vanilla and lemon zest.
  • Make crust: Stir together graham cracker crumbs, butter, sugar, and salt until completely moist. Spray a 9" springform pan with cooking spray and press graham mixture into prepared pan until packed. Pour cheesecake mixture over crust.

1 3/4 cups graham cracker crumbs
5 tablespoons granulated sugar
6 tablespoons melted butter
40 ounces cream cheese (at room temperature (5-8 oz. packages; 2 1/2 lbs total))
1 1/4 cups granulated sugar
1/2 cup sour cream (at room temperature)
2 teaspoons vanilla extract
4 large eggs (at room temperature)
2 pounds fresh strawberries (divided)
3 tablespoons granulated sugar
1/4 cup water
1/2 teaspoon vanilla extract

Steps:

  • Place oven racks in the center of the oven. Preheat oven to 350 degrees.
  • In a medium-sized bowl, stir graham cracker crumbs together with sugar and melted butter until well incorporated and the mixture looks like damp sand. Using the bottom of a measuring cup, press crust into the bottom and halfway up the sides of a 9-inch springform pan. Bake 7 minutes. Remove from the oven and set aside.
  • Reduce oven temperature to 325 degrees.
  • In a large bowl or bowl of a stand mixer, mix cream cheese 30 seconds 'til smooth. Scrape the sides and bottom of the bowl and add in granulated sugar, sour cream, and vanilla. Mix again until incorporated. Scrape the sides and bottom of the bowl and mix again briefly.
  • Crack eggs into a liquid measuring cup and using a fork, beat until well scrambled. Remove bowl from mixer and scrape the sides and bottom again, ensuring the entire mixture is smooth. If there are a few small lumps, try to fold in using the rubber scraper.
  • Once the batter is completely smooth and ready, tap the bowl on the counter for 30-45 seconds to remove as many air bubbles as possible. You should see them popping on the surface as you tap the bowl. Pour filling into the center of the graham cracker crust and gently smooth the top. It will be very full!
  • Bake for 30 minutes at 325 degrees. Reduce temperature to 250 degrees and continue cooking for 45 minutes more. Once this time has elapsed, turn the oven off and keep cheesecake inside for another 30 minutes for some carryover cooking without opening the oven door. Crack oven door to let cheesecake cool slowly for one hour before removing. At this point, cheesecake should be slightly warm. Bring cheesecake to room temperature on the counter (3-4 hours) before covering with plastic wrap and transferring to the fridge.
  • Refrigerate until chilled completely (6 hours to overnight). Open springform pan and remove the collar.
  • For the Strawberry Sauce, wash and slice 1 pound of strawberries and place into a small saucepan. Sprinkle in sugar and water. Heat over medium heat and bring to a simmer. Cook strawberries for 10 minutes or until tender. Remove from heat and stir in vanilla extract. Pour into a blender and blitz until completely smooth. Chill in the freezer for 10-15 minutes in a shallow dish.
  • Wash and slice the remaining pound of strawberries and decorate the chilled cheesecake with them. (Pile them high!) Pour half of the strawberry sauce over top of the entire cheesecake.Cut into slices** and serve with remaining strawberry sauce.

200g / 7oz Arnott's Marie crackers or other plain biscuit (Aus) or 28 Graham Cracker squares ((Note 1))
120 g / 8 tbsp unsalted butter (, melted)
1 lb / 500g cream cheese (, softened (Note 2))
2 tbsp plain flour ((all purpose flour))
1 tsp vanilla extract
1/2 cup sour cream ((full fat, sub sour cream))
1 1/2 cups caster sugar (superfine sugar)
Zest of 1 lemon
3 eggs (, at room temperature)
500g / 1 lb strawberries (, half diced and half halved)
2 tbsp lemon juice OR water ((Note 3))
1/2 cup white sugar
1/2 tsp vanilla extract
1 1/2 tsp cornflour/cornstarch
2 tbsp water

