HOW TO MAKE SWEET TEA
Steps:
- For the simple syrup:Mix sugar and water in a small saucepan. Bring the mixture to a boil and allow to boil for about 5-7 minutes. You'll notice the mixture will reduce. Remove from heat and pour into a heatproof bowl and set aside to cool. For the tea:In the same saucepan, bring 3 cups of water to a boil. Remove the pot from the range and place on a trivet. Add tea bags and baking soda. Steep for 5-6 minutes. Remove tea bags without squeezing. Add simple syrup and stir. Pour into a pitcher and add remaining 7 cups water. Serve over ice with lemon slices.

SIMPLE SWEET TEA
This is my (southern) wife's recipe, she introduced me to it when we first met, and I have been drinking it daily ever since. In the last few years due minor sugar reductions we have lowered the sugar level from 2/3 cup to 1/2. I really have not noticed much of a difference. I still sometimes like really sweet southern sweet tea, but this is a daily drinker.

- In a large pitcher add the sugar, and tea bags.
- Add the boiling water and let the tea steep for 10 minutes.
- Remove the tea bags, and stir the sugar and tea mixture together.
- (cold water): Add the 4 cups of cold water and stir, refrigerate until cold. (about 4 Hours).
- (ice): Add the ice and stir well. Serve over ice.

Steps:
- Place family size tea bag in a microwave safe container filled with water & microwave until it boils (approx. 4min for 4cups).
- While that is going, in a gallon size pitcher, pour about 1 1/2 - 2 inches of sugar in the bottom. I usually eye it and it comes out perfect.
- The microwave should be finishing up. Pour hot tea water into the pitcher over the sugar. The hot water dissolves the sugar granuals. Stir until completely dissolved. (If you have time, let sit in microwave for a while and steep even more. If you don't have time, that's cool too.).
- Fill the rest with cold water & refrigerate.
- Serve over ice. Enjoy!

- I, personally, don't put lemon in it because I find that lemon cuts the sugar & you have to use a whole lot more sugar for it to be southern "sweet".

- Make the black tea: In a small saucepan, bring the water to a boil. Once boiling, remove the pot from the heat and add the tea bags. Steep for 5 minutes, then remove the tea bags. Transfer the tea to the refrigerator and let cool completely.
- Make the mint simple syrup: In a small saucepan, bring the water and sugar to a simmer, stirring to dissolve the sugar completely. Remove the pot from the heat and add the mint leaves. Steep for 15 minutes, then strain the syrup into a glass jar or liquid measuring cup. Discard the mint leaves. Transfer to the refrigerator and let the syrup cool completely.
- To assemble, in a large, resealable carafe, combine the black tea, sparkling lemonade, mint simple syrup, and bourbon, if using. Gently swirl the bottle to combine. Chill in the refrigerator until ready to serve.
- When ready to serve, pour the sweet tea over ice.

This sweet tea toes the line between just right and puckery sweet. The formula reflects the way my grandmother Leona Johnson made sweet tea: strong tea, lots of lemon juice and even more sugar. - In a tea kettle or medium saucepan, heat 4 cups water until boiling. Remove from the heat and add the tea bags. Allow the tea to steep for 5 minutes. Gently squeeze the bags to release their concentrated tea, then discard the bags. Transfer the tea to a pitcher.
- Stir 1/2 cup sugar into the hot tea until it has dissolved. Stir in the lemon juice. Add 4 cups water, then fill the pitcher with 2 cups ice.
- Taste the tea to determine if you'd like to add up to 4 tablespoons more sugar. If adding sugar, stir until it dissolves.
- Cover and refrigerate until the sweet tea is chilled throughout or up to 2 days. Serve in a large glass filled with ice, and garnish with a lemon slice if you'd like.
