- pre-heat oven to 375 degrees.
- place pork loin in backing dish, slit down the middle to make a boat to hold the pineapple.
- pour pineapple with juice into the pork loin.
- pour teriyaki sauce over pineapple and pork.
- pour honey over pork and pineapple.
- dust pork with all of the dry spices and onion.
- place the pork into the heated oven and cook for 45 minutes.
- about half way through cooking baste the pork with the juices.

TERIYAKI PORK TENDERLOIN

- Combine the soy sauce, oil, sugar, sherry, vinegar, garlic, ginger and red pepper flakes, and stir until the sugar dissolves. Transfer to a resealable plastic bag and add the pork tenderloin. Seal the bag and marinate the pork in the refrigerator, turning once, for 1/2 hour, or up to 8 hours.
- Preheat the broiler. Place the pork on a roasting pan and broil for 15 minutes, turning once.

- In a shallow glass dish mix or ziploc bag drain the juice from the can of pineapple (reserve the pineapple chunks). Add teriyaki sauce, rice wine vinegar, red pepper flakes, granulated onion and garlic, minced garlic, salt and pepper. Mix will and place pork in the marinade. Drizzle with honey. Leave in marinade at 2 hours but can sit overnight. When ready to cook, heat grill and remove pork from the marinade. Place on the grill and cook to until internal temp is 160 degrees. While grilling the meat, bring the marinade to a boil and add pineapple chunks. More over pork when done.

- Preheat the oven to 350 degrees F (175 degrees C).
- Mix brown sugar, pineapple juice, and teriyaki sauce together in a bowl. Coat pork chops with 1/2 cup of the mixture. Place in a baking pan and cover each chop with 1 pineapple slice. Pour remaining 1/2 cup of the mixture on top.

- Mix all Teriyaki Marinade ingredients. Fold thin end of each pork tenderloin under so pork is an even thickness; secure with toothpicks. Place pork in resealable plastic food-storage bag or shallow glass or plastic dish. Pour marinade over pork; turn pork to coat with marinade. Seal bag or cover dish and refrigerate at least 8 hours but no longer than 24 hours, turning pork occasionally.
- Brush grill rack with vegetable oil. If using charcoal grill, place drip pan directly under grilling area, and arrange coals around edge of firebox. Heat coals or gas grill for indirect heat.
- Remove pork from marinade; reserve marinade. Cover and grill pork over drip pan or over unheated side of gas grill and 4 to 5 inches from medium heat 25 to 30 minutes, brushing occasionally with marinade and turning once, until pork is slightly pink in center. Cut pineapple slices in half. Add pineapple to grill for last 2 to 4 minutes of grilling, brushing with marinade and turning once. Discard any remaining marinade.
- Remove toothpicks from pork. Cut pork across grain into thin slices. Serve with pineapple.

I was in a creative mood last Friday and decided to do some experimenting with pork and pineapple. After mixing the ingredients together and smelling it, I thought I might just have a winner with my family. After it had cooked and cooled a little, I let my girls try it. To my surprise, my 5-year-old, who is very picky, loved it and kept asking for more. I guess I should try to experiment more often.

- Place pork loin in a 9x13-inch baking pan.
- Combine pineapple juice, Worcestershire, mustard, and garlic-pepper seasoning in a small bowl. Pour mixture over the pork loin and allow to marinate in a refrigerator for 20 minutes, or up to 24 hours.
- Preheat the oven to 350 degrees F (175 degrees C). Remove pork from the refrigerator.
- Bake in the preheated oven for 1 hour and 45 minutes. Remove from the oven and pour crushed pineapple on top. Continue to bake until pork is slightly pink in the center, 10 to 15 minutes. TERIYAKI-PINEAPPLE PORK SANDWICHES

- In 12-inch nonstick skillet, heat oil over medium-high heat. Cook bell pepper in oil 3 to 4 minutes, stirring frequently, until crisp-tender. Remove from skillet; set aside.
- In same skillet, cook pork, onion and garlic-pepper blend over medium-high heat 7 to 9 minutes, stirring occasionally, until pork is no longer pink in center. Stir in teriyaki sauce and reserved pineapple juice; cook about 2 minutes, stirring occasionally, until heated through.

- In a large ziploc bag, combine soy sauce, sugar and ketchup. Add tenderloin. Seal bag and turn to coat. Marinate at least over night, preferrably longer though.
- Preheat oven to 425 (I used the grill instead).
- Place pork in 13 x 9 greased baking dish. (I put the remaining marinade in a saucepan, brought to a boil and added some cornstarch to thicken it.) I served the sauce on top of the pork.
- Bake, uncovered, at 425 for 35-40 minutes OR until meat thermometer reads 160. Let rest for 5 minutes before slicing.