Steps:

  • Preheat oven to 160C/320F (standard) or 140C/295F (fan/convection).
  • Get a 20cm/8" springform cake tin. Turn the base UPSIDE DOWN (Note 4), butter lightly and place a square piece of parchment/baking paper on the base. Then clip into the springform pan - excess paper will stick out, see photos in post and video.
  • Butter and line the side of the pan.
  • Break up biscuits roughly by hand and place in a food processor.
  • Blitz until fine crumbs (Note 5). Add butter, briefly blitz until dispersed and it resembles wet sand.
  • Pour into the prepared cake tin. Use a spatula to roughly spread it out over the base and up the walls.
  • Use something with a flat base and vertical edges (I used a measuring cup) to press the crumbs up the wall almost to the top of the sides, and flatten the base.
  • Use a mixer or beater to beat the cream cheese until just smooth, no longer than 20 seconds on speed 4. (You do not want to aerate cheesecake filling as it causes cracks when it bakes)
  • Add flour, beat for 5 seconds on speed 4 until just incorporated.
  • Add vanilla, sour cream, sugar and lemon zest. Beat until just combined (10 sec max, speed 5).
  • Add eggs one at a time, beat in between until just combined (5 sec each), and after the last one, beat just until the egg is fully incorporated.
  • Pour into prepared crust.
  • Bake for 55 minutes. The top should be a very light golden brown, not cracked, and near perfectly flat. It should jiggle slightly when you gently shake the pan.
  • Cool the cake in the oven with the door open 20 cm / 8" (Note 6), then refrigerate for 4 hours+ in the pan.
  • Remove sides. Use overhang paper to slide cheesecake off the cake pan. Then slide the cheesecake off the paper.
  • Place chopped strawberries, vanilla, sugar and lemon juices in a saucepan. Stir then bring to simmer over medium heat.
  • Simmer for 10 minutes until strawberries breakdown.
  • Mix cornflour with water, then add into saucepan and stir.
  • Add halved strawberries and cook for 1 minute to soften.
  • Sauce should be syrupy - remove from stove and cool. Will thicken as it cools.
  • Once cool, stirl. Adjust thickness to make it the right "oozing" consistency (see video, Note 7) with a tiny touch of water (be careful!).
  • Spoon onto cheesecake so it's covered with a single layer of strawberries. Flip strawberry halves so they are facedown. Refrigerate 2 hours+.
  • Slice and serve with remaining Strawberry Sauce!

3/4 cups sugar
3 eggs
1 tsp vanilla extract
1 graham cracker packaged pie crust
1 can strawberry pie filling

Steps:

  • Preheat your oven to 375°F.
  • Mix the cream cheese and sugar in a bowl. Beat with electric beater until well blended. Add in the eggs and vanilla. Pour the mixture into the pie crust making sure to level the mixture after you are done pouring it.
  • Bake for 45-50 minutes until just set. When you check the cheesecake, gently jiggle the pan. If the cheesecake moves too much like it's still gooey, you need to bake it longer.
  • Remove the cake and allow it to sit on a wire rack until completely cool. Cover and refrigerate overnight. Before serving, spread enough of the strawberry pie filling to lightly cover the cheesecake. Extra pie filling can be used for those who like a little more topping.

1 1/4 cups sweet biscuit crumbs 70g butter, melted 500g PHILADELPHIA Block Cream Cheese, softened 400g can condensed milk juice of 1 lemon 1 tablespoon gelatine, dissolved in 1/4 cup boiling water 250g punnet strawberries, roughly chopped 1/4 cup red currant jelly 2 teaspoons water sliced fresh strawberries

  • COMBINE biscuit crumbs and butter, press into base of a lined and greased 20cm spring form pan; chill. BEAT PHILADELPHIA until smooth. Add condensed milk and lemon juice and beat until smooth. Fold through the gelatine mixture and chopped strawberries. Pour into prepared base, chill 3 hours or until set. HEAT redcurrant jelly and water in the microwave for 30 seconds or until runny. Cool. Arrange sliced strawberries over the cheesecake, brush with redcurrent glaze and serve.

Steps:

  • Beat cream cheese, powdered sugar, and vanilla extract in a bowl using an electric mixer until light and fluffy. Mix in strawberries and jam to incorporate. Stir in whipped topping using a spatula. Stir in graham cracker crumbs. Freeze for 2 hours.
  • Line a baking sheet with parchment paper and set aside.

  • Put the digestive biscuits into a sandwich bag and hit with a rolling pin until you get crumbs.
  • Melt the 100g of butter and add this to the breadcrumbs
  • Place the butter and crumb mix into your tin and push down with the back of a spoon to compact the base.
  • Place this in the fridge for 1 hour to set
  • Put the soft cheese and icing sugar into a mixing bowl and mix until smooth
  • Add double cream gradually and continue to mix
  • Drain the juice from your tinned strawberries and place the strawberries into a bowl. Then using the back of a fork, mash these until they make a puree
  • Add the puree to the cheese, sugar and cream and continue to mix until this is fully mixed in
  • Spoon this mixture onto your base, ensuring to push down in order to eliminate any air bubbles.
  • Place this in the fridge overnight until set. When ready to serve, chop up some starberries to put on top and add a sprinkle of icing sugar

2 cups graham cracker crumbs
2 tbsp white granulated sugar
1/2 cup butter (melted)
4 8-ounce packages cream cheese, softened
1 1/3 cup sugar
1 tbsp vanilla extract
4 medium eggs
1 cup sour cream
1 lb strawberries (half diced, half halved)
1/2 cup white granulated sugar
1 tsp cornstarch
1-2 tbsp water or lemon juice
1 tsp vanilla extract

Steps:

  • Preheat the oven to 350°F.
  • Grease a 9-inch springform pan, or line with parchment paper if desired.
  • If using whole graham crackers, break the crackers into manageable pieces, and pulse the pieces in a blender or food processor.
  • Combine the sugar and graham crackers in a medium-sized bowl.
  • Add melted butter to the mixture, and combine well.
  • Press the crust into the bottom and sides of a springform pan. Use a measuring cup or drinking glass to press the crust into an even thickness.
  • Bake the crust in the oven for 10 minutes. If too much browning occurs, cover the pan with foil.
  • Lower the oven temperature to 325°F.
  • Beat the cream cheese at medium speed in a stand mixer until fluffy. Then add 1 1/3 sugar, and continue mixing until combined.
  • Add vanilla and eggs (one at a time), just until the yolk is mixed in. Do not over blend, since this will make the cake denser.
  • Gently fold in the sour cream.
  • Pour the mixture into the springform pan, and bake for 1 hour.
  • Turn the oven off, and let the cheesecake stand in the oven for another 30-40 minutes.
  • Remove the cheesecake from the oven, and run a knife around the edge. Do not remove the sides of the pan yet.
  • Let the cheesecake cool for 15 minutes. Then, cover with plastic wrap and refrigerate for 8 hours.
  • Remove the sides of the pan when ready to serve.
  • Rinse and dry strawberries. Then, cut half of the strawberries in half, and dice the remainder.
  • Combine strawberries and sugar in a saucepan. Cook on low to medium heat for about 10 minutes or until the fruit breaks down to create a jammy texture.
  • Reduce the heat, and continue stirring. Then, add a small amount of water to the cornstarch before pouring the cornstarch into the saucepan.
  • Add vanilla to the strawberry syrup, and stir until blended.
  • Add the strawberry halves, and stir until just coated.
  • Remove the strawberry topping from the heat. Let cool before refrigerating until ready to serve.
  • When adding the topping, flip the strawberry halves face down on the cheesecake for a prettier presentation.
